Spirits are aged in oaks vats for more than 15 years, thus gaining a strength and nobility. The wine cellars in the basement were built in 1152 by the Cistercian monks of Clairvaux. 2.30 – 4.30pm Visit CLAIRVAUX ABBEY (900th birthday) It's in the heart of the old Gallic forest covering the hills and valleys of the Plateau of Langres, on the borders of Champagne and Burgundy that Saint Bernard came to reclaim, there is nine centuries, the glade of Val d'Absinthe to build the famous abbey where he lived until his death. Since inception, the abbey had a regular destiny with 5 periods clearly defined. In 2015, we celebrate 900 years of its foundation.
