Montbeliarde : Bred for the French cheese Industry The main use of milk in France is cheese making and France is recognized widely and internationally for its high quality and diversity of cheeses. It looks like a detail but the cheese industry allowed a lot of mountain areas to sustain economically thanks to their pastures and cows herds. Areas like Alps, Jura, Pyrenees, Massif Central and Vosges are renowned for their specific cheeses that keep local activities in hard access regions. More recently, changes that are affecting the dairy industry lead to more added value products such as cheese, which gives new opportunities for that industry. To achieve better economic efficiency, dairy farmers of the Montbeliarde area (Central east of France) organized themselves for decades around local cooperatives running small cheese plants called “Fruitières”. There, dairy farmers sell cheese instead of milk and developed strategies to get a better product, increasing cheese yield (on the cow side) and increasing the quality and flavour of cheese (process side). All this led to a maximum of added value and made “Comte” cheese the N°1 high quality cheese in all France for years (45.000 tons/year). The genetic side is important and several scientific studies demonstrated it. The cheese process depends a lot on both bacteriological and organoleptical milk quality. A- Factors influencing Cheese Yield 1-Protein content Cheese Yield is proportional to milk % of protein up to 3,8%. Above that figure, cheese yield doesn’t increase significatively. 2-Casein type. Casein is the principal protein in milk. During the cheese making process, casein solidifies, curdles or coagulates into cheese through the action of rennet. -

One state that makes a big difference to the Awhole of the USA, politically, economically and culturally, is California. The political hub of the USA may be Washington DC, New York the economic hub and many other states lay claim to being centres of culture, but California stakes its claim as the country’s major wine state. There may be oth- 70 er states growing wine, such as Oregon and Washington, 71 California but California is the daddy of the wine states. Winemaking began in California in the late 1860s and thrived until two major events occurred. Firstly, there was phylloxera, then from 1919 to 1933 there was Prohibition. Prohibition practically wiped out all but a few wineries. The survivors were making wine for the Church. Following this period, there were two main pioneers of winemaking in Cal- ifornia. First there was Ernest and Julio Gallo, who started Dreamin’ their business in 1933, directly after Prohibition. There was plenty of competition, but they concentrated their efforts on commercial winemaking from pre-prohibition pamphlets found in the basement of the Modesto public library. This became the essence of their initial success. E & J Gallo is now the largest wine company in the USA. A decade after the Gallo brothers began, Robert Mon- davi joined the family business in 1943. The Mondavi family had shortly before bought the Charles Krug winery. -

2019 Napa Valley Ribolla Gialla, Matthiasson Vineyard Ribolla Gialla originates in the Friuli region of Italy and across the border in Slovenia. An ancient grape variety, its earliest known mention was by the Pope in 1296. Ribolla Gialla makes an unparalleled food wine, filling the gap in food pairing between white wines and red wines—it can be amazing with pork and stewed pome fruit, fatty raw seafood, cured meats, and intense cheeses. We have been making “orange wine” from this fruit since 2008, fermenting the wine whole cluster, with the skins and stems, until dryness. The wine is 100 percent Ribolla gialla from our home vineyard. The wine was fermented whole cluster with native yeast in an open-top tank using punchdowns. After two weeks the must was pressed, and the wine was aged for 18 months in neutral barrels. The wine aged sur lees and it was never racked. No SO2 was used until a tiny amount at bottling. The alcohol is 13.0%, the pH is 3.9 and the TA is 5.35. 253 cases produced. The Ribolla gialla tastes like hazelnuts, baking spices, meyer lemon curd, Bartlett pear, but most of all it has a stony minerality that is incredibly distinctive. There is supple tannic structure and fresh balanced acidity, with great weight and length given the moderate alcohol. The Vineyard The Ribolla gialla represents seven rows in our home (“Matthiasson”) vineyard in the Western Oak Knoll area of Napa Valley. It was grafted onto 15 year old Merlot vines. George Vare was given a few sticks of the budwood from Josko Gravner in 2001 and grafted it into his own vineyard, which Steve was managing. -
