Feijoada (fey-jwah-duh) Brazilian Black Bean Stew Serves 6-8 Traditional Feijoada usually contains hard to source ingredients, such as pig’s ears, feet and tongue as well as salted beef. I’ve simplified the recipe with readily available ingredients. Serve the stew with white rice and sautéed greens and a glass of Dusted Valley’s 2013 Malbec of course! 1 1/2 pound pork shoulder, cut into 2 inch cubes 3 tablespoons olive oil 2 teaspoons Savor, divided 3/4 pound Linguica or smoked pork sausage, cut into 1/2" slices 1 pound bulk mild Italian sausage 2 large onions, sliced 1 tablespoon chopped garlic, about 4 or 5 large cloves 8 cups of water, divided 1 pound of dry black beans, not soaked but rinsed 1 pound corned beef, rinsed well and cut into 2 inch cubes 1 smoked ham hock, about 1 1/2 pounds. Have butcher cut into half 3 bay leaves 1 14.5 ounce can of petite diced tomatoes Toss the pork shoulder pieces with 1 teaspoon of the Savor and set aside. In a large enameled Dutch oven heat the oil over medium high heat. Add the pork shoulder and cook until browned, about 5-6 minutes. Remove the pork from the pan and set aside. Add the Linguica to the pot and cook until browned, about 2-3 minutes. Remove from the pan and add it to the pork. Next in the same pan brown the bulk sausage breaking up into small pieces as it cooks. This will take about 6-7 minutes. -

These are excellent sources of molybdenum (128.25 mcg/171 grams); fiber; folate; tryptophan and manganese ( 14.71 g.; 294.12 mcg, 0.17 g.; and 0.95 g. per 171 grams cooked beans, respectively). Pinto beans are also good sources of protein, phosphorous, iron, magnesium, potassium, copper and vitamin B1. Certain “phytonutrients” shown to be helpful in prevention of some cancers, including stomach cancer are also provided in important amounts by pinto beans. These phytonutrients include cinnamic acids, secoisolariciresinol, and coumestrol. In addition, pinto beans lowers cholesterol due to the beans’ high fiber content and prevents blood sugar levels from rising too rapidly after a meal. A cup of cooked pinto beans provides 58% of the recommended daily intake for fiber. Soluble fiber forms a gel-like substance in the digestive tract that combines with bile ( which contains cholesterol) and ferries it out of the body. Research studies have shown that insoluble fiber not only helps to increase stool bulk and prevent constipation, but also helps prevent digestive disorders like irritable bowel syndrome and diverticulosis. ______________________________________________________________________ -

Brazilian Bean Stew (Feijoada) It’s super simple to make in an instant pot or pressure cooker 2 slices raw smoked bacon 1-1/3 pounds chuck beef stew meat Salt; ground black pepper as desired 3 Tablespoons canola oil, divided 1 large onion, chopped 2 Poblano peppers, seeded; chopped 12 cloves garlic, sliced 1 (14 oz.) smoked sausage, sliced 1 cup red wine 1 to 2 cups beef broth, divided 1 (15 ounce) can diced tomatoes with juice 2 Tablespoons red wine vinegar 2 Tablespoons chili powder 2 (19.7 oz.) cans black beans, drained; rinsed 1 4 Tablespoons cornstarch mix with 3 Tablespoon water Serve with: Cooked rice as desired Garnish: minced red onions; sliced fresh jalapeno peppers; cilantro sprigs; sliced oranges Cook Bacon: In 10-inch cast iron skillet, fry bacon to cook but not crispy brown. Remove bacon; cool; cut into bite-size pieces. Sear Beef Chunks: Sprinkle beef chunks with salt and black pepper. Sear beef in batches in bacon drippings. Do not crowd the meat in the pan. Remove seared caramelized beef; continue searing remaining beef chunks. Set aside. Sauté in Instant Pot: Place 2 Tablespoons oil in Instant Pot cooker on “sauté” setting; add onion and poblano pepper; cook stirring constantly until beginning to soften, about 5 minutes. Add garlic; cook 1 minute or until fragrant. Add Ingredients: Add seared beef chunks, bacon pieces, smoked sausage, red wine, 1 cup beef broth, tomatoes with juice, vinegar, and chili powder; stir to combine. Set Instant Pot to Cook: Secure lid on Instant Pot; set pressure to “High”; let cook for 21 minutes. -

Black Bean & Meat Stew
Black Bean & Meat Stew - Feijoada Chorizo, pork ribs and pork shoulder make the base for this hearty Brasilian casserole with deeply savory spiced pulses. Ingredients 9 oz. dried black bean, soaked 3 onions, chopped overnight, then drained 4 garlic clove, finely chopped 1 lb. corned beef cut into chunks pinch of chili flakes 1 lb. pork rib olive oil, for cooking 3 chorizo cooking sausages 2 bay leaf 1lb. pork shoulder, cut into 2 inch 2 tbsp. white wine vinegar cubes Method Heat a large heavy-based saucepan with a fitted lid, add the oil; in batches sear the corned beef, ribs, sausages and pork shoulder. Season each batch with salt and pepper. Remove the meat and set aside. Add the onion, garlic and chili to the pan. Pour in a little olive oil if it needs more. Season with salt, pepper then fry for 8 minutes, or until soft. Add the meat, bay leaves, white wine vinegar and drained beans. Cover with just enough water to cover, about 4 cups. Bring to a boil and reduce the heat to a low simmer. Cover and cook for 2 hrs. or until the beans are soft and the meat is tender. If there is too much liquid in the pot take the lid off in the last hr. You can also use a slow cooker on the short method (4 hrs.) or make a quick version using a pressure cooker in batches for 30 mins each. Another method is to cook it in the oven for 3-4 hrs. @ 320o/285o . -
