Russet or Yukon Gold potatoes Salt & pepper to taste 1 medium onion Vegetable oil for frying ½ cup chopped scallions (green onions) 2 large eggs, beaten Peel potatoes and drop in cold water until all are peeled. Using a grater or food pro- cessor, coarsely grate the potatoes and onion. Place together in a fine-mesh strainer and press out all the water over a bowl. The potato starch will settle to the bottom. Carefully pour off the water and retain the potato starch, adding it to the potato/onion mixture in a bowl. Add the scallions, eggs, salt and pepper. Mix well.

Heat a thin film of oil in a non-stick frying pan. Use about 2 tablespoons of the potato mixture per latke and add to pan, flattening the mixture out with the back of the spoon or spatula. Fry until golden then flip and brown second side. Drain on paper towels. Serve immediately, traditionally with sour cream or applesauce. Makes 24-28 latkes. YAM & CRYSTALLIZED GINGER LATKES 1 egg 2 medium yams (about 1 lb.), ½ teaspoon fresh lemon juice peeled & grated ½ teaspoon salt 1 small onion, grated 1/8 teaspoon freshly ground pepper 1½ teaspoons flour 2 Tablespoons minced crystallized ginger 1/4 teaspoon baking powder 1½ Tablespoons honey 1/4 to 1/3 cup vegetable oil 1 garlic clove, minced 1/3 cup sour cream or chunky applesauce In a large bowl, combine egg, lemon juice, salt and pepper and beat until well blended.
