It is with great pleasure and excitement that I welcome everyone to the 106th Eugowra Show. To bring the Eugowra Show to fruition each year, it involves many dedicated volunteers who commit their time and display passion for our show, who turn up every year from all around the district to come and help share their time to allow us to put on a great event for a small town and to showcase Eugowra. I sincerely thank all who contribute to our great Show. I also wish to thank our many generous sponsors who contribute both financially and also by offering support in many different ways, the Show Society really do appreciate your support. The efforts of Eugowra Show Society and all who contribute to it, were recognised in a speech to Federal Parliament by the Member of Calare, Mr Andrew Gee MP late last year, therefore we extend our thanks to Andrew for this recognition and for sharing our town and our Show with wider . Over the last year, the Eugowra Show Society has seen the passing of two show stalwarts and Life Members, Mr Viv McMillian and Mr Tom Gransden. I wish to again acknowledge their leadership and commitment to the Eugowra Show over the many years of their involvement. I look forward to a great show and thank you for your continuing participation and support of your local show.

Mayor’s Message Few events hold a special place in country people’s hearts more than agricultural shows, and certainly Eugowra is no exception. The Eugowra Show plays a big part in the lives of generations of families who live in and near the town. It provides us with an opportunity to showcase the district’s best produce and explore the latest innovations in agriculture, but, probably more significantly, it is a venue where people come together, catch up with old friends and celebrate all we love about this wonderful rural community. There is every chance you will bump into someone today who used to live in the Eugowra district and has returned to attend this year’s Show because it holds such a special place in their hearts. Like most of rural Australia, our region is dealing with a crippling drought that has brought great challenges for landholders, businesses and residents. But once again, the Eugowra Show Society has met those challenges to bring us another outstanding annual event. Agricultural shows have been part of the fabric of country towns since the 1800s. Unfortunately, not all have survived the test of time, which makes this year’s 106th Eugowra Show even more special. On behalf of , I wish to acknowledge the untiring efforts of everyone involved in organising the 2019 Eugowra Show and congratulate the Eugowra Show Society and its committee members for providing us with an event the district has treasured and will do so for many years to come.

Membership now due: Single $12 - Family $25 An annual subscription paid to the Secretary constitutes membership, entitling the subscriber to the following privileges: Single • Free admission to the grounds and free entry in all classes except where specified to the contrary. Family • Free admission to the grounds for self and partner and own children under 16 years. • Free entry by self, partner and children under 16 years in all classes except where specified to the contrary. Single and Family • Free admission to the showground of members vehicle. • A vote in the election of the Committee and alteration of the rules of the Society if required. • In addition to which, each member becomes the instrument of assisting the Society, created for the encouragement and development of Agriculture, Horticulture, Pastoral Pursuits, Improvement of Livestock, Implements and Machinery for Agricultural Purposes.

GROUND RENT and SIDESHOW REGULATIONS • All prices are GST inclusive • Minimum Ground Rent $55.00 • All charges to be paid to the Chief Ground Steward or Committee deputy upon request. • The charge for ground rent is $5.50 per metre frontage. • Limited undercover spaces are available. Minimum charge $39.60 per 3 metre frontage. • Minimum charges may apply to some other areas. • The Society reserves the right to refuse any application for space as they see fit. • The Chief Ground Steward has full control of all ground space and camping area, and is empow- ered by the Committee to use his discretion on all matters above. • Site charges $8.00 per night and $45/ week (show time rates). • Electricity Charges $15 single phase $30.00 three phase. • Any increase in electricity will be passed on. • All must have either a Certificate of Currency

GENERAL CHARGES Pavilion Full night $200 Chair charges are up to 50 chairs Day to 6 pm $100 ($22 minimum) and 50 cents per chair after that. Table charges are $5 per table Dining Room only $80

GENERAL REGULATIONS 1 All entries, with entry fee must be in writing and delivered to the Secretary’s Office on or before the following dates: PHOTOGRAPHY 3.00 pm Wednesday 11th September 2019 PAVILION 6.00 pm Thursday 12th September 2019 LIVESTOCK 8.30 am Saturday 14 September 2019 Strictly no entries booked unless accompanied by fees. Strictly no late entries.

2 All Pavilion exhibits to be in the Pavilion no later than 10.00 am on Friday 13th September 2019 ready for judging at 11 am. All livestock exhibits are required to be penned by 8.30 am on Saturday 14th September ready for judging at 9 am. Owing to growth in entries these regulations will be strictly enforced. 3 All exhibits must be the bona fide property of the exhibitor. 4 The lessee’s of stud horses for the season will be regarded as the owners for the purpose of exhibiting, providing such exhibitor produces written lease if required by the Secretary, but this will not apply to hunters and trotters. 5 Members, their partners and children under 16 years shall be entitled to enter exhibits free of charge. 6 Judges may withhold a prize where an exhibit is not up to Show form. 7 Decisions of Judges to be final except as regards the bona fides of exhibits or exhibitors. 8. A protest may be lodged by an exhibitor regarding the bona fides of any exhibit but it must be in writing, in the hands of the Secretary not later than 6 pm on the day of the Show, accompanied by the sum of $5 which will be forfeited to the Committee if the protest is deemed frivolous. 9 No exhibitor shall remove his or her exhibit from the ground before 4.30 pm on the day of the Show without the consent of the Stewards concerned. 10 No gambling in any shape or form will be tolerated on the ground. 11 The Committee reserves the right to call upon any competitor subject to age limit, at any time to furnish at his/her expense, Birth Certificate or copy thereof, or other proof, and may at its discretion withhold any prize money until such certificate, copy or proof shall have been furnished. The age of the competitor shall be taken as the age on the day of appearance in the Show. 12 Every animal on the ground, shall, when not in harness be secured by a headstall. The penalty for infringement of this regulation shall be at the discretion of the Committee, and may, in the case of an exhibit, lead to disqualification, and in other cases to summary removal from the ground. 13 Two Stewards shall accompany each Judge, (to be appointed by the Committee). 14 Stewards shall attend at the time appointed and shall attend to the reception, classification and placing of all exhibits and to the matters therewith. They shall wait upon the Judges and attend them all necessary information. They shall arrange amongst themselves for the constant and effective supervision of their sections. Stewards shall take award paper from the Judges when filled in and signed, and deliver same to the Secretary who will give them prize cards with the winners name written thereon, which the Stewards will then affix to the winning exhibit. 15 The Committee reserves the right to alter the rules of, or cancel any event if in their opinion circumstances justify such decision. 16 The use of communications devices by competitors during competition is strictly prohibited. 17 ALL EXHIBITORS AND OTHER PERSONS NOT ASSOCIATED WITH THE JUDGING MUST VACATE THE PAVILION AFTER 10.30 AM ON FRIDAY 13th SEPTEMBER 2019.

GROUND REGULATIONS The Society will not be responsible for any accident that may be caused through or by any exhibit and it shall be a condition of entry that each exhibitor shall hold the Society blameless and indemnify it against any legal proceedings arising from such an accident or loss of any exhibit.

INSTRUCTIONS TO STEWARDS Stewards are particularly requested to make themselves acquainted with their duties as below, the general regulations and those concerning the Judges. Stewards in all classes shall: 1 Draw the attention of Judges to the conditions governing each class. 2 Attend at the time appointed and attend to the reception, classification and placing of all exhibits, and to all matters in connection therewith. 3 Wait upon the Judges and afford them all necessary information. 4 Arrange amongst themselves for the constant and effective supervision of their classes. 5 Countersign the Judges award cards, obtain prize cards from the Secretary and affix to prize exhibits. 6 Not say or do anything to influence the Judges decision. 7 See that all sections in their respective classes are judged. 8 Not reveal the name of the exhibitor or repeat any remarks the Judges make. 9 Should a Judge think it advisable to reject any exhibit, or are in doubt on any matter, report same to the Secretary. 10 Two Stewards shall accompany each Judge (to be appointed by the Committee). 11 Remove all exhibitors and other persons from the vicinity of the Judges whilst judging. 12 Pavilion Stewards are requested to attend at the closing of the Show to deliver exhibits to exhibitors or authorised receivers.

GUIDANCE TO JUDGES Upon arrival at the Showground, the Judges are invited to attend the Secretary’s Office, where they will be met by the Stewards, who will supply them with the necessary books and information in regard to the classes in which they have been appointed to judge.

The demarcation (fencing) between the demolition derby ring and the showground boundary (spectators) to be a minimum distance of 20 metres. 2. Provide the insurer with details of the kind of safety fencing in place to protect the public. 3. Confirmation the performance area is flat ie no jumps or risers permitted. 4. All drivers must be 17 years or over and hold a current drivers licence – P Plate minimum. 5. All drivers enter at their own risk and must read, understand and sign the appropriate Show Waiver form. This is to be signed before the commencement of the race and witnessed by a member of the Show Committee. Drivers should present themselves to the Show office at least three hours to sign the documentation and get any updates about the event. 6. Cars will be scrutinised on the day of the event. Failure to comply with the rules and regulations of the event may result in disqualification.

THE VEHICLES 7. All cars must be of average sedan size. Station wagons, utes and panel vans are permitted to compete. Special dispensation to allow V8’s should be sought from the insurer. However, four wheel drives and full chassis vehicles are NOT permitted in the competition. All-wheel drive vehicles should have the four-wheel drive disconnected to make the vehicle a two-wheel drive. 8. The vehicle must be retained at its original height, ie no alteration to the suspension. 9. Scrutineers have the authority to inspect all competing vehicles and enforce rules and regulations. 10. No driver under the influence of alcohol or drugs will be allowed to compete. Random Drug and alcohol testing may occur prior to commencement of the event. 11. No passengers will be permitted to travel in the vehicle. 12. No internal or external reinforcement or bar work allowed with the exception of a pillar bar. Either: A vertical steel bar be fastened to the floor and roof by bolts in the centre of the car or behind the driver’s seat in such a way as to allow the driver’s headrest to be fitted. OR Side to side pillar bar (minimum 10ml thick steel) OR A-frame top to bottom pillar bar (minimum 10ml thick steel). 13. Bracing of the driver’s door mandatory. Either: A minimum of a single brace across the driver’s door. Must extend past the A and B pillar by 200ml. OR Reinforced skin on the driver’s door OR Open door, weld across A – B pillar. Fully welded both sides. 300-400 ml apart. Mark inside skin of door. Door closes. Doors are fully welded. 14. Driver’s door can also be filled with sand (NO concrete). 15. All glass and plastic must be removed from the vehicle including glove box lid and airbags removed. Dashboard (dashboard plastic) should remain in place as well as an interior rear vision mirror are permitted. 16. All doors, bonnets and boots must be strapped or chained. Strapping to be welded using 1” x ¼” metal strapping or chains to be chained closed. 17. All drivers must wear crash helmets, full cotton overalls and steel capped footwear. Gloves are optional. 18. All drivers are to wear a seat belt. Seat belts must be in good condition. The vehicle must not contain rust in either the seat or seat belt mountings. Racing harness not permitted. 19. An approved boat fuel tank or Gerry can with breather must be fastened in the centre rear in a cradle, where the back seat was. If the tank is located just in front of the rear axle, then the factory tank can be used. 20. A maximum of ten (10) litres of petrol in the fuel tank is permitted. 21. The vehicle’s petrol tank must be removed or punctured with a minimum ½” hole. Should the factory tank be located in front of the rear axle then it can be used but only in accordance with all other rules captured herein. 15 DEMOLITION DERBY RULES & REGULATIONS 22. The original specification fuel line must be used or alternatively maintain original fuel line route as close as possible to fuel cell. The object of this rule is to use as much of the original fuel line as possible. Any adaptions made should use original specification grade fuel lines and clamps and grommets when it passes through the body. Rubber grommets should be used. 23. Tow bar and tongue must be removed. 24. The bonnet and boot must be chained closed but must be accessible for scrutineering. 25. Mud guards and wheel arches must not be cut away or bent. Subject to scrutineer’s approval. 26. Front wheel drive cars must only have standard car tyres. Where possible, standard car tyres should be used. At the show’s discretion whether winter tread or rally type tyres are permitted. Strictly NO tractor tyres permitted. 27. The battery must have a rubber cover securely bolted over the top. It may be fitted to the cabin area and cable must have grommets where it passes through the firewall. 28. The radiator should be in its original position but the fan blades may be removed (optional rule at Show’s discretion). 29. Vehicles are NOT required to be fitted with a muffler (optional rule at Show’s discretion). 30. The driver’s name must be displayed on the right hand side of the roof (150mm) (optional rule at Show’s discretion) 31. Driver’s door should be white or red with the opposite colour painted in a cross on the door (optional rule at Show’s discretion). Each vehicle is to be numbered. The number is to be displayed only on the roof, bonnet or doors. Numbers will be allocated to cars at the time of receipt of nomination (optional rule at Show’s discretion) 33. No Tek screws are to be used in any part of the vehicle. 34. Brittle metal, such as grader blades, must not be used. 35. Steel mesh must be welded on the driver’s half windscreen. No mesh to be welded on the driver’s side window.

IN THE RING 36. An area will be marked on the Arena to show the boundary. Any vehicles driving over the boundary may be eliminated (Scrutineer’s/Judges decision). 37. Any vehicle deliberately ramming the driver’s side door of another vehicle will be disqualified. 38. Reverse gear must be used at all times, except when drivers need to dislodge from a competitor’s vehicle. In this case, first gear may be used for two (2) car lengths (optional rule at Show’s discretion). 39. If a vehicle stops, a maximum of two minutes will be permitted to restart the vehicle. If the vehicle does not restart within this time, the vehicle will be eliminated (optional rule at Show’s discretion). 40. Each driver shall have a white flag (30cm x 30cm) attached to a piece of dowel. A surrender flag is to be attached above the driver’s door and be accessible to the driver. When a driver wishes to surrender, they should snap the flag off. Driver’s doing this cannot re-enter the event. 41. No vehicle is permitted to hit a surrendered vehicle or a vehicle out of bounds. 42. All drivers must remain in their vehicle until the event is completed or as otherwise instructed by relevant safety crews. 43. The winner of the competition will be the last vehicle still being driven. 44. The Judge reserves the right to disqualify any driver at any time. 45. The Judge’s decision is final and no correspondence will be entered into.

AFTER THE DERBY 46. All cars must be trucked into and out of the Showground. All vehicles must be removed from the Showground following the completion of the event unless otherwise arranged with the Show Committee. Failure to do so may result in a fine. 47. At the completion of the event a full sweep of the performance area needs to be done to clear any debris.

• If the opinion of the stewards if a dog is unsafe to others, competitors or the general public it will be withdrawn from the competition.

• Only one dog may be loose in the competition area.

All competition at this show is governed by these regulations and by the Agricultural Societies Council of NSW Rules for Discipline in Horse Sections at Shows which can be viewed at www.agshowsnsw.org.au. Should it become necessary for the ASC Disciplinary Committee to open an inquiry into any aspect of competition in this Horse Section, this Society will support any penalty imposed by that Committee as a result of the inquiry and will support penalties resulting from enquiries arising from Horse Sections at other NSW shows.

INDEMNITY AND WAIVER FORMS The Horse Committee will take all care in managing the Section, but competitors taking part in this Horse Section do so at their own risk. Each adult competitor must, before competing, complete and sign a form indemnifying the Eugowra Show Society and waiving any claims against the Society for any injury sustained in competition or for loss or damage to the competitor’s property or damage caused by the competitor or his/her animal(s) at the Show. A similar form must also be completed and signed by a parent or guardian for each competitor who is under 18 years of age. ALSO, on each Waiver, each horse with which the competitor is involved in competition at the Show must be listed together with the Property Identification Code (PIC) of the property from which the horse came to the Show.

• Stalls are available but no bookings taken. • Stallions ineligible to compete in classes other than stallion classes. • Wrist bands will be issued and must be worn by all competitors. • All breed classes are for Registered Horses only – papers must be produced on request and exhibitors must be financial members. • Judging will commence strictly to the program. The Committee reserves the right to alter this program at their own discretion. • Novice is a horse/pony which has not won an individual first prize in equivalent class at another Agricultural or Breed Show. • Drug testing may be carried out at this show. Any competitor found to have breached the ASC • Disputes and Disciplinary regulations will be investigated by the ASC Disciplinary Committee. • PIC numbers must be supplied. No PIC number, no start. • Horses and ponies may compete in either Open or Hunter. Not both. • In the double chance system, Champions, Reserves and 1st placegetters in one ring cannot compete in the second ring. • Local events are for those residing in a 24 km radius of Eugowra or attend Eugowra Pony Club. Ovine Johne’s Disease

Prior to the Eugowra show our venue will be inspected by the Local Land Services Veterinary Officer to a Market Assurance Program (MAP) standard so that we can accept a greater number of potential participants in this show both from producers of different statuses (NH TMS MN) and from prevalence areas (High, Medium, Low & very low). This inspection insures that you, the producer can show your animals at the Eugowra Show with assurance.

47 HANDY HINTS FOR PAVILION EXHIBITORS

To help and encourage exhibitors, handy hints are offered at the beginning of some of the classes. The list of suggestions is not exhaustive in any class but some clues are given on how to prepare exhibits and to catch the approving eye of the Judge. The hints have been compiled from suggestions by Show Judges including Land CWA Judges and successful exhibitors over many years in Show and CWA competitions.

• The most important handy hint to pass on to all exhibitors at Shows is to read carefully and adhere to the instructions at the head of each class and also the General Regulations.

• It is important to ensure that your entry matches the description of the relevant section in which you are entering in a specific class.

48 GRAINS, SEEDS & HAY CLASS M HANDY HINTS • Don’t be deterred from exhibiting in a less than optimum season. This is taken into account by the Judge as all exhibits should have been exposed to the same adverse conditions. • The Judge is looking for a quality product which will fulfil its market. For example, hay is designed for fodder so the most important points for the Judge are attractiveness and palatability to stock - smell should be sweet, fresh and untainted. It should be soft and obviously, look good enough to eat! • Your entry should be of an even size and quality. • Produce should not be tampered with, but ‘as grown’. For example, don’t remove leaves, heads, roots or pick out any foreign weeds or seeds in the sample. In classes for a sample of grain, it should be presented for judging as harvested. Judges expect a certain degree of contamination and imperfection in the seed, and as long as the sample is within board requirements it will not be penalised. A Judge knows what ‘as harvested’ looks like and may even frown upon a sample which looks picked over. • In sections for growing crop samples, height is not as important a consideration as some may think. The main criteria is always yield potential. • Pasture samples are judged on composition, density, pureness to type and yield as far as dry matter goes. • Freedom from disease is vital in Show classes. • Presentation is very important. Label samples neatly on a small piece of cardboard for example giving the crop name and variety. The spirit of showing is providing an exhibition for the public, many of whom may not know wheat from barley or triticale.

CLASS VEGETABLES, FARM PRODUCTS & FRUIT N HANDY HINTS

• If you grow fruit and vegetables, than why not show them? • The main clue is the time of picking. Do not allow them to over mature in aiming for size. • Density and richness of colour are the number one judging points, with size next, separating otherwise equal exhibits. • Most vegetables are best picked on the day of judging to ensure that crisp, extra fresh look and touch. Even one day in the fridge can affect their freshness, although some such as lettuce are ok in the crisper. Some can be picked and stored for showing for example a good pumpkin. • Collections (six unless stated otherwise) of the one fruit or vegetable should be even in size and shape choose your selection as close to the one size as possible. A small sample of the same size will score better than a lot of uneven produce. • Heads such as cabbage and lettuce, must be dense and firm-hearted and cauliflower should be white and with no spread in the florets, which denotes over maturity. • Root vegetables must be crisp and bright with no wood in the centre. Please wash and remove pests. • Rhubarb should also be crisp with no sponginess or porosity in the stalks. (Also, a sign of over- maturity or lack of freshness) when picked must be Snapped not cut. • When exhibiting citrus fruit don’t be surprise by seeing a smaller exhibit win – the main judging points are after the fruit is cut- the juiciest and the skin depth (the thinner the better). Most over large fruit is thick- skinned and often dry. Display On a paper or plastic plate. • Externally the fruit (citrus) should be smooth skinned and blemish free and again your sample should be even sized, perfectly round and bright coloured. The secret to citrus is often watering although some varieties and some tree are better producers than others it would be wise to check your citrus by cutting a specimen before showing. • EGGS are another popular section and depending on the judge, these are judged in a couple of ways. • On looks they will be judged on shape and evenness of samples as well as size and colour. Some judges weigh the samples with weight rather than size a telling point and some will crack and egg to check on yolk size and colour and freshness. Six clean eggs in carton. Patchwork Cushion Champion Article From Class O Ribbon HANDY HINTS CLASSES O & P 1.Evenness of stitching and tension through the garment is the main judging criteria. Top knitters will not leave any sign of needle marks where they leave off. Choosing the right needle size for your wool ply is very important in getting the tension right. 2.The inside of the garment must be as neatly finished as the outside. There should be NO loose threats, NO knots and the seams must be neatly finished in the same yarn as the garment and not bulky. The single worst fault with most knitting is that the inside finish is not neat enough. 3.ALL garments should be worked in the one fibre - eg for a woollen jumper, seams and all finishing must be in woollen yard, including buttons (don’t sew on with cotton). In cotton crochet, all finishing should be in cotton. 4.The more difficult patterns do not necessarily win more prizes. Tricky patterns can be easy to mess up and errors will glare at Judges. With a simple all-over stitch (eg stocking stitch) it can be more difficult to obtain a perfect look and this may be looked upon more favourably by Judges. 5.Fine crochet must lie flat with no puckering or bucking - it must have an even tension throughout with no ‘leggy’ or loose stitches. 6.Machine work must be straight and parallel and finished neatly. Seam finish is very important as are hems - all must be exactly straight and the seams must intersect in exactly the same spot. 7.Use safety pins rather than ordinary sewing pins to attach tickets to your garment. This prevents pulling threads with loose pin ends. 55

57 COOKING CLASS HANDY HINTS Q Cooking has enough handy hints for showing, that a full book would be required. Just a sample is shown below. The main judging points observed are the overall appearance, the cut cake, the smell and the taste.

OVERALL APPEARANCE • Above all the exhibit must look delicious - after all a vital aspect is edibility! To be a ‘top’ exhibit it should look perfect. This includes; • The size of the mix must match the tin size, eg, a minimum of two inches thick (5 cm) for butter cakes. • Wire rack marks on a cake do not enhance its appearance. • Ensure the cake cooks flat on top by concaving the centre before cooking (ie, have the outside of the cake higher than the centre which rises more during cooking). The cake may taste delicious but could fail on appearance. • Greasing, lining and flouring of the tin is crucial to the look of the cake which must be exhibited as it comes out of the tin, untrimmed. • If iced (and do not ice unless it is specified in the schedule) then make it a neat even thickness, with no drips down the sides. • Small cakes, biscuits and slices should be dainty - a common fault is making them too large, especially lamingtons (4 cm cubes is the ideal size) and slices (3 cm x 5 cm).

THE CUT CAKE Judging includes how it cuts (preferably without the use of a bandsaw) and its appearance when cut. Points to consider: • Texture - this should be fine, even and consistent throughout with no air bubbles. Cooking time is crucial to gain the best look when cut. • Cakes with fruits and nuts won’t cut easily if the pieces are too large - cut your dates, nuts, etc small and evenly. • Fruit cakes won’t look even throughout if the fruit sinks to the bottom during their long cooking time. Fruit must be totally dry when added to the mixture, even if it has been soaked. Dry and coat with flour (NB - use flour from the recipe, not any extra). • Colour intensity must be matched in marble and rainbow cakes. If the chocolate is dark, the pink should be dark - if you use a pale delicate pink, then the chocolate should also be light.

HANDY HINTS

• Read the schedule carefully and note the requested size of jars. • Take more care with keeping lids clean. They must be plain, without handwriting OR commercial printing, eg, paint the tops or use contact. • Examine tops of exhibits for signs of mould. • Jars should be filled to just above the neck to the lid-line so there is no gap showing between the lid and the contents, BUT DO NOT OVER-FILL THE JARS. • All jars or bottles should have a label on it with a list of ingredients used. • Jars and bottles should have a date that it was made on it and also marked if it is hot and/or spicy. • No old jams, jellies chutneys etc are to be entered for judging. • Flavour can vary markedly between batches of stone fruit and varieties and the fruit quality controls the jam quality. FLAVOUR is the most important element of all jams and preserves. Always taste test your own before exhibiting. • If you wouldn't eat it, then why exhibit it?

DEFINITIONS Preserves May be sweet (lie a jam and marmalade) or savoury (chutneys, relish or pickles). Antibacterial spices such as mustard, garlic and cinnamon are often used in savoury preserves.

Butters, Cheese and Curds For a fruit butter cheese and curds, the fruit is usually cooked with egg yolks, sugar and sometimes butter to produce a flavoured, smooth spread.

Chutney Is made with fruit and/or vegetable cooked with vinegar, sugar and usually spices, chutneys may be either sweet or hot. A good chutney, whatever the ingredients, should be reasonably smooth and have a mellow flavour. The basic ingredients, such as apples and onions are minced or chopped finely. Chutneys are best left for at least a month to mellow and mature.

Conserves Are similar to jams, except that large pieces or whole fruits are used and cooked in such a way that the fruit maintains its shape. The fruit may be layered with sugar and left to stand before cooking, which toughens it so that it will not break down during boiling. The syrup that surrounds the fruit should be clear and bright in colour.

Jams Is usually made from fresh fruit (excluding citrus), though fruit pulp preserved in season can be also used. The fruit is chopped or crushed with sugar until set and is fairly smooth.

Jelly Is made by cooking fruit with water and sugar and then passing it through a fine cloth strainer to remove all traces of the fruit, resulting in a clear spread.

Marmalades Are made from citrus fruits and can be based on a single variety or a combination of two or three fruits. The most popular being oranges, lemons, limes, grapefruit and cumquats. Marmalades may also contain other ingredients such as vegetables or spirits such as whiskey.

Relish Like a chutney, a relish consists of chopped vegetables and/or fruit is usually used as a condiment and can be sweet, tangy or spiced. It often has a chunkier or crispier texture than chutney.

63 FLOWERS CLASS S HANDY HINTS

• Pick most Show entries on judging morning - very early ( or late on the evening before) and put straight into water up to their necks—then take inside for sorting into individual jars. It is a good idea to select one entry at a time from your list - this is much better than picking everything, taking it inside and then trying to choose what will go in each section.

• There are some exceptions to this rule - pansies are better if picked when totally dry - early in the morning the dew can stain the petals.

• Iceland poppies can be picked early as long as they aren’t too advanced. In warm weather they are best picked as buds and they will be open for showing one to two days on.

• Carnations open up more attractively if picked early, a day or two, and allowed to open indoors.

• Some cuts may be better if ‘conditioned’. For example, one very successful exhibitor scalds the stems of poppies and dahlias by pouring boiling water on them for 60 seconds to prevent them dropping.

• Don’t add anything to the water - as long as the flowers have a good drink when they are picked most will last without additives.

• The stage of bloom at cutting time is critical. The flowers should be fully out at judging, but JUST! Judges look for different things with flowers and it is not always size. Symmetry is very important - an even shape, the same on both sides, and blemish-free blooms.

• Geraniums are judged on the shape of the head, which should be a true round shape, dense with flowers and showing some foliage.

• In a section such as that for a cut of flowering shrub, it is the length of the flowering head that is important, relative to others of the same variety. • • For individual flowers such as gerbera, size is an important consideration.

HANDY HINTS • Some successful exhibitors in decorative class suggest that you read the schedule three or four times and then put it aside for a while and ‘sleep on it’ - the inspiration will come! • Decorative class sections are in titles - they are an art form - and the title suggests a style - the finished article is a whole picture, a blend of shape, size, colour of container and contents. • The first element is the container and it must suit the style. ‘Bold and Beautiful’ for example would not suggest a shapely, slender container. • The next important element is the line material, on non-plant material that provides the background, the emphasis being on ‘line’. • A ‘no-no’ is for any needle aid to be visible. Arrange foliage to hide it.
