PANCAKE MIX 2 C. Flour 2 Tbsp. Baking Powder
PANCAKE MIX 2 c. flour 2 tbsp. baking powder 1/4 c. sugar 2/3 c. dry milk 1 tsp. salt; optional Keep this in a tightly covered container. Mix together in multiples of this basic recipe. To use: 2 eggs 1/3 c. oil 1 3/4 c. plus water Mix to combine; do not over beat. Drop by 1/3 cup onto hot griddle. Cook until pancakes show little bubbles on top and underside is golden brown. Flip to cook on other side. Serve promptly with syrup. Serves 4. VARIATIONS OF PANCAKES: Add 1/2 cup plus chopped or grated apple or 1/2 cup plus fresh or frozen blueberries. WHOLE WHEAT PANCAKE MIX 12 c. sifted whole wheat flour 1/2 c. baking powder 2 tbsp. plus 2 tsp. salt 3/4 c. sugar Sift together and store in medium canister. For pancakes, mix together: 1 egg 1 c. milk 1 tbsp. oil The addition of grated raw apple, nuts, chocolate chips add variety and taste appeal.PANCAKE SYRUP: 1 c. brown sugar 3/4 c. water 1/2 c. white sugar 2 tsp. maple flavoring Mix ingredients and boil for 3 minutes. Cool and store. PANCAKE CORN FRITTERS 1 egg 1/4 c. milk 1 c. pancake mix 12 oz. can whole kernel corn, drained Fluffy fritters need a light hand, so don't overbeat. Drop by teaspoonfuls into hot oil, 1 inch deep, and cook slowly until golden brown, about 4 minutes. Yield 20-24 fritters. Serve with syrup or plain. Very yummy. Can be appetizer or served with dinner. -

What is the Low FODMAP Diet? Low FODMAP Dietary Handout Created For Gastroenterology Associates of Columbus Columbus, Mississippi What is it? FODMAPs are a group of small chain carbohydrates (sugar and fibers) that are commonly found in everyday foods. FODMAPs is an acronym that stands for: F: Fermentable O: Oligosaccharides (fructans and galacto-oligosaccharides-GOS) D: Disaccharides (lactose, milk sugar) M: Monosaccharides (excess fructose) A: And P: Polyols (sugar alcohols such as sorbitol or mannitol)1 Where are they found? FODMAPs are found in dairy products, wheat, and some fruits and vegetables. Here are some common high FODMAP foods to avoid! How do they work? ➢ They pull water from the gut into the intestinal tract (osmotic) ➢ FODMAPS are not well digested or absorbed in everyone, especially those who are sensitive ➢ If eaten in excess, the bacteria in the intestinal tract can ferment leading to gas, bloating, cramping, and diarrhea2 What are the benefits? A diet low in FODMAPs can help reduce symptoms (gas, bloating, cramping, diarrhea). A low FODMAPs diet is often used in people with Irritable Bowel Syndrome (IBS), Inflammatory Bowel Disease (IBD), and in those with other digestive disorders who are sensitive to FODMAPs.2 The Three Phases of the Low FODMAP Diet So what can I eat? It may seem overwhelming but there are a LOT of low FODMAP foods that are available! It can take some time to get used to but there are great options and alternatives available. milk 101 a discussion on dairy fat There are many different types of milk sold at the grocery store and one difference between them is the amount of fat they contain. The percentages included in the names of milk indicate how much fat is in the milk by weight. The different varieties match the wide range of consumer preferences. MILK 4% milk (whole milk) has the richest, thickest and creamiest taste. 4% It contains about 160 calories and 9 grams of fat per cup. MILK 2% milk (reduced-fat milk) still has a creamy taste but less so than 2% whole milk. It contains about 125 calories and 5 grams of fat per cup. 1% milk (low-fat milk) has a much less creamy taste and a thinner MILK mouthfeel and appearance. It contains about 100 calories and 2.5 1% grams of fat per cup. Fat-free milk (nonfat or skim milk) has no more than 0.2% milk fat, MILK FAT-FREE resulting in the thinnest mouthfeel and appearance. A recent review of the existing research on whole-milk dairy consumption published in the European Journal of Nutrition found that people who eat full-fat dairy are not more likely to develop cardiovascular disease and type 2 diabetes than people who stick to low-fat dairy. Additionally, in 11 of the 16 studies included in the review, people who consumed more high-fat dairy products either weighed less or gained less weight over time. -
