The tastes and flavours are very often symbolic of where the race is: Canadian lobster, Japanese Wagyu or Matsusaka beef, Italian handmade burrata. Everything is sourced locally. Everything is fresh. The menu is decided on a couple of days before the race, based on what fresh products the chefs can find at the local markets upon arrival.
