    CAPABILITIES OVERVIEW Updated October 2013 1 2 3 THE COSTANZO’S BAKERY ADVANTAGE OUR HERITAGE In 1933, an ambitious Angelo Costanzo started a small western New York bakery along the Niagara River known as Costanzo's Bread. He delivered Italian breads to mom and pop grocery stores throughout Buffalo, New York. The business continued to grow, and with the advent of the supermarket concept you could now find Buffalo’s favorite “Costanzo’s Bread” stocked in every store. Over the years Costanzo’s became a trusted brand throughout the Buffalo market. In the 70’s, Angelo Sr. saw the growth potential of submarine shops and pizzerias and refocused the company on servicing local foodservice establishments. Because of the reputation for quality built through the company’s retail sales, Costanzo’s was widely accepted in foodservice and quickly became the desired roll for Buffalo’s leading sub shops. At the same time, Angelo began grooming Angelo Jr. and his brother to take over and expand the family business. In 1977, Angelo Jr. and his brother took over the bakery and moved into a new, larger facility to support their continued growth. As local sales increased, the natural progression was to expand into the national marketplace by developing a line of frozen, fully baked sub rolls and round rolls. This was the beginning of Costanzo’s Bakery, Inc. Over the next several years, Angelo also groomed his sons to take over the business; and in 2000, the third generation was at the helm supported by a team of experienced bakery industry professionals and vendor partners.

To use: • Add 150g of white bread flour and 150g of tepid water1 to 150g of starter mixture. • Mix this well and leave for 12hrs (or until bubbly). • The starter may be keep outside of the fridge if used and replenished daily. A Bread Recipe Ingredients By scaling the flour, water and starter proportionally with respect to the amounts bellow, you can adjust the size of your loaf. The following ingredients roughly yield a 1kg loaf which would fill a 27x14cm oval proving basket. 1. 400g flour; a mixture of 300g strong white bread flour and 100g rye flour; 2. 10g salt (a heavy pinch); 3. 30g dark sugar (two teaspoons); 4. 60g seeds; for example 30g sunflower seeds and 30g linseeds; 5. 250g sourdough starter; 6. 30g olive oil; try olive oil infused with garlic; 7. 200g tepid water. Method Add the items above, in the order 1-7, to a large mixing bowl and mix until the ingre- dients conglomerate. On a clean surface, kneed the dough until it becomes elastic; this should take 10-15mins. Oil the mixing bowl, place the kneaded dough inside and leave to rise for 8hrs (or until doubled in size). Flour a surface and tip out the risen dough. Knock back, shape and place the dough in a floured proving basket. Leave to prove (a second rise) for 2-4hrs, remaining cautious of it rising above the lip of the basket. Preheat oven to 240◦c. Turn out proven dough onto a floured tray (or baking stone) and cut slits on top.

Abstract Rye used to be the most common cereal cultivar in the Alps. Far more robust than other cereals, rye easily adapts to harsh climate and high altitudes and, therefore, was for centuries the staple food of mountain populations. Various factors, including the improvement of the population economic well- being, led to a progressive reduction in its consumption and production. Thanks to a Protected Denomination of Origin (PDO), local actors covering the entire supply chain (rye and flour production, baking) were able to safeguard and revitalise this important element of the Valaisan food heritage and productive landscape. The PDO product specification allows some flexibility in production methods to better include bakers of different size and the adaptation of bread to local consumer tastes. In the Haut-Valais and in the German-speaking parts of the Canton, consumers like rye bread with a more acid taste, whereas in the Bas-Valais and the French-speaking parts of Switzerland they prefer a less acid bread with a more neuter taste. Slow Food also contributed to the safeguarding of traditional Valais rye bread with the establishment of a Presidium centred upon the fifth-generation Arnold Bakery of Simplon Dorf, which is also a member of the PDO association.

The multigrain breads were developed by replacing wheat flour by 5.10, 15, 20 and 30% of oat, barley, maize and rice flours and 1% flax seeds were incorporated in bread making to increase its pharmaceutical value. A prominent change was observed in case of protein content by altering the substitution levels. Similarly fat, fibre and ash also vary by varying the flour ratios. The colour analysis showed certain change in L*, a* and b* values. More the fibre content was introduced in the samples, more the brown colour appeared. The texture profile analysis (hardness, springiness, chewiness & cohesiveness) increased by increasing the percentage of composite flours in the blends. Physical characteristics (bread volume, dough expansion and specific volume) increased by decreasing the percentage of blends in the bread samples and vice versa.   • Festiwal Chlebów Świata, 21-23. Marca 2014 Roku
    FESTIWAL CHLEBÓW ŚWIATA, 21-23. MARCA 2014 ROKU Stowarzyszenie Polskich Mediów, Warszawska Izba Turystyki wraz z Zespołem Szkół nr 11 im. Władysława Grabskiego w Warszawie realizuje projekt FESTIWAL CHLEBÓW ŚWIATA 21 - 23 marca 2014 r. Celem tej inicjatywy jest promocja chleba, pokazania jego powszechności, ale i równocześnie różnorodności. Zaplanowaliśmy, że będzie się ona składała się z dwóch segmentów: pierwszy to prezentacja wypieków pieczywa według receptur kultywowanych w różnych częściach świata, drugi to ekspozycja producentów pieczywa oraz związanych z piekarnictwem produktów. Do udziału w żywej prezentacji chlebów świata zaprosiliśmy: Casa Artusi (Dom Ojca Kuchni Włoskiej) z prezentacją piady, producenci pity, macy oraz opłatka wigilijnego, Muzeum Żywego Piernika w Toruniu, Muzeum Rolnictwa w Ciechanowcu z wypiekiem chleba na zakwasie, przedstawiciele ambasad ze wszystkich kontynentów z pokazem własnej tradycji wypieku chleba. Dodatkowym atutem będzie prezentacja chleba astronautów wraz osobistym świadectwem Polskiego Kosmonauty Mirosława Hermaszewskiego. Nie zabraknie też pokazu rodzajów ziarna oraz mąki. Realizacją projektu będzie bezprecedensowa ekspozycja chlebów świata, pozwalająca poznać nie tylko dzieje chleba, ale też wszelkie jego odmiany występujące w różnych regionach świata. Taka prezentacja to podkreślenie uniwersalnego charakteru chleba jako pożywienia, który w znanej czy nieznanej nam dotychczas innej formie można znaleźć w każdym zakątku kuli ziemskiej zamieszkałym przez ludzi. Odkąd istnieje pismo, wzmiankowano na temat chleba, toteż, dodatkowo, jego kultowa i kulturowo – symboliczna wartość jest nie do przecenienia. Inauguracja FESTIWALU CHLEBÓW ŚWIATA planowana jest w piątek, w dniu 21 marca 2014 roku, pierwszym dniu wiosny a potrwa ona do niedzieli tj. do 23.03. 2014 r.. Uczniowie wówczas szukają pomysłów na nieodbywanie typowych zajęć lekcyjnych. My proponujemy bardzo celowe „vagari”- zapraszając uczniów wszystkich typów i poziomów szkoły z opiekunami do spotkania się na Festiwalu.

This study was conducted with a view of producing fortified wheat flour bread to increase the nutritive value of wheat flour bread. The soya bean, ragi and flax seed flour were composited with different fortification levels. The whole wheat flour was fortified with 15, 20 and 30% with equal ratios of all the three flours. The fortified bread was evaluated for its nutritional, sensory, physical characteristics with control bread prepared from wheat flour. The bread characteristics like loaf expansion, specific volume, crust colour and crumb firmness showed bread fortified with 15% composite flour was comparable with control bread. The sensory analysis again revealed that bread fortified with 15% of soya bean, ragi and flax seed flour was as good as control bread. Keywords- Fortified bread, Soyabean, Flax seed, Ragiflour.
