Corn Flour—made from dried corn, milled very fine into flour. Do not sub corn flour for corn meal. Corn Meal—made from dried corn, milled fine, medium or coarse. Traditionally stone-ground which makes the corn meal more nutritious by leaving some of the hull and germ of the kernel. It also has a higher fat content that makes it more perishable. Most corn meal is now ground by steel rollers which removes most of the husk and germ. Grits—originally made from dried white corn, cooked with lime, dried and ground coarse (i.e. “cured”). Now more generally manufactured as a more coarsely ground corn meal. Masa Flour– made from hominy (dried, cooked corn with added lime). Polenta– a dish that you make with medium or coarse ground yellow corn meal. If a corn meal has the word “polenta” in the description, it generally means it is coarse grain size, ideal for this dish.
