WHISKY BIBLE FOURTH EDITION aqua vitae uisge beatha – ‘water of life’ A brief history of Whisky The Gaelic ‘usquebaugh’, meaning ‘Water of Life’, phonetically became ‘usky’ and then ‘whisky’ in English. Scotland has internationally protected the term ‘Scotch’. For a whisky to be labelled Scotch it has to be produced in Scotland. ‘Eight bolls of malt to Friar John Cor wherewith to make aqua vitae’. The entry above appeared in the Exchequer Rolls as long ago as 1494 and appears to be the earliest documented record of distilling in Scotland. This was sufficient to produce almost 1500 bottles. Legend would have it that St Patrick introduced distilling to Ireland in the fifth century AD and that the secrets travelled with the Dalriadic Scots when they arrived in Kintyre around AD500. The spirit was universally termed aqua vitae (‘water of life’) and was commonly made in monasteries, and chiefly used for medicinal purposes, being prescribed for the preservation of health, the prolongation of life, and for the relief of colic, palsy and even smallpox. Scotland’s great Renaissance king, James IV (1488-1513) was fond of ‘ardent spirits’. When the king visited Dundee in 1506, the treasury accounts record a payment to the local barber for a supply of aqua vitae for the king’s pleasure. The reference to the barber is not surprising. In 1505, the Guild of Surgeon Barbers in Edinburgh was granted a monopoly over the manufacture of aqua vitae – a fact that reflects the spirits perceived medicinal properties as well as the medicinal talents of the barbers. -

Consumer Trends Wine, Beer and Spirits in Canada EXECUTIVE SUMMARY INSIDE THIS ISSUE Canada’s population, estimated at nearly 34.9 million in 2012, Executive Summary 2 has been gradually increasing and is expected to continue doing so in the near-term. Statistics Canada’s medium-growth estimate for Canada’s population in 2016 is nearly 36.5 million, Market Trends 3 with a medium-growth estimate for 2031 of almost 42.1 million. The number of households is also forecast to grow, while the Wine 4 unemployment rate will decrease. These factors are expected to boost the Canadian economy and benefit the C$36.8 billion alcoholic drink market. From 2011 to 2016, Canada’s economy Beer 8 is expected to continue growing with a compound annual growth rate (CAGR) between 2% and 3% (Euromonitor, 2012). Spirits 11 Canada’s provinces and territories vary significantly in geographic size and population, with Ontario being the largest 15 alcoholic beverages market in Canada. Provincial governments Distribution Channels determine the legal drinking age, which varies from 18 to 19 years of age, depending on the province or territory. The World Whiskies Awards are the global awards that select the very best of all the international recognized whisky styles, promoting the world’s best whiskies to consumers and trade across the globe. This award comes one month after Distillery 291 won Best American Rye from Whisky Magazine’s World Whiskies Awards. 291 Colorado Rye Whiskey then went on to the world round for the global win. “Colorado is now home to the Best American Rye three years running and World’s Best Rye for two years, adding depth and character to the newly established Colorado Spirits Trail,” said Myers. 291 Colorado Rye Whiskey is a small batch rye whiskey – copper pot distilled and aged in American white oak barrels for one year and finished on aspen staves.
