Lifestyle I By Kim Sterry nspiration Shrimp Scampi over Polenta Stuffed Tomatoes We love Semolina, in Kimmyscucina we use it for so many things. (Of course in our fresh pasta, but we also use it in many of our baked items as well as coating it on so many meats to make the perfect crust). When we first made this dish, it was a perfect summer day and we enjoyed it outside on a beautiful evening. Invite some friends over and have a party! 2-3 lbs shrimp (we used extra large, they need to be peeled and deveined) 2 cups semolina 1/2 cup parmesan cheese 2 cups polenta, prepared by package instructions 4–5 roma tomatoes, cut in half, scoop out center 2 cups olive oil 5 cloves garlic 1 lemon zest and juice Salt & pepper Instructions Prepare polenta according to package instructions. (See Note Below) When cool enough to handle, fill tomatoes. (You can prepare the polenta well ahead and have this all done, you would just need to allow the extra cooking time if polenta was cooled). Put stuffed tomatoes on an oiled baking sheet and cook at 350 for 15 minutes (or until heated through and tomatoes begin to soften). If you haven't toasted your sourdough bread, now is a good time to do that. Just brush with olive oil and sprinkle with some salt and pepper and put in 325 oven for 10-15 minutes, watch and turn half-way through. In a saucepan add the olive oil and garlic, heat until garlic is soft and can be mashed down. Keep temperature on low and add lemon juice and zest. Keep warm and set aside. Mix semolina and parmesan in a bag or large dish. (I like to use a bag for easy cleanup). Put shrimp into semolina mixture and coat well. Put on oiled baking sheet. Set Aside. In a 350 degree oven bake the shrimp for 6-12 minutes, turning half-way through. To assemble, you can do this on individual plates or on a large platter. Lay the sour- dough bread down, add the polenta stuffed tomato and then top with a shrimp. Scatter additional shrimp around the plate. Drizzle with the garlic oil and you are ready to serve. Shave some fresh parmesan cheese over the top. Notes: You have some options when you prepare your Polenta. You instruction will tell you to use water. If you would like some more flavor, you can use chicken or vegetable broth. For this particular recipe, I used something I had left over from another recipe, which included a mixture of chicken broth, white wine and some butter. Your possibil- ities are endless.
