SPICY BOK CHOY IN GARLIC

This Spicy Bok Choy is the perfect side dish for a cut of red meat or chicken. The sweet and spicy sauce is the ideal complement to bok choy's natural slightly bitter , and sautéing this vegetable makes its texture absolutely divine. INGREDIENTS

1 lb bok choy

1 Tbsp vegetable oil

1 Tbsp

¼ cup water

1 tsp fresh ginger root, grated

2 cloves garlic, minced

1 Tbsp sauce

1 Tbsp light

1 Tbsp brown

flakes (optional)

HOW TO

1. Trim off the ends of the bok choy and chop. Keep the white parts separate from the green—they'll need to cook longer. Rinse and pat dry. Set aside. 2. In a small bowl, stir together the vegetable oil and sesame oil. 3. In a larger, separate bowl, stir together the water, ginger, garlic, oyster sauce, soy sauce, brown sugar, and red pepper flakes. Set aside. 4. Heat the oil mix in a large skillet or wok over medium-high heat. Add the bok choy stems first. Stir-fry for a few minutes or until the pieces begin to turn a pale green. Then, add the leaves and cook and stir until leaves are wilted—about 1 to 2 minutes. Remove from the heat and transfer to a serving dish. 5. Pour the sauce into the skillet/wok and cook over medium-high heat, stirring constantly, until the sauce has thickened—about 3 minutes. Pour over the bok choy and toss lightly to coat. Enjoy!
