Explore your garden to see if you have any edible flowers – consider brassicas (cabbage and broccoli family), tulsi or pineapple sage. What edible leaves can you find? Not all flowers are edible so don’t eat anything you don’t know. 2. What other parts of the plants in your garden can you eat? 3. Do you grow bananas? Besides eating the ripe fruit, look at your banana patch to see if you can use it for any of the other uses mentioned by Hugh.

Morag’s Permaculture Garden Tour: 1. Grow a pumpkin from seed in your garden. Plant one with just the seed and then use Morag’s suggestion of planting it with some of the flesh and skin. Is there any difference in the growth of your pumpkin? 2. Monitor how much food waste comes from your family in one week. Where does it go? Do you compost it, feed to chooks or put into the rubbish? Are there any food items that could actually be eaten?

3. Try Morag’s pumpkin and lemon myrtle recipes (in the notes below). 4. Share your favourite recipe from your or make a video to share on our Facebook group. Extension Ideas: QUESTIONS to explore:  How can your garden help you reduce your waste?  What does Morag mean by her garden being a healthy human habitat?  What is a food forest and biomimicry?  What is living soil? Workshop Notes: Comments from Morag:  Nourish your garden soil to nourish your plants to nourish you.  If you do nothing else, mulch and compost your garden.  Think like a pumpkin. Help plants to grow naturally by working with nature. Be a garden [pr]activist and make a positive difference in the world.

Recipes:

Pumpkin Skin Chips Method 1 Wash the pumpkin. Preheat oven to 180oC (fan forced). When slicing off the pumpkin skin (to make soup for example), collect the pieces. Place the pumpkin skins on a baking tray. Drizzle with olive oil, and any herbs or spices you’d like - I usually use a sprig of rosemary and crush a couple of garlic cloves. Check after 10 minutes. Depending on the size and thickness of your pieces, this may take a little longer. Just check with a fork to see if your pumpkin and skin is nice and soft.

Method 2 A simpler way is to lay the pumpkin skins on an electric flatbed sandwich-maker with a little drizzled oil and herbs, close the lid for a few minutes and voila! Like above, depending on how thick or thin your slices are, it may take a little longer.

Toasted pumpkin seeds Method 1 Preheat oven to 180oC (fan forced). Remove pumpkin seeds from pumpkin flesh and rinse. Place seeds on a baking tray and cook for 10 mins - until just dry and crispy. While still hot, sprinkle with some tamari (soy sauce) or finely chopped herbs and toss to cover the seeds with the flavour.

Method 2 Place cleaned seeds on an electric flatbed sandwich-maker. Close the lid for a few minutes until the seeds are dry and crispy. Immediately sprinkle with tamari and or finely chopped herbs and toss to cover the seeds with the flavour.

Lemon Myrtle Tea Take 2-3 fresh leaves from your tree. Place them in a mug. Pour boiling water over them and let steep for two minutes. Remove leaf and enjoy. Experiment mixing with mint leaves, rosella calyx, and other herb teas.

Lemon Myrtle Yoghurt Place lemon myrtle leaf in a tub of plain yoghurt overnight for the scent to infuse. Remove the leaf and enjoy the delicious lemon myrtle flavoured yoghurt. Key Learning Areas:  Science  Health & Physical Education
