The neighbourhood occupies a prime position along Brooklyn’s active waterfront, a perfect location for commercial enterprises. Although the neighbourhood has largely been converted into trendy office and residential spaces, ghostly

Neon signage has a strange and transportive power. A light buzz emanates from the electrified elements surging within enclosed glass tubes, flooding surrounding streets with a warm and colourful glow. In Chicago, neon signs have a storied history, and it’s difficult to conjure an image of the city without picturing illuminated lettering. Signs like that of the Chicago Theatre have become landmarks, representations of the city itself. In the early 1900s, a French scientist named Georges Claude developed a method of electri- fyingneon gas in glass tubes. When heated, the neon-filled tube became illuminated and glowed bright red. While we now refer generally to any type of coloured and illuminated glass tube sign as neon, only the phosphorous component of neon produces the distinct red glow. Different hues are created by using other noble gases or coating the tube itself. Claude introduced his neon sign at the Paris Motor Show in 1910, patented his methods in 1915, and in 1922 sold the first commercial neon sign in the United States to a Los Angeles car dealership. When people ask me what I do, I tell them I’m an entrepreneur in hospitality. I don’t buy and sell shoes or cars – my business revolves around food, wine, music, events, experiences. I’ve opened dozens of restaurants and clubs in Toronto over the past three ecades, from The Guvernment and the Cabana Pool Bar to the NAO Steakhouse and Byblos. I’m 54 now, and this is my 32nd year in this game. My company employs over 2,000 people, and we probably entertain roughly 15,000 people in Toronto on an average Saturday night. There’s an old quote that says mankind can be divided into two classes: hosts and guests. I’m definitely the former. I rarely get to be the latter.

The qualities you need to do my job? Enthusiasm, for a start. I’m up at 4:30 and sending emails at six because my mind is racing with new ideas and plans. You need to be a micromanager, but I’ve managed to step back a little bit. That doesn’t mean that I’m not still on top of things; I’ve simply learned to delegate and trust people. But the number one quality you need is the ability to spread the enthusiasm you feel. This is a people business; you have to get joy out of seeing people smile when they’re cutting into a steak, or getting their hands in the air on a dance floor, or simply walking into a place and going, “Wow!” I get goosebumps to this day when I see that kind of reaction.

Before I joined Porter, I used to work for a pet store, believe it or not. But my working for an airline, in many ways, was written in the stars. My father, now retired, had a long career at Air Canada, my mother worked for Delta and my brother is a pilot for Thunder Airlines in Northern Ontario. Airplanes are in my blood. I’ve been on planes since 1988, a couple of months after I was born. As a kid flying regularly to see my grand- parents in Florida, I used to keep a logbook signed by the captain of each flight. I still have that logbook, and I still ask captains to sign it! It’s a record of my life in the air.

Listening. It’s one of the most important parts of my job. As is diplomacy, intuition, the ability to gauge a passenger’s mood. You need to be able to judge whether a passenger is in a mad rush or in the mood for a chat. Some people appreciate friendliness and openness, others brusqueness and swift service. The days when you are able to truly help a passenger out are very rewarding. I had a passenger recently who had lost his passport in Montréal but urgently needed to get to the United States. I spent much time on the phone to operations in Toronto trying to work out a solution, and eventually we flew him to Windsor where he was able to rent a car and drive across the border to Detroit. We got him where he needed to go in the end.

Montréal airport gets very busy, but my favourite time is at night, when you can watch the twinkling lights of flights landing in the dark.
