WHITE RICE – is both milled and polished, which removes the bran and germ along with all the nutrients that reside within these important layers. Molecular composition of recipes in a cuisine reveals patterns in food preferences. Indian cuisine encompasses a number of diverse sub-cuisines separated by geographies, climates and cultures. Its culinary system has a long history of health-centric dietary practices focused on disease prevention and promotion of health. We study food pairing in recipes of Indian cuisine to show that, in contrast to positive food pairing reported in some Western cuisines, Indian cuisine has a strong signature of negative food pairing; more the extent of flavor sharing between any two ingredients, lesser their co-occurrence. This feature is independent of recipe size and is not explained by ingredient category-based recipe constitution alone. Ingredient frequency emerged as the dominant factor specifying the characteristic flavor sharing pattern of the cuisine. Spices, individually and as a category, form the basis of ingredient composition in Indian cuisine. We also present a culinary evolution model which reproduces ingredient use distribution as well as negative food pairing of the cuisine. Our study provides a basis for designing novel signature recipes, healthy recipe alterations and recipe recommender systems. Address for Correspondence: [email protected] ABSTRACT The pre-colonial Malabar was an all-encompassing geographical area that covered the entire south Indian coast sprawling between the Western Ghats and Arabian Sea, with its capital at Kozhikkode. When India was linguistically divided and Kerala was formed in 1956, the Malabar district was geographically divided further for easy administration. The modern day Malabar, comprises of Kozhikkode, Malappuram and few taluks of Kasarkod, Kannur, Wayanad, Palakkad and Thrissur. The Malappuram and Kozhikkod region is predominantly inhabited by Muslims, colloquially called as the Mappilas. The term 'Malabar' is said to have etymologically derived from the Malayalam word 'Malavaram', denoting the location by the side of the hill. The cuisine of Malabar, which is generally believed to be authentic, is in fact, a product of history and a blend of cuisines from all over the world. Delicacies from all over the world blended with the authentic recipes of Malabar, customizing itself to the local and seasonal availability of raw materials in the Malabar Coast. As an outcome of the age old maritime relations with the other countries, the influence of colonization, spice- hunting voyages and the demands of the western administrators, the cuisine of Malabar is an amalgam of Mughal (Persian), Arab, Portuguese,, British, Dutch and French cuisines. Biriyani, the most popular Malabar recipe is the product of the Arab influence. -

To meet these requirements nutritious recipes which are of low cost are to be prepared. The ingredients used in the recipes should be locally available so that all the socio- economic groups can easily prepare. Ragi Puttu is one of the low cost recipe made in India with Ragi flour, jaggery and Green gram flour. Literature Review Eleusine coracana is the scientific name of Ragi or Finger millet. In India it is also known Mandua, Kelvaragu, Ragulu, Nachni, Bavto, Mandhal, etc. Nutritionally, finger millet is good source of nutrients especially of calcium, other minerals and fiber. Total carbohydrate content of finger millet has been reported to be in the range of 72 to 79.5% (Bhatt et al., 2003). It is highly nutritious, and versatile, and can be cooked like rice, ground to make porridge or flour. The fiber content in Ragi helps to solve many gastrointestinal problems such as Constipation, Intestinal gas and flatulence and abdominal distention. Finger millet has the higher amount of calcium (344 mg) and potassium (408 mg). Calcium helps in keeping bones and teeth healthy. It has higher dietary fiber, minerals, and sulphur containing amino acids compared to white rice, the current major staple in India (Shobana et al., 2013). Jaggery is also called as Gur in India. -

Caramel Pumpkin Bread Prep Time: 20 - 30 minutes Baking Time: 90 minutes Servings: 3 loaves (8” x 4”) INGREDIENTS 2½ sticks unsalted butter 4 cups + 6 Tbl unbleached flour 3¼ cups granulated sugar 2 bags caramel baking chips (11 oz./bag) 1 teaspoon pumpkin pie spice 1 Tbl baking powder 1 teaspoon vanilla extract 1½ teaspoon baking soda 4 eggs ¼ teaspoon salt 1 cup sour cream ¾ cup brown sugar 2 cans pumpkin (15 oz./can) Preheat oven to 275°. Use 1 Tbl of butter to coat three 8” x 4” loaf pans; dust the pans with 2 Tbl flour; set aside. In a large bowl mix together 2 sticks of butter, granulated sugar, pumpkin pie spice and vanilla extract until fluffy (approx. 3-4 minutes). Add eggs, one at a time, mix on low for 1 minute. In a medium bowl, mix together baking powder, baking soda and sour cream. With a rubber spatula fold the sour cream mixture into the butter mixture. Add the pumpkin and mix together with a rubber spatula. Sift 4 cups of the flour and gradually add to the pumpkin mixture while gently stirring by hand . Stir in caramel baking chips and add the mixture to the prepared loaf pans, leaving 1” of space below the top of each pan. In a small bowl combine brown sugar and 4 Tbl of flour; add 3 Tbl of cold butter and smash with fork until mixture resembles wet sand. Spread evenly over the top of the batter in each loaf pan. Bake in 275° oven for 90 minutes. -

The 4th edition and revised version was developed by the main author with assistance of Tanay Prabhu, BS Student in Biological Sciences, Drexel University, Philadelphia. The previous versions of the tool were developed with the assistance of graduate students Sajida Arsiwala, MS, RD and Bhavna Subhedar, MS and Dr. Kathryn Sucher, Sc.D, RD, Professor Emeritus, Department of Nutrition, Food Science and Packaging at San Jose State University. About the Author Ashwini Wagle, MS, RD is an Associate Professor and Director for the Didactic Program in Dietetics (DPD) in the Department of Nutrition, Food Science and Packaging at San Jose State University. Ashwini Wagle earned her MS in Food and Nutrition from Indiana University of Pennsylvania (IUP) in 93'and is currently a doctoral student in Educational Leadership (Ed.D) at University of New England. She comes to San Jose State University with over ten year experience as a registered dietitian (RD) in several skilled nursing facilities and acute care hospitals in the San Francisco Bay Area. Ashwini Wagle is also involved with several on-campus and off-campus organizations and serves on the committees for organizations such as the South Asian Heart Center at El Camino Hospital, Center for Healthy Aging in Multicultural Populations (CHAMP), Education Committee of the California Dietetic Association (CDA), San Jose Peninsula District of California Dietetic Association (SJPD), Cal-Pro Net Center.
