Glacier hops are added and the beer is aged in French Oak barrels. The Goose that laid the Golden Eggs ∙ Saison Ale Thoroughbred 6-Row barley comes from Chester County in Pennsylvania, and the hops are from Clearlake. Wild earthy aromatics come from the addition of Brettanomyces yeast strain, and the beer undergoes solera ageing for 11 months. Local Origins ∙ Farmer's Ale Inagural bottling 161005125, or lot 125, is called the "Plum Project" since local Muir Beauty plums from Rancho Chimiles are added. 40% white wheat from Alamosa in Colorado joins the barley base malt. Cascade-Fresh hops come from Howell Mountain. The Viper and the File ∙ Belgian Style Brown Ale Copeland 2-Row barley from Fallon, NV along with some crystal and roasted malts are the base. Belgian Yeast and a new Chestnut barrel for aging balance the roast and delicate aromatic components. The Dog with the Clog ∙ Extra Special Bitter Ale Full Pint Barley has a stronger malt intensity and is Estate-grown and malted in Madras, Oregon. Used chardonnay barrels seem to bring out more spice aromas, and the finish has a bitter snap. The Eagle's Nest ∙ Double IPA West Coast IPA is framed with Colorado's Scarlet Malted Barley. Hopped with the bittering Chinook, Glacier and Magnum varieties for 110 minutes, and then more and more on the finish. Old Man and Death ∙ Imperial Rye Stout Rye provides 14% of the grain bill and was grown in Nevada.The base malt was bred and grown in Oregon, then micro-malted in Colorado.
