Our menu features a very personal showcase of dishes inspired by the Cuisine of . A rich and diverse cuisine that exhibits a wonderfully intoxicating combination of the raw and the cooked, the hot and the cold, the sweet and sour.

The Vietnamese are known for their philosophical balancing of the five elements, wood, fire, earth, metal and water. Vietnamese dishes include five fundamental taste senses, sour, bitter, sweet, spicy and salty. You will see this principal and sensitivity reflected throughout our menu and List.

These dishes cry out for very specific and with our Wine List we have selected a short catalogue of gems that we believe will best showcase the food.

This is not a ‘greatest hits’ wine list with hundreds of entries that cover all flavors and intensities.

This wine list is focused very closely on the food at Dandelion.

Vietnamese food is strongly influenced by the food of China, India and the Khmer, as well as the myriad of sea- going traders that have graced its serpentine coastline.

Rather uniquely this fusion of cuisines has then been judiciously molded and refined by the French, resulting what we believe is the most elegant, distinct and certainly most WINE FRIENDLY of all the Asian cuisines.

You will notice a distinct lack of big, blousy, overly worked whites and heavily tannic reds, we believe these styles are too boisterous for our food.

Instead we are strong on fragrant whites, fruit driven reds and even perhaps undervalued wine varietals from regions new and old.

Ultimately the list is full of highly compatible wines, where in combination enhance both the food and the wine experience.

As an added bonus you will probably try a new wine and with a bit of luck find new a ‘favourite’.

2012 Ocean Eight Pinot Gris Mornington Peninsula Vic 14 A Dandelion stalwart, Ocean Eight is a complex food wine with lovely texture, stone fruit and citrus flavors. Great with our Banh Xeo or sizzling pancake.

2012 Howard Park ‘Flint Rock’ Great Southern WA 13 Perfumed notes of white field flowers enriched with ripe pear and citrus oils, spice and nougat. Citric palate with peach and honeydew fruits dusted with a fine nut-meal texture. A distinct flinty crisp finish.

2012 Cep d’Or Rosé Provence France 12 Made from a blend of Cinsault, and Grenache, one of our favorite wines at Dandelion, plum skins and some dusty mineral notes. The finish is dry which makes the wine incredibly versatile when matching with any of Dandelion’s food.

2012 Georges Dubeouf Beaujoais-Villages* France 10 Glorious generosity of red fruits. Lifted aromas including a hint of rosebud. Try with the lamb ribs.

2012 Pizzini Sangiovese King Valley Vic 12 A luscious wine. White pepper, confected dark fruit, rich gamey and complex. Try with the Peking duck rice paper roll.

2013 La Linea ‘Norteño’ Tempranillo Adelaide Hills SA 13 Black cherry and strawberry flavors with earthy undertones and trademark savory tannins. The stickiness of the pork hock is beautifully countered by this wine.

2013 Stoney Rise Pinot Noir Southern Tasmania 14 One of our featured wines. It’s gorgeous, with elements of undergrowth, a supple texture and savory tannin. Perfectly matched with the duck in mountain spices.

2012 Shadowfax ‘Minnow’ Carignan Mataro Grenache Cinsault Geelong Vic 12 A youthful deep red, with a shiny and bright red edge. Bouquet of red fruit and spice. The wine is perfectly balanced, with a medium bodied palate. Carignan and Mataro bring volume and energy while Grenache adds fragrance and texture. Tannins are supple and very fine, allowing the subtle influence of the Cinsault to be heard. Mondeuse - a native of the Savoie in France - bringing extract and a hint of spice.

2011 Voyager ‘Girt By Sea’ Merlot Margaret River WA 13 Summer berry, cherry and plum fruits. Soft and juicy palate with hints of spice and nougat. Well suited to the duck noodle broth.

Champagne Laurent-Perrier • Tours-sur-Marne, France Founded in 1812, Laurent-Perrier is the oldest continuously family owned House in Champagne! Renowned for its innovation and passion, the Nonancourt family’s independent spirit is the driving force behind the creation of unique and highly sought after Champagne. Laurent-Perrier has grown to become universally recognised for its spirit of independence. Today the House is led by sisters Alexandra and Stephanie du Nonancourt. Their father Bernard was responsible for the giant leaps in the fortunes of L-P, and in the development of dry, aperitif styled Champagne. In a blinding flash of genius, Bernard introduced a higher percentage of chardonnay at a time when Champagne tended to be sweet, served from a coupe at the end of a meal. He wanted the house style to be light and refreshing, and above all, to reflect the land on which it was produced. The pioneer of dry champagne! NV Laurent-Perrier Ultra Brut 26/145 Made exclusively from only the ripest fruit, blended from 15 crus, it is a no-dosage champagne. Very pale and crystal bright in the glass, a complex nose shows aromas of citrus, white peach and honeysuckle.

NV Laurent-Perrier Brut L-P 22/130 A ‘non-vintage’ is always an expression of the House style, and is the signature champagne. Laurent-Perrier’s is defined by its high proportion of Chardonnay. This provides natural purity, freshness and elegance. This wine is delicate and complex, a nose of rounded citrus and white fruits. The palate is expressive and fine, displaying excellent length.

2004 Laurent-Perrier Brut Millésimé 185 Millésimé or vintage wine is only produced in Champagne’s very best years. A wine that reflects both the house style, and that of the vintage. A true Indian summer in 2004 has produced a wine of balance and integrity. Made from 100% Grand Cru fruit, this wine displays alluring aromas of white flowers and white peach.

NV Laurent-Perrier Cuvée Rosé Brut 230 Showing extraordinary depth and freshness, L-P Rosé is the benchmark for sparkling rosés around the world. The wine is precise and crisp, showing complex red fruits. An initially well defined palate opens up to an array of red berry fruits. Wrapped in a long and supple finish.

MV Laurent-Perrier Grand Siècle 530 Multi Vintage ‘Tete du Cuvée’ or ‘Top Wine’ shows the epitome of Champagne blending. Grand Siècle translates to ‘Great Century’ – after the rule of Louis XIV (1643 – 1715), a time of refinement and hospitality. Blended from ’97, ’99, and ’02 vintages, 80% is derived from the 5 star 2002 vintage. Displaying the best of Champagne; powerful yet rounded with remarkable length, alluring and enchanting aromas to match, Grand Siècle is a joy to savour.

We have specifically gone to the area to import these wines for the Dandelion Wine List because of their versatility and are now available by the glass for your enjoyment.

2012 Cep D’Or Glass - 10 750ml – 50 375ml – 27 1.5lt Magnum - 90 Seven Winegrowers have gone into partnership in order to make viable their dream of producing a world class rose. A blend of 80% Cinsault and 20 % Grenache, a wine with great floral hints on the nose and a bouquet of ripe small red berries. On the palette a soft textured wine, which sings with food. A glorious ruby hue.

2012 Provence One Glass – 12 750ml - 55 Made from the classic grapes of the area, Grenache, Cinsault and Syrah, this wine spent it’s youth on their lees adding to the creaminess and rich texture to compliment its pale rose colour. Subtle notes of exotic fruits, mangoes and flowers on the nose, followed by a highly expressive mouthfeel showing subtle peach flavours with a backbone of minerality backed up by good acid. This refreshes the palate and gives the wine longevity.

St Tropez Spritz A Provencal rosé wine spritzer, with dash of peach liqueur. Served on plenty of ice, close your eyes and you’re in St Tropez.

2012 Samos Phyllas Vin Doux Muscat (750ml) Samos Greece 9/45 Samos is a famous historical Greek island in the eastern Aegean Sea, just a mile off the western coast of Turkey, this wine is made from Muscat. (Moscato in Italy, Moscatel in Spain) Both its appearance and its aromas prove irresistible to wine lovers who appreciate its pale gold colour with tantalizing aromas of apricot jam, overripe melon and butterscotch candy. A great pairing with our banana pancakes.

2012 Bera Vendemmia Moscato d’Asti Piedmont Italy 10/50 Lightly fizzy, sweet, fresh and balanced. Elegant floral aromas and notes of peach, apricot and fresh grapes. An elegant pairing with our water chestnut dumplings in ginger syrup.

2009 Clos Guiroulh ‘Moulleux’ (750ml) Jurançon France 12/60 Vanilla, white fruits and pineapple on the nose. Only a touch of oak. Full, balanced and elegant. Fresh, lemony fruit with a tropical edge on the palate. The perfect accompaniment to any dessert (especially our mango and sticky rice). Excellent value for money.

2013 Mount Horricks ‘Cordon Cut’ Riesling Clare Valley SA 20/69 Bright pale yellow with bell-clear citrus aromatics of mandarin and Tahitian lime. Delicate, refreshingly sweet and crisp. If you can’t fit dessert in, try this instead!

2011 Château Coutet Barsac Sauvignon Blanc Semillon Barsac France 120 Mid gold in colour with a delicate nose. This is a rich and concentrated Barsac, showing honey and dried tropical fruit notes. The palate is rich and long. The wine is ever-so moreish!

FORTIFIED WINE 30ml

Campbells Topaque Rutherglen Vic 10 Formerly known as Tokay, this deep, brilliant old gold syrup features lifted toffee, honey and cold tea characters combine to produce the unique character of Rutherglen Topaque.

2001 d’Oliveiras Colheita Boal Madeira Portugal 22 A delightful nose combines dark honey with herbal/vegetal, red date, hazelnut, smoke and wood-aged aromas. There’s a range of forest smells, faded plum and a maritime pungency of iodine engendering an umami rich-savouriness. Deliciously sweet jar fruits with lovely tart fruit-skin pucker release softly and gently into a round but nimble finish. Directional and beautifully balanced. A wine to savour with our Single Origin Marou Chocolate and kaffir lime truffles.

Sanchez Romate ‘Cardenal Cisneros’ Pedro Ximenez Jerez Spain 12 Known as black , this is one of the great pleasures of the world. Very concentrated, with aromas of chocolate, malt, toffee and caramel. It's enormously sweet and unctuous in the mouth, with a massive sugar level and great syrupy density. A match made in heaven for our chocolate brûlée.

Chambers Grand Muscat Rutherglen Vic 15 This Grand Muscat’s deep amber color is accompanied by aromas and flavors of coffee liqueur, brown sugar, molasses, prunes, figs, and a bevy of spices.

Penfold's ‘Grandfather’ Tawny Barossa Valley SA 20 No longer able to be called Port, the new name has done nothing to dull its iconic status. Blended from the finest barrels, maturing in the Penfolds Kalimna Cellar for over 15 years. This is rightly known as Australia’s benchmark Tawny. RICE WINE

SAKE 300ml

Yoshinogawa ‘Gensen Karakuchi’ Niigata Japan 36 Established in 1548 and run by the 19th generation owner Kawakami San, this is the oldest and largest Sake producer in Niigata. With hints of citrus, and a savory aspect, finishing long and dry, people from Niigata tend to pair it with dishes such as noodle hot pot.

• We recommend it at room temperature with our Pho. When served warm it goes particularly well with our Banh Xeo.

Amanoto ‘Junkara Junmai’ Akita Japan 45 Amanoto means ‘Heaven’s Door’. This unfiltered sake is from the snowy northern part of Japan, in one of this prefectures smallest brewery. Junkara means 'dry', and this sake is very dry. Hints of yeast and floral characters on the nose, the palate provides hints of brown mushroom, cider, lemon skin with chargrilled smokiness.

• Served warm, great match for hearty foods such as our pork hock and honey grilled chicken.
