    SCHOOL OF BIO AND CHEMICAL ENGINEERING DEPARTMENT OF BIOTECHNOLOGY B.TECH – BIOTECHNOLOGY UNIT – I - FOOD PROCESSING AND PRESERVATION - SBT1607 HISTORY OF FOOD PROCESSING AND FOOD PRESERVATION FOOD PROCESSING Food processing dates back to the prehistoric age when crude processing including various types of cooking, such as over fire, smoking, steaming, fermenting, sun drying and preserving with salt were in practice. Foods preserved this way were a common part of warriors’ and sailors’ diets. These crude processing techniques remained essentially the same until the advent of the Industrial Revolution. Nicolas Appert developed a vacuum bottling process to supply food to troops in the French army, which eventually led to canning in tins by Peter Durand in 1810. Modern food processing technologies, in the 19th century were also largely developed to serve military needs. In the early 20th century, the space race, change in food habits and the quality conciousness of the consumers in the developed world furthered the development of food processing with advancements such as spray drying, juice concentrates, freeze drying and the introduction of artificial sweetners, colourants, and preservatives. In the late 20th century products including dried instant soups, reconstituted fruit juices, and self cooking meals such as ready-to-eat food rations etc., were developed. Benefits of Processing . Converts raw food and other farm produce into edible, usable and palatable form. Helps to store perishable and semi-perishable agricultural commodities, avoid glut in the market, check post harvest losses and make the produce available during off-season. Generates employment. Development of ready-to-consume products, hence saves time for cooking.

Below is a just a small start to a list of ideas and a few recipes to get you going. Remember there are different types of adventure camps and different types of food, fuel and storage requirements. Backpackers need to dehydrate almost everything to conserve space and weight, whereas water activities allow for frozen options (for at least a couple of days). Sud­ denly, as you step onto a granite slab to check out your overnight home, hunger pangs well up. You are starving for dinner. Though kept at bay with handfuls of trail snacks at portage landings or paddling breaks, the wilderness appe­ tite-like some creature within you-must be satisfied. If you are hungry enough, almost any food will knock back the craving. I discovered this on a solo overnight as a Boy Scout, when ants became stuck in my gooey bread dough. Desper­ ately hungry, I rolled the dough around a stick, thrust it into the flames of my campfire and, soon after, ate the sticky mess despite the insect garnish. The palatability of most camp meals falls somewhere between the Donner Party menu and what you order in a restaurant where the waiter carries a chalkboard and later returns with a pepper grinder. The best camp cooks dig into dinner packs and whip together meals which, even if served at home, would draw raves. Essentially what you put on your plate depends on how much you are willing to lug down a portage trail. To start, the recipe book was the idea of Kelly Naylor and David Rosenberg, and it’s intent is to provide a collection of food ideas which can be used in the back country while camping/skiing/hiking/backpacking/etc.. After going on a winter mountaineering trip, in which rather bland and uninteresting food was prepared and (sometimes) eaten, we wanted to find some cool recipes to try and enjoy in the wilderness. Eating, we believe, is one of the wilderness’s still hidden pleasures, and should be enjoyed. Thus, the idea of a troop cookbook issued to each of the patrols was born. Along with the book, cooking classes and an increased emphasis on better cooking within the troop were initiated. The second reason for this book is the fulfillment of a Ticket Item of the author’s Wood Badge Ticket. Having already seen the needs mentioned above, it was obvious that a focus on cooking and improving the boy’s skills would benefit the troop in many ways.     HEAT STERILIZATION POUCHES A multilayered laminate material with an internal food contact surface of polypropylene was used as a base material for making the pouches. A polypropylene based laminate was preferred to polyethylene on the basis of its stability at sterilization temperatures (melting point of around 170 ºC). A pouch that can be used to ohmically reheat and sterilize food and later reused to stabilize waste will significantly reduce the Equivalent System Mass during a long term space mission. Reheating of food and stabilization of waste have been successfully done in the past using a V-shaped electrode pouch using pulsed ohmic heating. A retort pouch is a type of food packaging created by aseptic processing, made from multiple layers of flexible laminate, allowing for the sterile packaging of a wide variety of food and drink, ranging from water to fully cooked, thermo-stabilized (heat-treated) high-caloric (1,300 on average) meals such as Meals, Ready-to-Eat (MREs) which can be eaten cold, warmed by submersing in hot water, or through the use of a flameless ration heater, a meal component introduced by the military in 1992. Retort pouches are used in field rations, space food, camping food, and brands such as Capri Sun, Tasty Bite, etc. A retort pouch is a plastic and metal foil laminate pouch that is used as an alternative to traditional industrial canning methods. A pouch is a bag with 3 or 4 wide seals, which can store liquid within. Some varieties have a bottom gusset and are known as Stand-Up Pouches.
