foods Review Multisensory Flavour Perception: Blending, Mixing, Fusion, and Pairing within and between the Senses Charles Spence Crossmodal Research Laboratory, Oxford University, Oxford OX2 6GG, UK; [email protected] Received: 28 February 2020; Accepted: 21 March 2020; Published: 1 April 2020 Abstract: This review summarizes the various outcomes that may occur when two or more elements are paired in the context of flavour perception. In the first part, I review the literature concerning what happens when flavours, ingredients, and/or culinary techniques are deliberately combined in a dish, drink, or food product. Sometimes the result is fusion but, if one is not careful, the result can equally well be confusion instead. In fact, blending, mixing, fusion, and flavour pairing all provide relevant examples of how the elements in a carefully-crafted multi-element tasting experience may be combined. While the aim is sometimes to obscure the relative contributions of the various elements to the mix (as in the case of blending), at other times, consumers/tasters are explicitly encouraged to contemplate/perceive the nature of the relationship between the contributing elements instead (e.g., as in the case of flavour pairing). There has been a noticeable surge in both popular and commercial interest in fusion foods and flavour pairing in recent years, and various of the ‘rules’ that have been put forward to help explain the successful combination of the elements in such food and/or beverage experiences are discussed. In the second part of the review, I examine the pairing of flavour stimuli with music/soundscapes, in the emerging field of ‘sonic seasoning’. -

State College Blvd., Fullerton, CA 92832, USA *Corresponding author; e-mail: [email protected] Leaf vegetables and other edible greens are a crucial component of traditional diets in sub-Saharan Africa, used popularly in soups, sauces, and stews. In this review, we trace the trajectories of 12 prominent African indigenous vegetables (AIVs) in tropical America, in order to better understand the diffusion of their culinary and ethnobotanical uses by the African diaspora. The 12 AIVs were selected from African reference works and preliminary reports of their presence in the Americas. Given the importance of each of these vegetables in African diets, our working hypothesis was that the culinary traditions associated with these species would be continued in tropical America by Afro-descendant communities. However, a review of the historical and contemporary literature, and consultation with scholars, shows that the culinary uses of most of these vegetables have been gradually lost. Two noteworthy exceptions include okra (Abelmoschus esculentus) and callaloo (Amaranthus viridis), although the latter is not the species used in Africa and callaloo has only risen to prominence in Jamaica since the 1960s. Nine of the 12 AIVs found refuge in the African- derived religions Candomblé and Santería, where they remain ritually important. In speculating why these AIVs did not survive in the diets of the New World African diaspora, one has to contemplate the sociocultural, economic, and environmental forces that have shaped—and continue to shape—these foodways and cuisines since the Atlantic slave trade. -

In many countries, regional divisions have been primarily based on cultural or linguistic pattems, and the greatest challenge has been 10 achieve balanced development for all ethnic groups. The available etbnic maps for Peru are based on language. They show spheres of influence for various languages (pesce 1969) but lack a quantitative basis and do not indicate the numerically pre- ponderant languages and cultures. They also do not distinguish between cultural groups that are not indigenous language speakers. This report, by using quantitative data of language and ethnicity as found in various censuses, will attempt to map the cultural regions of Peru. Language as a Cultural Indicator There are three advantages to using language as a point of departure in mapping and defining culture regions: (1) language is strongly implicated in the transmission of culture and is thus linked to many nonlinguistic cultural traits, such as folklore, religion, and music; (2) language frontiers between groups impede cultural transmission and many times coincide with other cultural boundaries, including agricultural and housing traits; (3) language is a cultural trait that is relatively stable and easy 10 determine through census information. -

Bedini and Dr. Bonnie Canziani. 91pp. The purpose of this study was to explore how demographic and motivational factors influence tea-drinking behaviors, tea cultural perceptions, and expectations on tea tourism. Few research studies on tea tourism have been published in English literatures. This study reviewed related literatures in both English and Chinese, to integrate the body of knowledge of tea culture and tourism, contribute to understanding and transmission of tea cultures, and promote communications between English and Chinese tea tourism studies. The researcher surveyed a total of 246 university faculty in U.S, China and Taiwan, using convenience sampling methods. The survey contained questions in four categories: tea drinking behaviors, tea cultural perceptions, attitudes, motivations and expectations of tea tourism, and demographics including country of residence, age, gender, education, annual income, and self-reported cultural backgrounds. Data collection procedure was conducted through an online surveying tool, Qualtrics, using web-based surveying methodology. Data were analyzed through Statistical Package for the Social Sciences© version 18.0. This study had five major findings in: (a) tea drinking behavioral profile, (b) the relation between demographic factors and tea drinking behaviors, (c) the relationship between tea drinking behaviors and tea culture, (d) the influence
