The water source for the distillery wells up through layers of basalt left from the island’s creation and imparts a variety of minerals giving it a distinct taste. Rich on the tongue with elegant oak and spice, and a touch of briny salinity that carries through to the long, sherried finish. The taste is bold and liqueur -like, with unexpected notes of crystallized orange and tangerine candies. Finishes long and sweetly -savory, with blooming Macallan1951, 51 year, Craigellachie Robust green apple notes dominate the entire profile, from the nose - along with lemon zest and a hint of cinnamon - through the palate - more lemon and mild peat - to the very finish, where it gives slow way to a drying, mossy smoke. Mortlach 1939, 50 year, Dufftown A rich brew of cherries, marzipan and honeycomb open the nose, with some sweet maltiness, black pepper and gingerbread. Silky-smooth on the tongue, with a touch of nitter wet wood, espresso, and dark chocolate. At the finish, the bitterness gives way to a return of sweet marzipan and some lingering sherry notes.

The All-American Whiskey Tour 25 Knob Creek, 9 year, Clermont, KY Aged in highly-charred barrels and bottled at 100 proof, this Jim Beam-owned whisky is as big, bold and all-American of a Bourbon as it gets. Maple sugar, nuts and oak on the nose are joined by notes of caramel and fruit on the tongue, with a long, smooth finish, and just a bit of bite at the very end. Oola 'Three Shores', Seattle, WA Combines whiskeys from three different countries: a Highland Scotch, our own American high rye Whiskey, and a deep, rich and smooth Canadian Whiskey. A whiff of smoke coupled with sweet sea brine on the nose of three shores starts the conversation.
