Gingerbread House Making a gingerbread house can be a fun adventure for the whole family. With precise measurement and even baking, the pieces should come out perfect for assembling the gingerbread house. The Wolf Electric ovens, (E-Series, M-Series and the Dual Fuel Range) in convection bake mode will give the user the confidence of even baking to make sure all the pieces come out perfect. Yield: 1 house Ingredients: Gingerbread • ½ cup unsalted butter, room temperature • ½ cup dark brown sugar • ¼ cup light molasses • 1 tablespoon cinnamon • 1 ½ teaspoon ground cloves • 1 tablespoon ground ginger • 1 teaspoon baking soda • 2 cups all-purpose flour • 2 tablespoons water Royal Icing • 1 pound powdered sugar, sifted if lumpy • 1 to 2 egg whites • 1 teaspoon vanilla extract or lemon juice For assemblage and decoration • Royal icing • Gumdrops, licorice and peppermint, as desired Instructions: 1. In a large mixing bowl, cream the butter, brown sugar, molasses, cinnamon, ginger, clove and baking soda together until the mixture is smooth. Blend in the flour and water to make a stiff dough. Chill at least 30 minutes or until firm. 2. Preheat Wolf M-series, E-series or Dual Fuel oven to 350 degrees Convection bake. 3. Cut out the following paper patterns for the gingerbread house template: • 2- Rectangles- 3x5 inches to make the front and back of the house • 2- Rectangles- 3x5 ½ inches for the roof • 2- Pieces for the ends of the house, 3 inches wide at the base, 3 inches to the roof line, and slanted to a peak5 ½ inches from the bottom • 4- Smaller rectangles, 1 ½ by 1 inch for the roof and sides of the entry way • 1- Piece, 2incheswide at the base, 1 ½ inches to the roof line, and slanted to a peak 2 ½ inches from the bottom for the front of the entry way www.riggsdistributing.com 4. -

Bakery Packet Linn Benton Culinary Arts B A K E R Y Each student must be able to show competence in the following areas in order to successfully complete this course of instruction. Understand and Demonstrate: 1. The different mixing methods of breads and rolls, cakes and cookies, short dough’s. 2. Rolled-in doughs (Danish, Puff Pastry, Croissant, ect.) 3. Custard cookery (Creme Brulee, Pastry Cream, ect.) 4. Pate a choux (Cream puffs, Eclairs) 5. Basic cake decorating techniques Each student will rotate during the term to each of the following stations: 1. Bread 2. Laminated Pastry Doughs 3. Cakes 4. Short dough/Gluten Free Dietary Needs 5. Custards 6. Rounds The amount of total time in each station will vary by the number of weeks per term. On average, 1 to 1 ½ weeks per station each term. Students must execute the daily production in an efficient manner making sure to have bread and desserts ready for lunch service, 11:00 a.m. Santiam Restaurant; and 10:30 to Cafeteria. Students are responsible for cleaning the Bakery on a daily basis. They are also responsible for minimizing waste by finding uses for leftovers and products found in the walk-in and reach-in. BAKERY CLEAN-UP Will be expected to go through daily cleaning requirements to ensure quality of our establishment and sanitary conditions of the bakery. ROUNDS STATION The student in this station will be required to perform the following duties: 1. Inventory products, ingredients and already prepared desserts available for that day’s service. 2. Draft that day’s menu under the supervision of the lab instructor and post that day’s production schedule as well as the remainder of the labs during the week. -

Strawberry Shortcake Cake Makes one 10-inch cake I made this cake a few years ago on a whim . and what a delightful whim it turned out to be. It’s a spin on strawberry shortcake, but the cake is, well, cake—not the biscuit-like disc in the classic strawberry shortcake recipe. I added cream cheese frosting instead of whipped cream, just for kicks, and it turned out to be just what the whole mess of deliciousness needed. This is one of my father-in-law’s three favorite desserts. He likes to eat it for breakfast. I do too, now that I think about it! CAKE ½ cup (1 stick) plus 1 tablespoon unsalted butter, softened 1½ cups plus 3 tablespoons granulated sugar 3 large eggs ½ cup sour cream, at room temperature 1 teaspoon vanilla extract 1½ cups all-purpose flour 3 tablespoons cornstarch ½ teaspoon salt 1 teaspoon baking soda STRAWBERRIES 1 pound strawberries, hulled and halved 3 tablespoons granulated sugar CREAM CHEESE FROSTING One 8-ounce package cream cheese, at room temperature 1 cup (2 sticks) unsalted butter 1½ pounds powdered sugar, sifted 1 teaspoon vanilla extract ¼ teaspoon salt 1. Preheat the oven to 350°. Grease and flour a 9-inch round cake pan that’s at least 2 inches deep (or you can split the batter between 2 pans if they’re not deep enough). 2. To make the cake batter, beat together the butter and sugar until fluffy. Add the eggs one at a time, beating well after each addition. 3. Add the sour cream and vanilla, then mix until just combined. -
