Managers Minute October 2020 ...REALLY? What an eventful year we have had so far. From pool renovations, to Auditorium and kitchen renovations...Covid 19 hasn’t stopped us from getting stuff done. Moving forward, you will see we are adding events, open houses, with social distancing in mind. Our Open House at the two Brand New homes on Wellfleet Drive will be on, October 16-17 from 10:00AM until 2:00PM. We will be serving refreshments at the clubhouse after you tour the 2 homes. We hope to have the pool reopened by November 1st. The Auditorium renovation should be finished by Christmas 2020. We will be having a Grand Opening pool party, with social distancing guidelines in place once, the pool is finished. All of us want to get back to living as normal as possible. Our residents at Camelot East Village have been outstanding during these times and our staff and myself are forever grateful for you! God Bless Camelot East Village and God Bless America! Notes from the Social Director Welcome October! We are looking forward to some of our snowbirds returning to Camelot East Village. The progress on the pool is coming along nicely. It is fun to watch the changes on a daily basis. As we transition into the “new normal” Cove Communities will do their best to give you a resort style feeling here at the Village. Just wait and see how stunning the Auditorium and Kitchen will be. I know we all are looking forward to a new year, new beginnings & new memories. Let’s try and remember to not sweat the small stuff and truly treasure each day…each moment. Make the times count with special friends and family we have in our lives. A life filled with faith and joy will take away your worries and concerns. Look back and you can recall at least a few of those times you worried unnecessarily, and you saw how everything fell into place exactly the way it should. Let us be grateful for all of the blessings we have and remember to lift one another up, for life can be beautiful if you seek the beauty in everything. Okay…on a sad note, a full-time position at Dutch Valley Restaurant became available and I jumped at the chance to make more income by working only one job and I accepted. Leaving Camelot East Village as your Social Director was a very difficult decision to make. I love working here and will miss our staff and all the residents. Thank you all for welcoming me with such kindness. When I say I love you all …I mean every word. I am very sad to leave but, in life, change is necessary, and I welcome the new challenges set before me. Remember, you can come see me at Dutch Valley. 13 Recipe Pepper-Honey Cedar Plank Salmon Ingredients • 2 (12 inch) untreated cedar planks • 1/4 cup pineapple juice • 1/3 cup soy sauce • 2 tablespoons white vinegar • 2 tablespoons lemon juice • 1/2 teaspoon cayenne pepper • 1 tablespoon olive oil • 1/2 teaspoon paprika • 3/4 cup honey • 1/4 teaspoon garlic powder • 1/4 cup packed brown sugar • 6 (6 ounce) skinless, boneless salmon fillets • 1 teaspoon ground black pepper • Fresh Salmon Fillet 1 Lb. Directions 1. Soak the cedar planks in warm water for 1 to 2 hours. Add a splash of bourbon to the water if desired. 2. Bring the pineapple juice, soy sauce, vinegar, lemon juice, olive oil, and honey to a simmer in a saucepan over medium-high heat. Reduce the heat to medium-low, and stir in the sugar, 1 teaspoon black pepper, cayenne pepper, paprika, and garlic powder. Simmer, stirring occasionally, until the sauce has reduced to a syrupy consistency, about 15 minutes. Set the sauce aside. 3. Preheat an outdoor grill for medium heat. Place the planks on the grate. They are ready to cook on when they start to smoke and crackle just a little. 4. Season the salmon with a light sprinkling of salt and pepper. Place the fillets onto the smoking cedar planks, close the lid of the grill, and cook for 10 minutes. Spoon a small amount of the sauce over the salmon fillets and continue cooking until the fish turns opaque in the center, about 5 minutes more. Serve with the remaining sauce.
