These standards focus on quality and food safety, and a complete application of HACCP as an integral part of the system. The achievement of these certifications demonstrates the Company’s commitment to producing high-quality and healthy food in compliance with local regulations. SQF PreGel America is a SQF certified supplier; the Safe Quality Food (SQF) is an internationally recognized food safety and quality certification program administered by the Food Marketing Institute (FMI). It certifies that all suppliers in the food chain effectively implement robust food safety control systems, requiring that both a rigorous and credible food safety management system and continuous monitoring procedures are applied. ORGANIC CERTIFICATION In 2012, PreGel obtained an organic certification in line with the Company’s policy of sustainability. The organic production method not only responds to consumers’ demand and caters to a specific market, but also contributes to environmental protection, animal welfare, and rural development. PreGel’s organic products are manufactured in compliance with the EC Reg. 834/2007. KOSHER Products that carry a Kosher certification satisfy the requirements of Jewish law in regards to the ingredients and process involved in the production of food or food products. HALAL In 2011, PreGel obtained Halal certification. Halal-certified products have been certified to follow Islamic food preparation and ingredient standards. HAZELNUT PIEDMONT I.G.P. In 2013, PreGel obtained the I.G.P. certification for the Traditional Paste “Piedmont Hazelnuts I.G.P.”. This certification contributes to the development of a sustainable model, enhancing the quality of the resources from local communities in Italy. The product “Piedmont Hazelnuts I.G.P.” meets the requirements of EC Reg. 1107/96 and 1151/12 on the protection of geographical indications and designations of origin for agricultural products and food. LIQUORICE OF CALABRIA D.O.P. In 2014, PreGel also decided to join the D.O.P. certification with the product “Liquorice of Calabria D.O.P.” “La Liquirizia” is manufactured in accordance with the requirements of EC Reg. 1072/11 and 1151/12 on the protection of geographical indications and designations of origin for agricultural and food products. With it comes many advantages, such as an extended shelf-life, a consistent level of quality, and a well-balanced mix. All PreGel bases provide the necessary balance (in terms of sugars, fats, and solids) to promote optimal consistency, creaminess and scoopability in gelato and sorbetto, while enhancing any added flavoring – Traditional Pastes and ForteFrutto®. PreGel offers a wide array of hot and cold process bases that allow for personalization and meet the needs of all businesses. Base selections include: milk and water bases, fruit bases, chocolate bases, soya and alcoholic gelato bases. 4 | Products Catalog BASES HOT PROCESS BASES PreGel’s hot process bases are proprietary powdered blends of dry ingredients with the most advanced formula that is activated by heat. All hot process bases must be heated before the mixture is poured into the batch freezer. The overall process is quite simple. First, heat the milk in the pasteurizer to 35°C–40°C/95°F–104°F. Next, add the solids and mixe well to complete the heating phase. Once the temperature reaches 85°C/185°F, cool the mixture down to 4°C/39.2°F and let it rest for at least 1.5 hours. Remove the appropriate amount of mixture from the pasteurizer and add in the PreGel Flavoring of your choice, blending well before processing in the batch freezer. The formula for these bases was designed to eliminate the need to heat the mixture, saving time and money. The cold process consists of thoroughly mixing all ingredients together, then letting it rest for at least 30 minutes in a refrigerator before adding the PreGel Flavoring of your choice and processing in the batch freezer. Please note that all PreGel cold process bases can be pasteurized if desired. Roll out the dough and shape, cut with a special wheel larded, strips of 3 cm wide. Cut the strips to 20 cm in length, and fold it in half, "tweezers" with your fingers from time to time so as to form cavities, then roll it to form rosettes. Allow to rest for about 4-5 hours to dry on a cloth. In a saucepan heat the figs cooked wine or grape.
