July 2019 From the Editor We are delighted to welcome you to Lar- naka, one of the world’s oldest continu- ously inhabited cities! As such, Larnaka is abundant in historic and archaeological places, museums and ancient places of faith. But behind the well-known attractions, Larnaka’s narrow streets are filled with hidden gems. This booklet, which is issued for the twentieth consecutive year, aims to assist you in discov- ering Larnaka “behind the scenes”. Recommendations on new points of interest, events which will entertain you and get you acquainted with the Cypriot culture and of course, valuable tips from the locals. Every piece of Larnaka offers something special and we want to show it to our esteemed visitors. What I personally love about Larnaka is the fact that it has the atmosphere of a small city and the convenience of a metropolitan area. Larnaka has qualities that distinguish the region from other holiday resorts. You can rarely find a place which combines historic attractions, the commercial centre, cosmopolitan promenades and blue-flag awarded beaches together with numerous activities, all within a short distance. So, Larna- ka’s compact size is what makes the destination special, to- gether with other characteristics which can be revealed by reading this edition. The Larnaka Chamber of Commerce and Industry wishes you a memorable holiday! Make sure that when you de- part, your suitcase is filled with memories, nice feelings, new tastes, the stories of the locals and most of all, spiritual rejuvenation.

Furthermore, a number of other projects in the city are already under materialization and I urge you to find out about them by enjoying a walk in the city. Larnaka is worth visiting! 11 LARNAKA This Month CYPRIOT RECIPE OF THE MONTH STUFFED VINE LEAVES - KOUPEPIA Ingredients • 50 vine leaves • 100-150 grams minced pork • 3 quarters cup olive oil • 1 small onion minced • Parsley minced • 1 quarter tea spoon pepper • Mint (optional) • 1 cup rice • 1 tblsp tomato sauce or 2 cups tomato • 1-2 tblsp lemon juice • 1 cup warm water • 1 tsp salt

Preparation: Wash the vine leaves and put them in warm water to get soft. The color will change and will go darker than they are. Put the olive oil in a pan to warm and lightly cook the minced onion. Add the minced ground pork and leave it to lightly cook. Add the rice, pepper, parsley, mint, tomato sauce mixed with wa- ter. Leave them to cook for 3-5 minutes and mix occasionally. When the mixture cools, put one teaspoon of filling on each vine leave and wrap them up. Be careful as some leaves might be big- ger or smaller than others so sometimes you might need to fill them with less or more than one teaspoon. Put all the koupepias in a 4-quart pot. Place a small plate on top of them to keep them in place and add the water and lemon juice, or chicken stock if preferred. Let them cook on low heat for about half an hour. The recipe makes 6 servings. 12 July 2019 14 larnaka this month MUSEUMS
