Meringue Cookies! MERINGUE COOKIES! Ingredients 3 Egg whites 3/4 cup sugar 1/4 teaspoon cream of tartar 1/2 tsp vanilla Food coloring sprinkles (optional) Instructions • Preheat oven to 250 degrees. • Line two baking sheets with aluminum foil and set aside • Crack each egg and gently pour the egg yolk back and forth between the shells over a bowl. Let the egg white fall into the bowl. Discard the egg yolk and shell. Repeat with each egg until you have all three egg whites in the mixing bowl. • Using an electric mixer, beat the egg whites until they look creamy and soft peaks form when you lift the beaters out of the bowl. • Beat the egg whites while adding in the sugar one tablespoon at a time until all sugar is used up. • Add the cream of tartar, vanilla and food coloring and continue mixing until the mixture has stiff peaks when you lift the beater from the bowl. • Using a cookie scoop, scoop the batter onto the prepared baking sheets spacing about 1 inch apart. • Add sprinkles or colored sugars as desired. • Bake in the oven for 1 hour until cookies are set. • After the hour is finished, turn the oven off and keep the cookies in the oven with door closed for 10 additional minutes. • Remove the cookies after 10 minutes, cool completely and enjoy! It often begins in the child’s first year of life and in some cases lasts into the teenage years – or even into adulthood for a few people. Children who develop allergy to foods such as egg often have other allergic conditions. Eczema and food allergy often occur in early infancy and later on there may be hay-fever, asthma or both. Many cases of egg allergy are mild, but more severe symptoms are a possibility for some people. No. Eggs are an excellent source of easy to digest, high quality protein that can play an important role in the diet of most Americans. It is true that high blood cholesterol levels have been shown to aggravate heart problems, but research has also shown that the presence or absence of eggs in the diet of most Americans is not likely to in- crease blood cholesterol levels. Only a small minority of people cannot regulate blood cholesterol levels. These people need to avoid high-cholesterol foods. One large egg contains about 213 milligrams (mg) of cholesterol—all of which is found in the yolk. The American Medical Association (AMA) recommends that, as long as you are healthy, you should limit your dietary cholesterol intake to less than 300 mg a day. If you have cardiovascular disease, diabetes or high LDL (or "bad") cholesterol, you should limit your dietary cholesterol intake to less than 200 mg a day. Therefore, if you eat an egg on a given day, it's important to limit or avoid other sources of cholesterol for the rest of that day. If you like eggs but do not want the cholesterol it contains, use egg whites which do not contain cholesterol. You can also use cholesterol-free egg substitutes, which are made with egg whites. If you want to reduce cholesterol in a recipe that calls for eggs, use two egg whites or 1/4 cup cholesterol-free egg substitute in place of one whole egg.

Sarah Nasello / The Forum Meringue Kisses Makes: About 4 dozen 1-inch kisses Ingredients: 4 large or extra-large egg whites, room temperature ½ teaspoon cream of tartar ½ cup superfine sugar (blitz granulated sugar in food processor for 30 seconds) 1 cup powdered sugar ½ teaspoon pure vanilla extract Directions: Preheat oven to 200 degrees. Line 2 baking sheets with parchment paper; set aside. Make sure your mixing bowl and whisk or beater attachments are completely clean, as any grease or residue can prevent the egg whites from whipping properly. Add egg whites to your mixing bowl and beat on medium speed until foamy, about 30 seconds. Add cream of tartar and beat on medium-high speed until soft peaks form, about 1 ½ to 2 minutes. With the mixer on medium-high speed, slowly add the superfine sugar, 1 tablespoon at a time. Continue beating until the meringue is stiff and glossy and most of the sugar has dissolved, about 2 minutes. Rub a little meringue between your fingers; if it is still gritty, continue to mix on medium-low speed until there is barely any sugar grain when you test it. Add the vanilla extract and mix on medium-low for 10 seconds. Use a rubber spatula to fold in the powdered sugar, adding it in 3 stages so that the meringue doesn’t deflate. Gently fold the sugar into the meringue until fully incorporated. If using food coloring or melted chocolate, fold in just 3 to 4 times lightly for a swirled effect, or fold in completely for a solid effect.

Spoon or pipe meringue over the chilled lemon custard. Right before serving torch the meringue to give its golden color or bake in a 450ºF (230ºC) preheated oven for about 8 minutes. It can actually be both; torched and baked! Measuring by weight is far more accurate than measuring by volume.     BAFFLING BEATERS Background Egg White Foam Egg white foam is a type of foam (a colloid in which a gas is dispersed or spread throughout a liquid) used in meringues, souffl és, and angel food cake to make them light and porous (airy). To prepare an egg white foam, egg whites are initially beaten (with a wire wisk or electric mixer) until they become frothy. Then an acid (such as cream of tartar) is added. Depending on the application, the beating of the egg white continues until soft (when the peaks stand straight and bend slightly at the tips) or stiff peaks (when the peaks stand straight without bending) are formed. Salt and sugar may also be added. How It Works: Egg whites are made up of water, protein, and small amounts of minerals and sugars. When the egg whites are beaten, air is added and the egg white protein, albumen, is denatured. Denaturation is the change of a protein’s shape under stress (in this case, beating). Place the raw and hard-cooked eggs in separate jars and label the jars “raw egg” or “hard-cooked egg”. Pour enough vinegar into the jars to completely cover the eggs. Put the lids on the jar and seal them tightly. Check the eggs every once in a while to see what is happening. 2. After 36 to 48 hours, remove the eggs from the vinegar and rinse them carefully with cold water. Because the eggshells are made of calcium, the acidic vinegar has dissolved the calcium leaving a thin membrane to hold in the yolk and white.
