FPRDI PROCEEDINGS OF flvf0-3 INTERNATIONAL CONFERENCE ON COCOWOOD UllLIZATIONTECHNOLOGIES FOREWORD The third International Conference on Cocowood Utilization, organized principally by the Forest Products Research and Development Institute (FPRDI) in coordination with the International Tropical Timber Organization (ITTO) and the Common Fund for Commodities (CFC), was successfully conducted on 26-29 October at Holiday Inn, Manila, Philippines. Held 18 years after the second meeting in Zamboanga, Philippines in 1979, the organizers underscored the importance of the 1997 conference as the crucial link in the 18-year gap between the last two international gatherings on cocowood utilization ever convened. This Proceeding presents the highlights of the conference, the papers presented in each session, as well as the discussions after each session. The conference could not have been successfully conducted had it not been for the moral support of the ITTO and CFC. Also, many ITTO-3 Project Staff and FPRDI Staff who made up the conference committees worked very hard to make the affair a success. Space is not enough to thank all of them individually. Readers are encouraged to reproduce the contents of this bulletin with acknowledgment. FOREWORD Traditional rice food products generally have short shelf-life. Quality also depends to a large extent on the locality, the manufacturer, and the tools used. We studied and improved these processes in order to prolong the shelf-life of these products and improve their quality. We focused on two concerns in our rice food products development: first, we studied the preparations of traditional food products like puto, kutsinta, sapin-sapin, and espasol; second, we developed new products from rice, such as: rice spaghetti, chifon cake, brownies, waffles, rice wine and rice milk. We also succeeded in making new products from rice, such as bakery products commonly made from wheat. These new, high value products from rice will hopefully spur greater de- mand for rice as an industrial raw material. Broken grains and low-grade rice may find their use in the production of rice wine and the rice milk, a highly nutritious drink. Although still in the developmental stage, we are now confident that these products will spur other related demands, such as good eating quality rices, which calls for an improved breeding program, and improved drying and milling facili- ties. Our objective in all this is to provide rural households, cooperatives, and small scale industries with additional income from rice food enterprises. SANTIAGO R. Chera Amlag, Hood Famous Bakeshop
Chera Amlag, Hood Famous Bakeshop Celebrating a one-year anniversary at a brick and mortar bakery is a big deal for a business that started with cheesecake brought to a neighborhood potluck. If you had asked Chera Amlag, owner of Hood Famous Bakeshop in Seattle, if she thought her love of baking would turn into a business, she would have laughed. “I’m not a professionally trained pastry chef, and never wanted to try to be one,” Amlag admits. What she is, instead, is someone very much in love with baking, who is only interested in making desserts that are approachable and comforting, and made with quality ingredients. Mission accomplished. After that fateful potluck, people kept asking for that “hood famous” cheesecake, which convinced Amlag to try and make a go of it for paying customers. She began selling her brilliantly colored creations at popups and bake sales across Seattle, and at dinner parties she and her chef/musician husband, Geo, started hosting, called Food and Sh#t. Soon, people were calling in orders for her unique purple cheesecakes, many of them not knowing their stunning hue came from ube extract and jam Amlag orders from the Philippines. Ube isn’t something most western palates (or eyes) are familiar with, so she got quite a bit of media attention, and her cakes became a nice entry point for conversations about the diversity of Filipino desserts. Amlag also makes cheesecake in flavors like white chocolate guava, champorado, halo halo with homemade haupia, coconut pandan and calamansi mango. She changes her desserts to suit her mood and the season, and is currently making buko pie, calamansi bars, marshmallows, and truly addictive ube cookies, which are tender and intensely buttery — like a mashup of marzipan and shortbread someone colored pastel purple. -

Genetics of Makapuno: a Genetic Tumor of the Coconut Endosperm
GENETICS OF MAKAPUNO: A GENETIC TUMOR OF THE COCONUT ENDOSPERM Dolores A. Ramirez Institute of Piant Breeding College ofAgriculture University of the Philippines IAJs Banos College, Laguna, Phflipplnes ABSTRACT The genetic misregulation resulting in the continued cell proliferation and uncontrolled growth of the mutant coconut endosperm (makapuno) was studied. Biochemical, cytological and histological data indicate that the makapuno con dition resulted from the altered transcription of the genes for the enzymes involved in hormone metabolism. The altered hormone metabolism caused the misregulation of galactomannan metabolism which in turn effected the abnormal cell behavior and properties of the makapuno endospenn. Introduction The mutant coconut endosperm, locally known as makapuno, results from continued cell proliferation and uncontrolled growth, characteristic of neo plastic tissues or tumor. Early studies of Torres (1937) and Zw1iga (1953) indicate that the makapuno condition is gene-controUed, specifically one major gene effect. However, considering the several types of makapuno one can observe (Adriano and Manahan, 1931) and the series of biochemical processes the cells would have to undergo before continuous cell proliferation happens, it is quite clear that a major gene effect might be an oversimplification. Genetic tumor is known to be inducible in plants. For example, certain inter specific hybrids in Nicotiana (N glauca x N. langsdorffii) result in the formation of tumorous tissues quite identical to that of makapuno (Chuja, I 965; 1968). The same genetic tumors were induced by interspecific hybridization in Datura and by inbreeding in sweet clover (Braun, 1981). This malignant process is due to a single type of heritable cellular change that involves the regulatory mechanisms, Except for makapuno, there are no known naturally occurring genetic tumors in plants.
