beverages Article The Evolution of the UK Wine Market: From Niche to Mass-Market Appeal Julie Bower Independent Scholar, Worcester WR1 3DG, UK; [email protected] Received: 4 October 2018; Accepted: 8 November 2018; Published: 12 November 2018 Abstract: This article is an historic narrative account of the emergence of the mass-market wine category in the UK in the post-World War II era. The role of the former vertically-integrated brewing industry in the early stages of development is described from the perspective of both their distributional effects and their new product development initiatives. Significant in the narrative is the story of Babycham, the UK’s answer to Champagne that was targeted to the new consumers of the 1950s; women. Then a specially-developed French wine, Le Piat D’Or, with its catchy advertising campaign, took the baton. These early brands were instrumental in extending the wine category, as beer continued its precipitous decline. That the UK is now one of the largest wine markets globally owes much to the success of these early brands and those that arrived later in the 1990s, with Australia displacing France as the source for mass-market appeal. Introduction The evolution of wine consumption in the UK is described by important socio-economic trends in consumer behavior that emerged in the 1950s. Walsh1,2,5,* Whole-exome sequencing (WES), which analyzes the coding sequence of most annotated genes in the human genome, is an ideal approach to studying fully penetrant autosomal-recessive diseases, and it has been very powerful in identifying disease-causing muta- tions even when enrollment of affected individuals is limited by reduced survival. In this study, we combined WES with homozygosity analysis of consanguineous pedigrees, which are informative even when a single affected individual is available, to identify genetic mutations responsible for Walker-Warburg syndrome (WWS), a genetically heterogeneous autosomal-recessive disorder that severely affects the development of the brain, eyes, and muscle. Mutations in seven genes are known to cause WWS and explain 50%–60% of cases, but multiple additional genes are expected to be mutated because unexplained cases show suggestive linkage to diverse loci. -

Translating those associations into knowledge of disease mechanisms remains a fundamental challenge because the associated variants are overwhelmingly in noncoding regions of the genome where we have few guiding principles to predict their function. Intersecting the compendium of identified genetic associations with maps of regulatory activity across the human genome has revealed that phenotype-associated variants are highly enriched in candidate regula- tory elements. Allele-specific analyses of gene regulation can further prioritize variants that likely have a functional effect on disease mechanisms; and emerging high-throughput assays to quantify the activity of candidate regulatory elements are a promising next step in that direction. Together, these technologies have created the ability to systematically and empirically test hypotheses about the function of noncoding variants and haplotypes at the scale needed for comprehensive and system- atic follow-up of genetic association studies. Major coordinated efforts to quantify regulatory mechanisms across genetically diverse populations in increasingly realistic cell models would be highly beneficial to realize that potential. -

SAKE: Its Culture, History and ‘Need to Know’ facts Sake, also known as Nihon Shu or Seishu, has been drunk for around 2,000 years and reflects the deep relationship that Japanese culture and society has with this drink. It is a wonderful beverage - clean, delicious, mostly vegan with low acidity and no chemicals added, which is now enjoyed by millions of people around the world. Today sake is no longer just found in Japanese and Chinese eateries but is fast becoming a fashionable drink with sales being established by distributors globally mainly in the USA and the Far East. Sake can now be found on many wine and drinks lists and even on the wine lists of Michelin starred restaurants, albeit in many cases on the last page! But this demonstrates advances that have been made in its acceptance in most big cities around the world. 21st century Japan sees sake bars, or izakayas (as they are known in Japan), and even Philip Starck style drinking holes in atmosphere-less malls, serving a multitude of sakes including draft from numbered (no name) sealed aluminium kegs. Namazake are the freshest kind of sakes with a very short shelf-life and unpasteurised. The world’s longest sake vending machine with 93 sakes on tap at the Ponshukan Sake Museum (ぽんしゅ館) The early years Originally from China, the simple rice wine was brought into Japan around 7AD. Records dating back to the third century show that an intoxicating drink, called kuchikami (a mouth chewed sake), was made by young maidens chewing grains, such as millet, rice, chestnuts and acorns.
