  • Mondelēz Union Network
Mondelēz Union Network What is ? Mondelez is a global snack foods company which came into being on October 2, 2012 when the former Kraft Foods Inc. was split into two, resulting in the creation of two separate companies, both headquartered in the USA. Mondelēz took the “snacks” products (biscuits, confectionery, salty crackers, nuts, gum, Tang), giving it about two-thirds the revenue of the former Kraft. The remaining “grocery” products were stuffed into a North American (only) company now known as Kraft Foods Group. Former Kraft CEO Irene Rosenfeld now heads up Mondelēz. If you worked for the former Kraft or one of its subsidiaries manufacturing or distributing snack products, including former Danone or Cadbury products, you now work for Mondelēz or one of its subsidiaries. • The History of Kraft Foods Inc
The History of Kraft Foods Inc. All About Kraft Learn everything there is to know about Kraft: like who we are, how you can reach us and what we’re doing in your community. Kraft Foods Inc. is a company with many different roots and founders, all sharing a commitment to quality, a willingness to take risks and a spirit of innovation. Among the products now sold by Kraft Foods Inc. are so many “firsts” and innovations that a history of the company is almost a history of the food industry. Kraft traces its history to three of the most successful food entrepreneurs of the late 19th and early 20th centuries — J.L. Kraft, who started his cheese business in 1903; C.W. Post, who founded Postum Cereal Company (later renamed General Foods Corporation) in 1895; and Oscar Mayer, who began his meat business in 1883. The Story of J.L. Kraft The history of KRAFT goes back to 1903, when, with $65 in capital, a rented wagon and a horse named Paddy, J.L. Kraft started purchasing cheese at Chicago’s Water Street wholesale market and reselling it to local merchants. Within a short time, four of J.L. Kraft’s brothers joined him in the business, and, in 1909, they incorporated as J.L. Kraft & Bros. Co. In 1914, J.L. Kraft and his brothers purchased their first cheese factory in Stockton, Illinois. In 1915, they began producing processed cheese in 3-1/2 and 7-3/4 ounce tins. J.L. Kraft’s method of producing processed cheese was so revolutionary, in 1916 he obtained a patent for it and in 1917 the company started supplying cheese in tins to the U.S.

  • Analysis of Gluten in Dried Yeast and Yeast-Containing Products
foods Article Analysis of Gluten in Dried Yeast and Yeast-Containing Products Laura K. Allred 1,* , Mitchell G. Nye-Wood 2 and Michelle L. Colgrave 2 1 Gluten Intolerance Group of North America, Auburn, WA 98092, USA 2 School of Science, Edith Cowan University, Joondalup, WA 6027, Australia; [email protected] (M.G.N.-W.); [email protected] (M.L.C.) * Correspondence: [email protected] Received: 22 October 2020; Accepted: 27 November 2020; Published: 2 December 2020 Abstract: Yeast are commonly used in the preparation of foods and beverages such as beer and bread and may also be used on their own as a source of nutrients and flavoring. Because of the historical connection of yeast to products made from wheat and barley, consumers maintaining a gluten-free diet can have concerns about the safety of yeast ingredients. Analyzing the safety of yeast and yeast-containing products presents some difficulties, as the yeast organisms actively degrade any gluten in the product, raising questions on the appropriateness of detection by traditional antibody-based methods. This study examines a variety of yeast and yeast-containing products by competitive ELISA and liquid chromatography-mass spectrometry for the estimated level of gluten proteins. While samples such as yeast extracts and nutritional yeast contained gluten levels below the 20 mg/kg (or parts per million, ppm) threshold defined by Codex Alimentarius, one baking yeast and a nutritional yeast supplement sample contained higher levels of gluten. This study demonstrates that both competitive ELISA and liquid chromatography-mass spectrometry provide similar results in the detection of wheat and barley gluten in yeast-containing products.

Brien 24/08/10 9:36 PM M/C Journal, Vol. 13, No. 4 (2010) - 'waste' From Waste to Superbrand: The Uneasy Relationship between Vegemite and Its Origins http://journal.media-culture.org.au/index.php/mcjournal/article/view/245 Donna Lee Brien This article investigates the possibilities for understanding waste as a resource, with a particular focus on understanding food waste as a food resource. It considers the popular yeast spread Vegemite within this frame. The spread’s origins in waste product, and how it has achieved and sustained its status as a popular symbol of Australia despite half a century of Australian gastro-multiculturalism and a marked public resistance to other recycling and reuse of food products, have not yet been a focus of study. The process of producing Vegemite from waste would seem to align with contemporary moves towards recycling food waste, and ensuring environmental sustainability and food security, yet even during times of austerity and environmental concern this has not provided the company with a viable marketing strategy. Instead, advertising copywriting and a recurrent cycle of product memorialisation have created a superbrand through focusing on Vegemite’s nutrient and nostalgic value. John Scanlan notes that producing waste is a core feature of modern life, and what we dispose of as surplus to our requirements—whether this comprises material objects or more abstract products such as knowledge—reveals much about our society. In observing this, Scanlan asks us to consider the quite radical idea that waste is central to everything of significance to us: the “possibility that the surprising core of all we value results from (and creates even more) garbage (both the material and the metaphorical)” (9).
