Recipe by Chef Suné Niemand Ingredients for the sauce: 180g Assorted, rough chopped tomatoes 200g Pitted Kalamata olives, rough chopped ½ Red onion, thinly sliced A handful each of chopped basil and Italian parsley 60ml Red wine vinegar 80ml Olive oil

Ingredients for salad: 350g Fine green beans 400g Feta cheese rounds 30ml Olive oil Salt and pepper for seasoning Rocket or watercress leaves for serving

Method: 1. Combine all the sauce ingredients and set aside. 2. Wash and clean the beans and cut at a slant, 2cm pieces (French cut). Add to a pot of boiling salted water (without the lid) and cook for 3-5 minutes. Remove and refresh in ice water. 3. Arrange the feta discs in a griddle pan (or roast in the oven), drizzle with olive oil and season well. Grill until golden colour shows here and there on the cheese. Break into pieces to serve. 4. Arrange the salad leaves on a platter. Top with the green beans, grilled feta and finally the tomato mixture. Season well and enjoy!
