Quick and Easy Thanksgiving Sides Recipes from NetCost Market’s Weekly Specials

November is here which means it’s the run-up to Thanksgiving! We hope you’ve already started thinking about the Thanksgiving spread you’re going to prepare for all your family and friends, but if not, we’ve got some inspirational ideas to make your Thanksgiving meal the pick of the bunch! All these recipes use ingredients from our weekly specials, so make sure you get yourself down to NetCost Market to make the most of them while you can!

Chicken liver and mushroom stuffing

This stuffing is perfect for thanksgiving and pairs very well with roast turkey. It’s quick and easy, and to make it that little bit sweeter, chicken livers are currently part of our weekly specials! Recipe

Ingredients: 1 small onion – finely chopped, 1 celery stalk – diced, 1 tbsp. chopped parsley, 1 tbsp. butter, 4oz. chicken livers – chopped, 10oz. sausage meat, 2 cups sliced mushrooms, 3 cups fresh breadcrumbs, 2 tsp. fresh sage – chopped, 2 tsp. marjoram – chopped, 1 tsp. salt, ½ tsp. black pepper.

Method:

Fry the onion in the butter over medium heat and then add the parsley. Cook for 10 minutes until the onion is soft. Add the chicken livers and cook until they are a little firm. Remove from the heat, allow to cool, and then mix together all the ingredients. Once the whole mixture has cooled and been mixed, it’s ready to use as the perfect Thanksgiving stuffing when you’re preparing your Turkey!

Honey Palma prosciutto-wrapped carrots

This dish is so quick and easy that it can be incorporated right at the last minute. It’s a perfect blend of sweet and savory with a bit of a salty edge. Right now, Palma Italiano Prosciutto, Buzz and Bloom Organic Honey, and carrots are all part of our weekly specials, so there really is no better time to make this tasty side dish!

Recipe

Ingredients: 12 medium carrots – peeled, 12 slices of Palma Italiano Prosciutto, Buzz and Bloom Organic Honey, freshly ground pepper.

Method:

Preheat your oven to 400F. Wrap each carrot in one slice of Palma Italiano Prosciutto and then place them on a parchment-lined baking sheet. Using a light brush, brush each wrapped carrot liberally with Buzz and Bloom Organic Honey and then sprinkle over a good amount of black pepper. Bake for 10 minutes, and then remove from the oven, brush with more honey, and bake for another 10 minutes or until the Prosciutto is crisp and the carrots are tender but not too soft.

Cheesy cauliflower bake

Cauliflower and cheese are a match made in heaven, and this simple recipe makes the most of this delectable dynamic duo’s delicious reputation. It uses mozzarella cheese and butter to make a creamy and stringy bake with plenty of garlic to add to the punchy flavor. Right now, Belgioioso Fresh Mozzarella Cheese Balls are part of our weekly specials, as is Breakstone’s Butter, both of which are central ingredients. Recipe

Ingredients: 1 small cauliflower head – stem removed and cut into pieces, 1 ¼ cups Belgioioso Fresh Mozzarella Cheese – shredded, ½ stick Breakstone’s Butter, 2 cloves of garlic – finely chopped, 1/3 cup Italian seasoned panko breadcrumbs.

Method:

Preheat oven to 375F. Place the cut cauliflower florets in a Baking dish and then sprinkle the shredded Belgioioso Fresh Mozzarella Cheese all over the top and set to one side. In a small saucepan, melt butter over medium heat. Then add the garlic and stir. Remove from the heat and stir in the breadcrumbs until a crumbly mixture is formed Spoon the mixture over the cheese, and then place aluminum foil over the dish and bake for 30 minutes, and then remove the foil and bake for a further 15 minutes or until the cauliflower and cheese are sufficiently browned. Remove from the oven and allow to cool for 5 minutes and then serve!

All participants in order to enter the contest must be a parent or guardian of the Children writing the letter.

To Enter: Between November 5 and December 5, 2019, families with children between the ages of 4-12, can enter the contest by having their children write a letter addressed to Santa. In the letter, they will be asked to write about their favorite food and why they like to accompany their parents to NetCost Market while shopping. Parents of participants will be asked to provide their name and contact information as well as their child’s name and age. The collection of this information is to be used solely for the distribution of prizes to the winners. Contact information will not be stored or sold or used in any other way. In each NetCost Market location, there will be a special “letter to Santa” mailbox. Each child and their parent is asked to drop their letter to Santa off at one of the mailboxes during the dates November 5-December 5, 2019.

Limit: ONLY 1 Entry per child, families with multiple children can enter with each child between the ages of 4-12.

It’s Ukrainian week here at NetCost Market! This means we’ll be bringing you three delicious Ukrainian recipes to get you in the mood for celebrating the exceptional cuisine of this fascinating country. All of the recipes use ingredients from our weekly specials so you can enjoy delectable Ukrainian dishes at incredible prices. Make the most of these exclusive offers while they last!

Pierogies with onions and bacon

There’s no quite like Ukrainian pierogies. Although this food is often associated with Poland, its origin is also shared with a large part of what is nowadays Ukraine. At NetCost Market, we currently have Mrs. T’s American Cheese and Potato Pierogies and Family Tree Pierogies at incredibly low prices, so it’s the perfect time to stock up on this classic comfort food. This recipe also calls for thick-cut bacon, so we’re also offering cuts of Ukrainian-style bacon as part of our weekly specials.

Recipe

Ingredients: 16 Mrs. T’s or Family Tree Pierogies, 2 thick slices of Ukrainian-style bacon, 1 small onion – diced, 1 tbsp. butter, ¾ cup heavy cream, ¼ tsp. salt, ¼ tsp. black pepper, scallions and sour cream for serving.

Method:

Bring a large pot of water to the boil and add a tsp. of salt. Add the Mrs. T’s or Family Tree Pierogies and boil according to the instructions on the packaging. While they’re boiling, dice the bacon slices and fry them with the onion in a large skillet until lightly browned. Remove the pierogies from the water once done and dry them by placing them on a plate with a paper towel underneath. Add butter to the skillet that contains the bacon and onions, then add the pierogies and allow them to fry on one side until brown. While this is happening, whisk together the cream, salt, and pepper and add it to the pan once the pierogies are lightly browned. Let the whole dish simmer for about 2-3 minutes and then remove from the heat and add green onions and sour cream as a garnish!

Kielbasa and cabbage – Ukrainian style

This simple dish is usually eaten in the summer in northern parts of Ukraine, but it’s also perfect for winter evenings here in the US. It is quick, simple, and comforting – everything you need from a comfort meal! We currently have Kielbasa Bukavinskaya on offer as part of our Ukrainian week specials, as well as onions and carrots that are both used in this dish! Recipe

Ingredients: 1 whole green cabbage – roughly chopped, 1 onion – chopped, 1 carrot – shredded, 2 cups Kielbasa Bukavinskaya – sliced, 3 tbsp. olive oil, 1 tbsp. tomato paste, 2 tbsp. fresh dill – chopped, ½ tsp. caraway seeds, 1 bay leaf, 1.5 tbsp. , 2 cups vegetable broth.

Method:

In a large skillet, add 1 tbsp. of olive oil and the chopped onion. Cook this for 3-4 minutes until the onion cooks down a bit. Add the carrot, chopped cabbage, chicken broth, tomato paste, caraway seeds, and bay leaf, and mix well and then cover and cook for 20 minutes. Once cooked, season well with salt and pepper. While the mixture is cooking, add the other tbsp. of oil to another skillet and add the sliced kielbasa and cook for a few minutes until golden brown. Once the cabbage is cooked and seasoned, add the kielbasa to the mixture. In a separate pan, add flour and cook for 2 minutes, then add the last tbsp. of oil and mix. Then, add 1 cup of broth from the cabbage pot and mix well. Then add this mixture to the cabbage pot and combine. Let the whole dish cook for about 3 minutes, add the dill, and then serve hot!

Classic Khrustyky

If you’ve never had Ukrainian Khrustyky, then you’re certainly missing out! Although they’re usually reserved for Christmas celebrations, they’re the perfect sweet snack for any social event or festival, so why not try them out as a for when you next have friends over!? Right now we have Sunshine Farms Organic Large Eggs which are perfect for this sweet snack! Recipe

Ingredients: 1 tbsp. whipping cream, 1 tbsp. white sugar, 3 whole Sunshine Farms Organic Large Eggs, 3 yolks from Sunshine Farms Organic Large Eggs, ½ tsp. salt, 1 tsp. vanilla extract, 2 cups flour, icing sugar.

Method:

In a mixing bowl, add the eggs and yolks together and beat. Once mixed, add the sugar and continue beating while adding the cream, salt, and finally the vanilla extract. Continue to beat until well-mixed. Stir in 1 cup of flour until a smooth dough is formed, and then turn out onto the counter and knead. Keep adding the additional cup of flour until a smooth, soft, and elastic dough is formed. Cover the dough and allow it to sit in the refrigerator for 30 minutes. Take the dough out of the refrigerator and place it on a floured surface. Roll the dough very thin, then cut it into strips about 1.5 inches thick and 2 inches long. In the middle of each strip, make a slit and then stick your finger through it until it’s wide enough to loop one end of the dough strip through. Pull one end of the dough strip through the hole so that a sort of bow shape is formed. If you like, you can repeat this with the other side but it’s not necessary. Deep fry the dough pieces in oil heated to 350F for a minute or so each. They should puff up, and once they have, take them out and place them on a paper towel. Wait for them to cool and then dust with icing sugar before serving!

Classic Ukrainian Recipes Using NetCost Market’s Weekly Specials

Ukraine sits at the frontier between Europe and Asia, and as a result, offers some of the world’s most exciting and appetizing cuisine that draws inspiration from both these regions. The country has managed to retain its traditional culinary delights — most notably , Chicken Kyiv, and Vareniki — through the custom of teaching future generations the established methods of cooking these national dishes. Here at NetCost Market, we like to celebrate food from around the world, and there’s no better way to celebrate than gifting our loyal customers with some classic recipes from this unique part of the world. Classic Ukrainian Golubtsi – stuffed cabbage rolls

Golubtsi is a Ukrainian classic and is usually reserved for having friends over or special occasions. This recipe uses ground turkey, which is currently offered as part of our weekly specials, as are whole cabbages! This means you can make this Ukrainian classic without worrying about breaking the bank! Recipe

Ingredients: 3 cups cooked white rice, 1 medium cabbage, 1 lb. ground turkey, 1 large egg, 3 medium carrots, 1 cup mushroom marinara sauce, 2 tbsp. white vinegar, olive oil, 1 tbsp. butter, 1 tbsp. sour cream, 1 tsp. seasoning blend, salt.

Method:

Fill a large soup pot with water to about 2/3 of the way. Bring the water to the boil. Add 1 tsp. salt and 2 tbsp. vinegar. Discard the top leaves of the cabbage. Then, use a knife to cut out the core of the cabbage. Put the cabbage in the boiling water, core side down, for about 5 minutes, and then turn over and continue to boil for another 5 minutes. As the cabbage boils, the leaves will begin to separate. Remove them using tongs or a slotted spoon as they do. Keep the leaves on a dish to one side as they cool. Make sure you reserve 2 cups of the water from the pot. Using a food processor, or by hand, mix the ground turkey with the rice. Grate and the sauté 2 of the carrots in 3 tbsp. oil. Once they have softened, add ½ cup of mushroom marinara sauce and cook for another minute until well combined. Add the carrot mixture to the rice and ground turkey mixture and then add the egg and 1 ½ tsp. salt, and mix well. Cut the cabbage leaves in half down the center and remove the tough stem (for small leaves, this part can be skipped). Place 2 tbsp. meat mixture at the top of each leaf, and then roll the leaf into a cone shape. Then, tuck the overhanging ends of the leaf back into the top of the cone to seal the roll. Repeat until all the mixture is used, and then stack the rolls into a cast-iron Dutch oven. Now it’s time to make the sauce. Start by heating 2 tbsp. olive oil in a pan and then grate and sauté the remaining carrot with 1 tsp. seasoning blend, stirring until soft. Add 1 tbsp. sour cream and ½ cup mushroom marinara sauce and cook for another minute. Pour the sauce over the stuffed cabbage rolls and add enough water from the 2 cups reserved at the beginning to almost cover the rolls in the pot. Bake covered in the oven for 25 minutes at 450F, then reduce the temperature to 350F and bake for a further 50 minutes. Serve hot!

Ukrainian chicken soup

Ukraine is famed for its notorious borscht, but this soup is another national favorite. It uses a whole chicken, much like classic American chicken noodle soup, but then takes the flavors in a much more Ukrainian direction! Ingredients: 1 D’Artagnan Green Circle Chicken, 2 onions – 1 roughly chopped and the other quartered, 2 carrots – peeled and cut into 1-inch pieces, 2 celery sticks – cut into 1-inch pieces, 1 clove of garlic – crushed, 1 tsp. whole black peppercorns, 3 ½ quarts of water, 1 fresh bay leaf, 6 sprigs parsley, 2 sprigs thyme, salt, 2 tbsp. butter, 8 cups chopped green cabbage, 1 cup thinly sliced dill pickles, ¼ cup tomato paste, 1 tbsp. sweet paprika, freshly ground black pepper, ½ cup pickle juice, ¼ cup chopped fresh dill, Ecomeal Amish Sour Cream for serving. Method:

In a large pot, add the chicken, water, quartered onion, carrots, celery, garlic, peppercorns, bay leaf, parsley sprigs, and thyme sprigs. Bring the water to a boil and allow to simmer, covered, for 30 minutes. Take out the chicken and place it on a plate. Take off the skin and discard it. Then, pull the meat off the bones using a fork, and cut into 1-inch pieces. Place the meat in the refrigerator. Place the carcass and bones back into the pot, and simmer, covered, for another hour until a rich broth forms. Strain the broth into a large bowl and then rinse out the pot. Pour the broth back into the pot and boil over medium heat for 30 minutes. Season with salt. In a separate saucepan, melt the butter, and then add the cabbage, the chopped onion, and the pickles, and cook for 10 minutes on high heat until the onions are soft. Stir in the tomato paste and the paprika, and then cook for a further 1 minute. Add this to the broth and bring it to a boil. Season again with salt and pepper and then simmer for 20 minutes. Add the chicken, pickle juice, and dill, and then simmer until the soup is piping hot. Serve hot with a generous helping of Ecomeal Amish Sour Cream and a sprinkling of chopped dill.

Ukrainian syrniki

Syrniki are classic Russian and Ukrainian cheese pancakes that are fluffy, light, and very addictive! They’re perfect for or as a dessert following a meal with guests. Ingredients: 2 cups Four Seasons Dairy Farmer Cheese, 4 large Sunshine Farms Organic Eggs, ¾ cup Gold Medal All Purpose Flour – plus ½ cup more for dredging, 3 tbsp. white sugar, ½ tsp. salt, 1 tsp. baking soda, 1 tsp. white vinegar, 1 cup raisins, olive oil.

Method:

Mix the Four Seasons Dairy Farmer Cheese, 4 large Sunshine Farms Organic Eggs, ¾ cup Gold Medal All- Purpose Flour, 3 tbsp. sugar, and ½ tsp. salt in a large mixing bowl. Place 1 tsp. baking soda in a small bowl, and then add 1 tsp. of vinegar, and stir as it fizzes. Add this to the cheese mixture. With a whisk, mix the mixture until it is smooth, and then stir in the raisins with a wooden spoon. Heat a large skillet, and add 2 tbsp. olive oil. Add about ½ cup flour to a small bowl. Place a heaped tbsp. of the mixture into the flour. Sprinkle flour over the top of the scoop of batter. Then, remove any excess flour and transfer this from one hand to another until a pancake is formed. Add to the skillet once the oil is hot, and cook the patties for about 3 minutes on each side. Repeat this, adding new oil each time for the remaining batter. Transfer to a plate before serving with some Family Tree Preserves.

Halloween is creeping upon us, so we thought we’d give you some creative Halloween-inspired recipes. These are perfect for a frightening family feast or spooky social gathering, and what’s more, all the recipes include ingredients that are part of our Weekly Specials, so you’ll find them at terrifyingly low prices!

Jack-O-Lantern beef steak pie

Beefsteak pie is the perfect winter warmer for those cold fall nights, and this ghostly twist to the usual recipe will make it a Halloween centerpiece to die for. Right now, lean stewing beef is available at chillingly low prices, so it’s the right time to buy while the deal lasts! Recipe

Ingredients: (pie crust) – 1 ¼ cups all-purpose flour, ½ tsp. salt, 3 tbsp. vegetable shortening, 6 tbsp. butter, 5 tbsp. ice water. (beef stew filling) – 2 lbs. stewing beef – cut into ½-inch cubes, 2 tsp. salt, ½ tsp. black pepper, 2 tbsp. olive oil, 1 onion – finely chopped, 3 of cloves garlic – finely chopped, 1 stick of celery – chopped, 3-4 carrots – peeled and chopped, 1 potato – chopped, 8 oz. of mushrooms – chopped, 2 tbsp. fresh rosemary – chopped, 1 tsp. dried oregano, 1 tsp. thyme, 3 cups beef broth, 1/3 cup flour, 1 egg – beaten.

Method:

Start by preparing the pie crust. Stir together the flour and salt. Then, using a pastry cutter, cut the shortening and butter into the flour until the mixture is crumb-like. Sprinkle 2 tbsp. of ice water over the mixture and gently stir using a fork. Repeat this twice more, adding 2 tbsp. of water at a time. A dough-like mixture should start to form. Press this into a ball and then flatten this into a disc and wrap tightly in plastic wrap and place in the refrigerator for at least an hour. Next, start with the stew. Start by seasoning the meat with salt and pepper. Place a large skillet over medium- high heat, and then add 1 tbsp. olive oil. Once the oil is hot, add the seasoned meat and sear all the sides until browned but not cooked right through. Remove from the skillet and set it to one side. Reduce the heat to medium and then add another tbsp. olive oil. Add the onion and garlic and cook for 2 minutes, stirring frequently. Add the carrots, celery, and potato, and cook for about 8 minutes until they begin to soften. Add the mushrooms and cook for a further 2-3 minutes. Add the chopped rosemary, thyme, and oregano and cook for another minute. Sprinkle flour over everything in the skillet and stir for another minute. Add the beef broth to the skillet and cook until the flour is completely dissolved. Then add the beef pieces back to the skillet and cook for 2 hours on low heat with the lid on. Ensure you stir occasionally. After two hours, or once the meat is tender and the gravy is thick, take the dough out of the refrigerator and let it stand on the countertop for 10 minutes. Pour the beef stew into a deep pie dish until about ¾ full. Roll out the pie dough on a floured surface, and then transfer it to cover the beef on the pie dish. Make sure there is some overhang so the crust doesn’t shrink away from the sides as it cooks. Using a very sharp scalpel knife, cut out two eyes and a jagged shaped mouth much like you would when making a jack-o-lantern with a pumpkin. Use a pastry brush to brush the whole pie crust with the beaten egg, and then bake for 25 minutes at 400 degrees in the oven until the crust is golden brown. Remove from the oven and allow to cool for 15 minutes before serving!

There’s nothing more stomach-churning than popping an eyeball into your mouth and biting down on it, but luckily, these eyeballs are really just tasty deviled eggs designed to look like gruesome eyes. Ingredients: 18 Sunshine Farms Organic Large Egg, ½ cup mayonnaise, 2 tbsp. Dijon mustard, 1 tbsp. minced scallions, 1 tbsp. lemon juice, ½ tsp. hot sauce, ½ tsp. Worchestershire sauce, ¼ tsp. salt, 36 black olive slices, 1 jar of roasted red peppers, 2 cans of black beans.

Method:

Start by hard-boiling the eggs. Place the eggs in a large pot and cover with cold water. Bring to the boil and leave for one minute. Cover the pot and remove it from the heat. Let the pot sit covered for about 15 minutes. Drain, and run cold water over the eggs. Then crack them and let them sit in cold water for 10 minutes until they’ve cooled. Then drain and peel them. Cut your eggs half crosswise on a slight diagonal, and then carefully remove the yolks without damaging the whites. Place the yolks in a bowl and then mash with mayonnaise, mustard, minced scallions, lemon juice, hot sauce, Worcestershire sauce, and salt until blended and smooth. Using 2 spoons, scoop the yolk mixture into small balls and position them into the hollows of the egg whites to resemble eyeballs. Press an olive slice into each of the yolk eyeballs, and then cut the jarred grilled peppers into very thin, 2- inch long strands. Place these on the eyes running outwards from the black olive slices to resemble veins in the eyes. Place the black beans on a platter and then balance the eyeball eggs on top of this to act as a dark backdrop to the popping whites of the eyes. Cover and refrigerate until ready to serve. This version brings your apples to life by making them appear like they’re bleeding from the top! Recipe

Ingredients: 8 gala apples, 8 oz. white chocolate, 2 cups of sugar, ½ cup water, 1 tbsp. red food dye, 8 lollipop sticks.

Method:

Wash the apples. Slice the bottom of each apple off so it sits sturdily on the counter. Push your lollipop stick in the top of the apple where the stalk comes out. If the stalk is still in there, take it out before adding the stick. In the microwave, melt the white chocolate. Spoon it over the apples until they are completely covered. This is best done on baking parchment. Place them on a tray and allow them to dry. The chocolate should be set after about an hour. Place the sugar and water in a heavy-bottomed pan and heat on low heat until the sugar dissolves. Don’t allow to simmer until the sugar is fully dissolved. Once the sugar is dissolved, turn up the heat to medium and allow to simmer for 4 to 5 minutes until it starts to turn a slight caramel color. Turn off the heat and whisk in the red food dye until it reaches a deep blood red color. Note: be very careful of whisking the sugar at this point as hot sugar is extremely dangerous and can cause burns if it comes into contact with skin. Spoon the blood caramel over the apples and let it drip down the sides for extra effect. The caramel will start to harden quickly, so you’ll need to work fast. Allow the caramel to set and then serve your gruesome bleeding apples!

Ingredients: 4 ½-inch-thick beef top blade steaks, 1 tsp. salt, ½ tsp. freshly ground black pepper, ½ tsp. paprika, 1 tbsp. unsalted butter, 1 tbsp. olive oil, 4 cloves garlic – 2 diced and 2 whole, juice of 1 lemon.

Method:

Pat the steaks dry on both sides and then sprinkle over some salt, pepper, paprika, diced garlic, and the lemon juice. Heat the butter and olive oil in a pan on medium-high and then once heated, place in the 2 whole cloves of garlic. Add the steaks and fry on each side for 2-3 minutes, or longer if you prefer them cooked the whole way through. Just before you remove them from the pan, squeeze more lemon juice on the steaks while in the pan. Remove the steaks from the pan and let rest for 5 minutes before serving.

Method:

Combine the Uvelka Buckwheat Extra groats and water in a pan and bring to the boil. Reduce to low heat and cover until the buckwheat is firm and tender. This should be about 8 minutes. Ingredients: 2 cloves garlic – finely chopped, the juice of ½ a lemon, 1 whole lemon, 8oz. penne pasta, 1 fresh red chili – deseeded and finely chopped, 50g soft cheese, 4oz. smoked mackerel fillet without any bones – skin removed and chopped into bitesize pieces, 1 oz. grated Italian hard cheese, 6 oz. chopped green cabbage – shredded, 1 tbsp. Dijon mustard, olive oil, black pepper, salt.

Method:

Cook the pasta following the instructions on the packet and then drain and leave to one side. Ensure you keep 1 cup of the starchy water from the pasta when you drain it. In a non-stick pan, drizzle some oil and place on medium heat. Add the garlic and chili for 30 seconds and then add the chopped green cabbage and smoked mackerel and cook for another 30 seconds. Add the drained penne pasta and a large splash of the starchy water, then the Dijon mustard, soft cheese, the juice of half a lemon, and half of the grated Italian hard cheese. Season well with salt and pepper and combine in the pan, mixing thoroughly. Cook for 1 to 2 minutes until the sauce starts to stick to the pasta. Cut the lemon into wedges, and serve the pasta topped with the last of the grated Italian hard cheese, some black pepper, and a lemon wedge on the side.
