Kempinski Suzhou, with its prime location in the centre of the picturesque Suzhou Industrial Park, demonstrates what the city’s reputation is all about. A 20-minute drive from the downtown railway station, the hotel is surrounded by rippling lakes, lush gardens and lawns and is a top choice in Suzhou for guests seeking not only impeccable accommodation but also unforgettable memories. Our guests can expect a unique gastronomical and cultural experience, both stylish and casual. 7 A Bite of China - Huaiyang Cuisine Step into Wang Hu Ge Chinese restaurant, located on the 3rd floor of Kempinski Suzhou, and find an elegant, tranquil, fashionable and comfortable environment. Add to that the beautiful panoramic view of Dushu Lake from a seat beside the window and one can enjoy fabulous food in a marvellous setting. Simon Wu, the Chinese master chef of Wang Hu Ge, has profound knowledge and experience of Huaiyang cuisine. When speaking of Huaiyang cuisine, the first thing many people think of is sweet and sour Mandarin fish, which is one of the most common dishes in Suzhou and on offer at Wang Hu Ge. This is a sweet and sour fish dish that features a squirrel-like presentation. The mouth of the fish is positioned open and its tail is bent upward to make it look like a squirrel. Chefs score the flesh into small squares, which when the whole fish is deep fried and cut open resemble fur. More interestingly, as the chef spreads the hot sauce on the deep fried fish in front of the diners, a sound like a squirrel barking can be heard. It is said this dish was Emperor Qian Long's (1736-1799) favourite. Chef Wu uses Mandarin fish from Taihu Lake as they have a firm yet tender texture. Shrimp, green beans and shelled corn are added to give more flavour and texture. The fish, with a golden yellow colour, is hot and crispy on the outside and warm and tender on the inside. The meat has a firm yet creamy texture, which gives it a natural sweetness. In addition to sweet and sour Mandarin fish, pagoda-shaped braised pork displays Chef Wu’s excellent cutting skills as he turns a piece of meat into thin slices. “The time and heat control during cooking is vital. For instance, braised pork should be 8 cooked exactly for 45 minutes and not one minute more, otherwise the meat and skin will separate”, said chef Wu. Huaiyang specialties are lightly flavoured, whether they combine sweet-and-sour or sweet-and-salty tastes. Soy sauce and spices are mild and used sparingly, although the use of rich-flavoured broth is extensive. An emphasis is also placed on using the freshest ingredients when serving seasonal food. Maybe that’s why so many people love Huaiyang cuisine, where superb knife skills are displayed along with fresh ingredients, variable seasonal food and mild flavours. One more plus? The gorgeous lake view from the Kempinski hotel. 9 Meeting in Style Stylish and sophisticated with classic design, Kempinski Hotel Suzhou is located in Suzhou Industrial Park and magnificently emerges before your very eyes after a short but scenic drive within a large estate which encompasses the 27-hole Jinji Lake International Golf Course, villas and Dushu Lake. The trend continues with more than sixteen million rural residents move to urban area each year in what geographer David Harvey regards as ‘the largest mass migration the world has ever seen.’1 ZHONGJIE LIN The massive urbanization has resulted in unprecedented construction boom University of North Carolina and generated numerous new towns across the country. At the beginning of the at Charlotte twenty-first century, Chinese government announced that they would build 20 new cities each year in the next 20 years; therefore approximately 400 new cit- ies would emerge by 2020.2 These ambitious new town projects were not only created to house the swelling population, but also to sustain economic growth in the major cities they serve.
