Italian Wine Regions Dante Wine List ITALIAN WINE REGIONS DANTE WINE LIST: the wine list at dante is omaha's only all italian wine list. we are also feature wines from each region of italy. each region has its own unique characteristics that make the wines & grapes distinctly unique and different from any other region of italy. as you read through our selections, you will first have our table wines, followed by wines offered by the glass & bottle, then each region with the bottle sections after that. below is a little terminology to help you with your selections: Denominazione di Origine Controllata e Garantita or D.O.C.G. - highest quality level of wine in italy. wines produced are of the highest standards with quantiy & quality control. 74 D.O.C.G.'s exist currently. Denominazione di Origine Controllata or D.O.C. - second highest standards in italian wine making. grapes & wines are made with standards of a high level, but not as high a level as the D.O.C.G. 333 D.O.C.'s exist currently. Denominazione di Origine Protetta or D.O.P.- European Union law allows Italian producers to continue to use these terms, but the EU officially considers both to be at the same level of Protected Designation of Origin or PDO—known in Italy as Denominazione di Origine Protetta or DOP.     TENUTA DI SALVIANO Orvieto Classico Superiore DOC 2019 REGION: Italy / Umbria Orvieto GRAPES: Trebbiano Toscano (Procanico), Grechetto, Verdello, Sauvignon Blanc Tenuta di Salviano was purchased by the Principe Corsini family in the late 17th century. The propety has Ethruscan and Roman descent, in fact the main house on Salviano was a Roman villa and somewhere on the estate is a necropolis. Donna Nerina Corsini married Il Marchese Enrico Incisa della Rocchetta, and their two children Giovanni and Eleonora are now the owners of Tenuta di Salviano. Il Marchese Giovanni Incisa della Rocchetta manages the estate and oversees the winemaking with his wife, La Marchesa Tara. The Orvieto Classico Superiore zone, the heartland of Umbria’s distinct whites, is characterized by higher elevations and cooler temperatures. The vineyards are overlooking Lago di Corbara on the south bank. Soils here are a composite of clay and limestone. Given soils and climatic conditions, whites here are defined by higher aromatics, structure derived from total acids, and freshness. HARVEST NOTE A moderately rainy and cool spring which delayed flowering slightly, followed by a balanced start to summer with occasional high temperatures in July and August. Early September has been enjoying cool nights with occasional rain showers. The production is expected to be slightly decreased for 2019 due to the lack of rain during ripening, but this is still to be determined. TASTING NOTE It has a bright pale yellow color. On the nose it offers sensations of undergrowth such as hawthorn, arbutus, daisies and yellow-fleshed fruits, with echoes of herbs. On the palate it is rounded, the tangy texture and mineral recollections give this wine an unexpected crispy touch.

    SAN GIOVANNI DELLA SALA Category Orvieto DOC Classico Superiore (controlled appellation) Vintage 2016 Blend Grechetto, Procanico, Pinot Bianco, and Viognier Climate The climate of the 2106 vintage was characterized by a mild winter with regular rainfall followed by a cool spring season which allowed the bud burst and the flowering to take place in a normal fashion. June saw a brief drop in temperatures, leading to a slight slowing of plant growth and development , but which came back to balance in July due to a warm summer with positive temperature swings between daytime heat and evening and nighttime coolness. This led to a wine with an interesting aromatic notes. The harvest of the Grechetto, the Viognier, and the Pinot Blanc for the wine began towards the second half of September and the picking finished with the picking of the Procanico. Fermentation and Aging The grapes were fermented separately, variety by variety. A part of the crop was fermented using cold maceration techniques (with the must in contact with the skins for six hours at a temperature of 50° Fahrenheit, or 10° centigrade) . This must was added to that obtained from the direct pressing of the grapes and the bend went into stainless steel tanks, where it fermented at a temperature held to 61° Fahrenheit (16° centigrade). After the initial rackings, the wine remained on its lees in order to further heighten its structure, elegance, and crispness up until the moment of its blending and then bottling.
