Yukon Gold potatoes Salt & Fresh cracked (peeled & cut into 1/2 inch black pepper to taste cubes) 1/4 Cup softened butter 1 box boursin cheese 1/2 - 3/4 Cup warm milk 2 TBS. sour cream 2 TBS. fresh chopped chives Preparation: Place potatoes in a pot of cold water & bring to a boil. Back the heat down to med.-high. When the potatoes are tender, strain off the liquid & place potatoes in a large bowl. Using a hand mixer, beat butter & cheese into the potatoes. Next, add in the milk a little at a time until the mixture is smooth. Fold in salt, pepper, sour cream & chives serve. Enjoy! Hint: If you don't like the black specks use white pepper. I personally prefer the taste of black pepper.
