It is the original diet of the race, the first nutriment of man. There is no other food that can replace milk in the daily diet. Milk contains carbohydrates and fats which supply heat and food-energy the body needs to perform its work. It has valuable, easily assimilable proteins for tissue building and repair. The minerals in milk, particularly calcium and phos- phorus, aid in the building of sound bones and teeth. Milk is an excellent source of Vitamins A and G, and a good source of Vitamin B, which is essential for normal growth and proper functioning of the nervous system. Milk is of great value in planning the well-balanced diet, and gives these benefits at less cost than any other food. For good nutrition, a child should drink at least a quart, and an adult a pint of milk a day. Unfortunately, ordinary raw or pasteurized milk forms large curds in the stomach, which are often difficult to digest. On this account, ordinary milk frequently interferes with ap- petites of growing children, and sometimes overtaxes the diges- tive system of the sick and convalescent. This is why doctors have recommended Junket desserts* for nearly 50 years. They contain the Junket enzyme, which per- forms the first step in digestion. "Junketized"* milk digests approximately twice as fast as ordinary fresh liquid milk. Scientists now know that a glass of cold milk may be "Junketized" by dissolving half a Junket Tablet in it. As soon as the milk is warmed to body temperature in the stomach, the Junket enzyme makes the same soft, easily assimilable curds as in Junket desserts. *Junket Tablets and Powder have been tested and approved by leading domestic science authorities and institutes, including Good House- keeping, Delineator, Child Life, and many others. RASPBERRY FIG SURPRISE First break fig newtons into small pieces, and place in 1 package Raspberry the bottom of the dessert dishes. Chill in refrigerator. 4 graham crackers GOLDEN GLOW JUNKET Warm one half pint of milk to lukewarm—NOT HOT, and 1 package Lemon add half of package of Lemon Junket Powder. Serve the refreshments early enough and sufficiently light so as not to spoil the appe- tite for the home supper, or, if the refreshments take the place of the home supper, serve late in the afternoon. Junket makes an especially appealing dessert for children's parties. It is attractive, tasty, and quickly and easily digested. BO-PEEP'S PARTY PUDDING 1 Junket Tablet Dissolve Junket Tablet in 1 tablespoon cold water. Mix 1 pint milk honey and cocoa to a smooth paste in a sauce pan. Heat 1 teaspoon vanilla slowly to boiling, stirring constantly. Let boil 1 minute, flavoring continuing to stir. Add 1 pint fresh milk. Warm mixture 1 tablespoon cocoa to lukewarm—NOT HOT. Remove from stove. Add vanilla 3 tablespoons honey V2 cup heavy cream flavoring or Vanilla Flavotint* to lukewarm mixture. Add Crisp rice, corn, or dissolved Junket Tablet. Stir quickly for a few seconds. wheat flakes Pour at once into dessert glasses. Let set until firm— about 10 minutes. Chill in refrigerator. Serve in same glasses topped with honeyed whipped cream and cereal flakes. Allow l1/? tablespoons strained honey to each cup of whipped cream. Add 1 cup crisp cereal flakes and mix well. Garnish top with flakes also. The cereal should not be added until serving time. Junket (Tflilic of Lake MADE WITH JUNKET MIX OR JUNKET POWDER Add 1 to 2 tablespoons of Junket Mix or 2 tea- spoons of Junket Powder any flavor (except Chocolate which requires 2 tablespoons) for each glass of cold milk.
