To our delight our small, town family-owned Sausage Company has won over 60 state and national awards for our sausages. Listed below are the different sausages we currently make. In addition to these sausages we have 25 varieties of bratwurst. (Look for this list also) SUMMER SAUSAGE: We not only claim to have the best tasting Summer Sausage in Wisconsin and the entire nation - we've proven it. This sausage is the winner of the prestigious "President's Trophyof Excellence" Award. (Available in plain or garlic) HOLIDAY SUMMER SAUSAGE: Traditionally, our Holiday Summer Sausage was made only for the holidays, but because of its popularity we now offer it year round. It is available in a honeycombed German Hukki casing, which when sliced for a party tray has a beautiful appearance as well as wonderful flavor. Holiday Sausage is also available in a narrow natural casing, when sliced this sausage is the perfect size for a cracker, and of course the old-fashioned natural bung casing which is perfect for a sandwich slices. All styles of Holiday Summer Sausage are available in plain or garlic. PEPPER COATED SUMMER SAUSAGE: This popular Summer Sausage is smoked in a special casing that is lined with course ground pepper. We remove the casing, and the pepper remains on the sausage giving it a wonderful flavor. LANDJAEGER: This famous natural casing mild snack stick has a Swiss origin. Landjaegers are great for hunters, fisherman, and hikers as well as for any party event, as they need no refrigeration. Cut in bite size pieces they make great snacks during Packer games. TACO STIX.: A spicy blend of red and white pepper give this natural casing snack stick it's kick. PEPPER STIX.: This spicy snack stick gets its flavor from good old-fashioned black pepper. The heat sneaks up on you, so you might need a nice cold beer. CAJUN STIX.: A special blend of Louisiana Cajun seasoning and red pepper make these our hottest snack stick. BRAUNSCHWEIGER: We still use the old-fashioned natural casing and pure pork livers for a great smooth texture and taste. We also make Braunschweiger with just the right amount of horseradish added for a little extra zip. Featuring State and National Award Winning Sausage WIENERS: Our original recipe for snappy wieners is sill the best around. Stuffed in natural casings and made from beef and pork, with no fillers or preservatives added. POLISH SAUSAGE: A smoked sausage that makes an ideal main dish with sauerkraut, or serve it on a roll with your favorite toppings. A special mixture of all natural spices gibes this juicy sausage a rich flavor. KRANSKI: This course ground pure pork sausage originated from Yugoslavia many years ago. You don't have to be Slovenian to enjoy the mild garlic flavor and natural casing of this sausage. Just simmer slowly 20-25 minutes and serve with sauerkraut for a traditional touch. ANDOUILLE: The perfect smoked sausage for Cajun dishes, like jambalaya, that are so popular. This mildly Cajun spiced sausage in a natural casing is also great with sauerkraut. RING BOLOGNA: A beef and pork blend stuffed in a natural beef casing. All wholesome meats. No fillers are added to any of our products. Available in plain or garlic STRAIGHT BOLOGNA: The same great recipe as the ring bologna, but we stuff it ina straight casing to make it ideal for slicing for sandwiches or snacking. Also available in plain or garlic RING LIVER: The recipe for this liver sausage is over 50 years old. Heat slowly in ~ frying pan and eat it just as it is or serve it on bread. RINDAWURST: A lightly seasoned hash-like all beef sausage. Simmer slowly and serve on bread or with fried potatoes. BREAKFAST SAUSAGE: This breakfast favorite is one of our most popular items. The pork and mild spice recipe is a perfect way to start your day. 0" CHORIZO: A fresh Mexican-style sausage, traditionally fried with scrambled eggs and served on a flour tortilla. RUSSOWURST: Sometimes referred to as rope sausage, this fresh garlic sausage can be eaten many ways. It can be charcoal grilled, pan fried, or baked. It can be eaten plain, used in pasta dishes, or even cut up for horsd' oeuvres. HOME-SMOKED BACON: We now offer 3 varieties of our lean home-smoked bacon. Our original home smoked bacon, pepper coated bacon and our newest variety, apple pie bacon. DRIED BEEF: Our dried beef, unlike most, is made with 100% lean beef. Great chipped and creamed over toast or cold on a sandwich. BEEF JERKY STYLE STRIPS: These old-fashioned whole muscle beef circles are smoked slowly for unbeatable flavor. Great for hunting or camping, our jerky is packaged in convenient l-oz., 4-oz., and 8-oz. packages. BLOOD RICE RING: This hard-to find sausage is an old fashioned Slovenian favorite!.

    SUMMER SAUSAGE A WALTON'S FAVORITE RECIPE MEAT: 25 lbs. of 80/20 Beef Trim or 18 lbs. Venison and 7 lbs. Pork Fat INGREDIENTS: 1 Bag Excalibur Summer Sausage Seasoning (for 25 lbs. of meat) 1 Bag Sure Cure (1 oz. cure package is included with seasoning) 2 lbs. Ice Cold Water 6 oz. Sure Gel Binder or 12 oz. Soy Protein Blend Optional: 2.5 lbs. Hi-Temp Cheese Optional: 4 oz. Encapsulated Citric Acid (Gives the traditional "tang" flavor and eliminates the need to hold for 12 hours) WWW.WALTONSINC.COM / 800-835-2832 / WICHITA, KS PROCESS: • Grind beef/venison mixture through a ⅜" grinder plate • Grind a second time through a ⅛" plate • Mix Sure Gel (or Soy Protein Blend), Sure Cure, and seasoning into the water • Add water/seasoning mixture and optional cheese to ground meat until very sticky (approximately 8 minutes by machine, double time if by hand) • Add (optional) Encapsulated Citric Acid and mix for an addi- tional 45-60 seconds.     Sausages and Food Safety Summer sausage, kielbasa, bologna, bratwurst: The list goes on and on. There are so many varieties of sausage. How long can you store them — and where? Are they fully cooked or not? The following background information will answer these questions and others. Use the chart as a guideline for safe storage. Types of Sausages Sausages are either uncooked or ready to eat. They can be made from red meat (for example, beef, pork, lamb or veal), poultry (turkey or chicken, for example) or a combination. Uncooked sausages include fresh (bulk, patties or links) and smoked sausages. To prevent foodborne illness, uncooked sausages that contain ground beef, pork, lamb or veal should be cooked to 160 °F. Uncooked sausages that contain ground turkey and chicken should be cooked to 165 °F. Ready-to-eat sausages are dry, semi-dry and/or cooked. Dry sausages may be smoked, unsmoked or cooked. Semi-dry sausages are usually heated in the smokehouse to fully cook the product and partially dry it. Cooked sausages (for example, bologna and frankfurters) are cooked and may also be smoked. Who inspects sausages? USDA's Food Safety and Inspection Service (FSIS) inspects all sausages in interstate commerce and all sausages that are exported to other countries. If sausages are made in a retail establishment (such as a grocery store, meat market or restaurant) and are sold within the State where the establishment is located, the sausage may be under the jurisdiction of that State's health or agriculture department. Stuff into 35-42 mm hog casings. Andouille can be made fresh or smoked. If you are smoking Andouille, add 1 cup of soy protein concentrate and 1 level teaspoon of Insta-cure No. 1 to 5 lb. of meat. (You can smoke this like you would smoked Polish sausage.) STUFFING Andouille sausage should be stuffed into a larger-size hog casing, preferably 38-42 mm. Sausage then is placed on smokehouse sticks and spaced properly. Dry the sausage as follows: When stuffing the sausage, it normally is hung on the sausage sticks in the room where you are working. By the time you are finished stuffing the sausage, much of it already is dry.

Finished moisture content is low, usually 50%. A true summer sausage is a fermented product, however, it can be expensive to get started for the hobbyist. These instructions will produce an unfermented, semi-dried product. Adding citric acid or fermento (see optional ingredients) will provide a somewhat tangy, fermented taste. Suggested meat ratios include: For 25 lb. Recipe 1. Beef Summer Sausage - 18.75 lb. Beef Rounds 6.25 lb. Beef Fat 2. Beef / Pork Summer Sausage 10 lb. Beef Chuck 7.5 lb Pork Shoulder 7.5 lb. Pork Trimmings (Fat) 3. Wild Game Summer Sausage 18.75 lbs. Game 6.25 lbs. pork trimmings (Fat) Required ingredients: Water – up to 10% of the meat weight – acts as a ingredient distribution system and meat lubricant. Cure # 1 – Use 1 oz. of cure per 25 lb. of meat when smoking or processing at temps. under 200 F Casings - If stuffing into casings. Premixed seasoning - for 25 lb of meat. Follow package instructions for amount of seasoning. Do not over season. Optional ingredients: Add these to the seasoning, cure and water and then mix into the meat. Soy protein (binder) – Add 3.5% (of meat weight) to the meat mixture. Binds the meat, retains natural juices. Do not use Soy Protein if you are planning to use Non-fat dry milk.
