OC13061 The fruitcake capital of the world Jan Grimes Georgia Southern University Michael McDonald Georgia Southern University John Leaptrott Georgia Southern University Abstract Two different fruitcake companies in the same small town are discussed and their widely different strategies are presented. Each of the entrepreneurs began working with a “master baker” as little boys but later followed different paths to develop a successful fruitcake business. A brief history of the fruitcake is offered as evidence that the product has been around for hundreds of years and will likely not go away anytime soon in spite of the ridicule and humor that has surrounded fruitcakes during the past twenty-five years. Meltnmix CHOCOLATE BROWNIE CAKE
MELTnMIX CHOCOLATE BROWNIE CAKE (Makes 12 slices) INGREDIENTS – FOR THE CAKE 165g (3/4 C) Sugar Alternative (I use Natvia granulated – a stevia and erythritol blend) 200g (1 ½ C) Dark Chocolate, sugar free (I use Well Naturally sugar free 70% dark chocolate) 110g Butter, melted (or you can use the equivalent in coconut oil 3 Large eggs 1-2 tsp Pure Vanilla Extract 20g (1/4 C) Cocoa Powder, unsweetened ½ tsp Baking Powder 190g (2C) Blanched Almond Flour 1+ drops Liquid Stevia (optional, to your taste) INGREDIENTS – FOR THE FROSTING 60g (1/2 C) Powdered Sugar Alternative (I use Natvia icing mix) 30g Cream Cheese 1Tb Cocoa Powder, unsweetened 50g Butter, softened As needed Water (just enough to get the frosting to a good spreading consistency) METHOD 1. Preheat oven to 180ºC/350º (fan forced 160ºC/320ºF). 2. Grease and line a 20cm (8”) springform cake tin. 3. On a cutting board, slice the chocolate into small pieces. This will help the chocolate melt quickly and evenly. 4. In a medium saucepan, place the butter and melt on low heat until fully melted. Take care not to brown or burn the butter. 5. Remove the saucepan from the heat and mix in the chocolate pieces. Stir with a spatula until the chocolate has melted and the mixture is smooth and emulsified. 6. Add the sugar alternative and mix to incorporate. 7. Then add the eggs and vanilla and mix to combine. 8. Sift in the cocoa powder, baking powder and almond flour (to get ensure there are no clumps) and fold into the wet ingredients until just combined. -

We spoke to American cake decorating sensation, Ron Ben-Israel (right), who revealed how he and his team made the star wedding cake. How did it come about that you made the wedding cake for Sex and the City 2? We were contacted by the team of set designers for the movie who had seen our work in the media. We’ve also cooperated in the past with Swarovski Crystal to showcase their newest products on cakes. How did you come up with the design? We were given the parameters by the set designers: an elegant, white, over-the-top wedding setting. Interestingly, the design didn’t call for the use of sugar flowers, for which we are well known; the key words were “frozen water” and “sparkle”. There was to be no colour in the cake, just white, transparency, and reflection of light. We started looking at chandeliers for inspiration, but most of the shapes had too much flare on the bottom to become elegant cakes. -

WEEKEND KITCHEN RECIPE SHEET 8th November 2015 Charlotte White Spiced Carrot Cake with Cream Cheese Frosting This is a recipe that I have adapted over the years from a Delia Smith book! I love Delia’s recipes but found that the resulting cake from her Carrot Cake recipe was not quite big enough for my liking – I do like to provide generous portions! I have also added Orange Extract to this recipe as it gives a much stronger flavour than orange zest and is far less messy to use. Good quality natural Orange Extract is divine. I always couple my Carrot Cake with an American inspired Cream Cheese Frosting. This is essentially just buttercream made with half butter and half cream cheese but the result is a wonderful creamy texture that holds up to being spread all over the cake or piped on cupcakes too. Carrot Cake Ingredients: 350g Dark Brown Soft Sugar 300ml Sunflower Oil 4 Large Eggs 1 tsp Orange Extract 400g Self-Raising Flour 6 tsp Mixed Spice 2 tsp Bicarb of Soda 400g Grated Carrot 200g Sultanas 100g Desiccated Coconut Oven temp = 180C/ Gas Mark 4 Whisk the sugar, oil and eggs until combined. You will need to whisk until the sugar is all dissolved and this should take 3 minutes or so. Add the orange extract. Combine the flour, mixed spice and bicarb in a separate bowl and fold this into the wet ingredients a third at a time. Add the carrot, sultanas and coconut to the cake mixture and fold these through until all are well covered. -
