One group of plant secondary metabolites known as flavonoids contribute to the visual character, taste and health benefits of wine, particularly the classes; anthocyanins, flavonols and tannins. While the initial focus grape flavonoid research was on the development of anthocyanins and their contribution to red wine colour, the accumulation of other flavonoids such as tannins and flavonols has been investigated recently due to their influence on grape and wine quality (Boulton 2001; Brossaud et al. 2001; Downey et al. 2003a; Downey et al. 2003b; Harbertson et al. 2002; McDonald et al. 1998; Price et al. 1995a; Spayd et al. 2002). 1.2 Wine production 1.2.1 Winemaking Winemaking involves the extraction of juice from ripe grapes and fermentation of that juice with a cultured yeast.
