Semillon

Bottle-aged Hunter Semillons exhibit a buttercup-yellow colour, burnt toast or honey characteristics on the nose and excellent complex flavours on the palate, with a long finish and soft acid. Young Hunter Valley semillon typically a dry wine, boasting citrus flavours of lemon, lime or green apple.

Pinot Gris and Pinot Grigio

The French call it Pinot Gris, the Italians call it Pinot Grigio, and it is a mutant clone of the Pinot Noir grape. The grape has a brownish pink to black and sometimes white appearance. Classic Pinot Gris characters include honey and fresh butter balanced by a touch of tinned pears, dried apples and hay with a slightly sweet finish. Pinot Grigio is often described as having smoky and salty mineral notes, pink grapefruit, melon and lemon and balanced by great acidity.

Sauvignon Blanc

Sauvignon Blanc is a very aromatic variety that produces the best results when grown in cool regions. New Zealand Sauvignon Blancs have taken the world by storm. In Australia we do a good job with the variety often producing a softer and more fruit focussed style.

Rosé

Rosé is a wine that goes through the red winemaking process, but is stopped before extracting too many of the red wine characteristics. Made from the red varietals, the grapes are pressed and the juice sits with the skins for fermentation– but only for a little while – enough time to obtain a bit of colour and a bit of the skins characteristics.

Pinot Noir

The aroma of Pinot Noir is often one of the most complex of all varieties. With ripe grape or black cherry aromas, frequently accented by pronounced spiciness that suggests cinnamon, sassafras or mint. Ripe tomato, mushroom and barnyard smells are common descriptors for identifying. When done right it is like liquid silk, gently caressing the palate.

Merlot and Merlot Blends

Merlot is a red grape that is used both as a blending grape and for varietal wines. Merlot based wines usually have medium body with hints of berry, plum and currant. Its softness and fleshiness, combined with early ripening, makes Merlot an ideal grape to blend with the late-ripening Cabernet Sauvignon.

Grenache and Grenache Blends

Grenache is probably the most widely planted variety of red wine grape in the world. It ripens late and needs hot dry conditions. It is generally spicy and berry flavoured. The aromas are very powerful, including menthol, liquorice and black pepper. Because of its strong traits Grenache is usually blended with other grape varietals such as Shiraz and Mourvedre.

Malbec

Dense and chewy with tobacco, blackberry and a touch of mulberry. The palate is warm and generous with soft tannins that disappear behind the ample fruit.

Pinotage

Pinotage is a red wine grape that is South Africa’s signature variety. It was bred there in 1925 as a cross between Pinot Noir and Cinsaut (Cinsaut was known as Hermitage in South Africa during that time, hence the portmanteau name of Pinotage). It typically produces deep red varietal wines with smoky, bramble and earthy flavors, sometimes with notes of bananas and tropical fruit.

Mataro

Mourvèdre, also known as Mataro, is grown in many regions around the world including the Rhône and Provence regions of France, California and the Australian regions of South Australia and New South Wales. Mourvèdre tends to produce tannic wines that can be high in alcohol with wild game and earthy notes, with soft red fruit flavors. Young Mourvèdre can come across as faulted due to the reductive, sulfur notes and “farmyard-y” flavors that some wines can exhibit before those flavors mellow with age.

In 1999, winemaker Reid Bosward and his partners bought Kaesler, becoming the third owners of this property. At this time, the Kaesler vineyards consisted of over 70% red wine vines, all 40 years of age or more. Now having access to premium old vine material, Reid set out to produce bold estate wines representative of the Barossa Valley. The intensity of the old vine Shiraz inspired Reid to produce a special premium batch, the “Old Bastard.” Classified as “Outstanding” by Langtons with its rich and intense fruit style, the Old Bastard Shiraz paved the way for Kaesler. A string of highly celebrated wines followed suit, the generous Stonehorse range and premium Old Vine Shiraz, “The Bogan” and Alte Reben wines to name a few.

2012 Kaesler ‘Old Vine’ Semillon $60

The Hunter teaches you about acid, balance and respect for Semillon’s more subtle characteristics and Graves teaches you how to work a style while the Barossa offers an opportunity to knit these lessons together. Pale Straw colour, with aromas of fresh cut grass and lime preserve with lemon zest on the palate

2012 Kaesler Cabernet Sauvignon $89

Barossa Valley temperatures are cooler than generally perceived, closer to Bordeaux and Margaret River. Earthy Cabernet with olive leaf and cedar spice on the nose. Palate is soft and elegant with satsuma plums and blueberry framed by the savoury oak.

2013 Kaesler ‘Avignon’ Grenache Mourvedre $85

Grenache and Mourvedre are two varieties which formed part of the initial collection brought to the Barossa. This vintage we decided on a Grenache Mourvedre blend and the nose has hints of dark berries and spice & pepper. The palate is supple with blackberry, redcurrant and plum notes.

2013 Kaesler ‘The Bogan’ Shiraz $140 The Barossa Valley is world famous for concentrated styles of Shiraz. The two Shiraz vine- yards from which this wine is sourced complement each other well. The Marananga block provides intense, old vine produce with particular “blue fruit” offerings. The Nuriootpa block provides more “black fruits.”. Nose is full of ripe plums and black cherries with hints of spice. Palate is fruit driven with smooth supple tannins, good structure & length.

2010 Kaesler ‘Alte Reben’ Mataro $150

Alte Reben is German for Old Vines and Kaesler has some of the oldest remaining Mataro. It is usually blended with Grenache and Shiraz but in exceptional years can shine on its own! On the nose we see aromas of blackberries and mulberries with hints of orange rind and dark chocolate. The palate shows some of the oak and it finishes with chalky tannins—raw yet elegant.

2013 Kaesler ‘Old Bastard’ Shiraz $260 After sharing another season with her soul mate, the sun, the Old Bastard Shiraz vines were pure and perfect. Fruit was hand-picked and sourced from Shiraz vines planted in 1893. Raspberries, blueberries and strawberries braced with rhubarb on the nose. The palate moves into blackberry and mulberry. Maturation has embedded spice, anise and cardamom. Tannins are talc, fine and delicate

Shiraz/Syrah & Shiraz Blends

In 1831, the Scotsman James Busby, often called “the Father of Australian viticulture”, made a trip back to Europe to collect cuttings from vines (primarily from France and Spain) for introduction to Australia. The cuttings were planted in the Sydney Botanical Gardens, and in Hunter Valley, and in 1839 brought from Sydney to South Australia.

Dessert Wine 375ml

Semillon and Riesling produce most of Australia’s ‘sticky’ wines. We offer a selection of Botrytis or Noble styles where the Botrytis fungus attacks the grapes and increases their sugar levels. These wines show complex characters of lemon, apricot and honey. Cordon or Cane Cut, are where the vine branches (cordons) are cut and the fruit is cut off from the nutrients of the rest of the vine increasing the sugars in the grape, often producing a lighter style than Noble rot wines.

2011 Gramps Botrytis Barossa Valley, SA 49 Gramp’s Botrytis Semillon is deep golden in colour and displays intense apricot and marmalade botrytis fruit flavours and a luscious lingering finish.

NV Tyrrell’s Aged Liqueur Verdelho Hunter Valley, SA 60 A traditional and unique Hunter Valley fortified made from partially fermented Verdelho grapes and a high quality, nine year old brandy spirit. Matured in small French oak barrels for approximately ten years resulting in a full flavoured and character filled dessert wine with a long and smooth finish.

2013 Vasse Felix Cane Cut Semillon Margaret River, WA 54 Vasse Felix Cane Cut is produced from Semillon using the Cane Cut method, where each fruiting cane is detached from the vine. The bunches are left hanging until the fruit has dried and concentrated in flavour and sugar. Once harvested and pressed, a portion of the juice is fermented in French oak. The lovely viscous, silky mouthfeel with focused mineral acidity results in a truly delicious dessert wine.

2009 Muscat de Beaume de Venise Southern Rhone, France 65 This luscious cru from the Muscat grape is an outstanding example of this famous appellation of the southern Rhone Valley. Produced from rugged, low yielding hillside vineyards, the wine from Domaine de Coyeux has a rare concentration of flavour, elegance and finesse, developing subtle and complex aromas reminiscent of apricot, acacia, citrus fruits and honey. An ideal dessert wine, it is also delicious as an aperitif and as an accompaniment to Foie gras.

2011 Carmes de Rieussec Sauternes, France 70 Brilliant golden colour with pale gold hue. The nose shows excellent intensity with lifted scents of ripe peach, apricot and honey followed by some tropical fruit and spice notes. Thick, luscious and very concentrated the palate boasts superb richness with mouthfilling flavours of honey, ripe peach and tropical fruits followed by some honeycomb and spice.

Port & Sherry

When Sherry is made, the fermentation process is allowed to run its course before brandy is added, but when Port is made, brandy is added during fermentation. This means that Sherry is drier and Port normally sweeter.
