1. Chometz: Fermented or leavened wheat, rye, oats, spelt and barley. When these grains come in contact with water, they leaven within 18 minutes. Traditionally, chomeiz should not be comsumed or held in one's possession during the week of Passover.

2. Kitniot: Leguminous vegetables such as beans, peas, com and rice which according to European Rabbinic tradition are forbidden during Pesach. However, Yemenite, Sephardic, and Oriental Jews are not bound by this custom.

3. Shmurah Matzah: This matzah, which is eaten during the seder, is prepared with wheat which is specially supervised from the time it is cut.

4. Matzah Ashirah: Egg matzah made from flour kneaded with fruit juices or eggs. According to European tradition, this matzah may be eaten on Pesach by the elderly, sick or young children who cannot digest regular matzah.

5. Bedikat Chometz: This is the search for chometz in one's home the night before Pesach begins. With candle (or flashlight) and a feather, the children search for any left over crumbs.

6. Biur Chometz: On the morning after Bedikat Chomeiz, tradition tells us to burn the gathered chomeiz.

7. Mechirat Chometz: While the law calls for the physical removal of all personally owned leaven from the home, the Rabbis realized this could impose financial hardship. Therefore, the custom evolved of simply placing all leaven in a secluded part of the home and selling it-on paper- to a non-Jew.
