Come, look, try and taste the varied, delicious menu that Salamanca has prepared for you. 2 His Majesty the Iberian Pig The Iberian pig is a unique, fascinating breed of un- questionable quality, which puts the Salamanca pro- vince as an international benchmark. Its pedigree, along with the long walks in search for food, are responsible for the trademark infiltrated fat, which results in its flavour, its aroma and juici- ness, as well as its health benefits, since this fat is high in oleic acids. This pig lives free in the Salamanca dehesa, an id- yllic environment where, between October and February, it enjoys the best, final fattening seasons when it is fed only with acorns. 3 Guijuelo and the neighbouring counties Talking about Iberian produce is talking about Guijuelo, a unique place with a climate and conditions that are ideal for curing hams of all sorts as well as cold cuts. The long, cold, dry winters, along with its moody winds and humid conditions, mean that less salt is required for the curing process. This enables their flavours, aromas and uniqueness to be expressed in a much more natural way. And although Guijuelo is the heart of the pork product manufacturing in Salamanca, the actual production area includes other municipalities, some as well known as La Alberca, Béjar, Candelario or San Martín del Castañar. -

Abadal Picapoll 2008 Winery: Bodegas Masies D’Avinyo Region: Pla de Bages D.O. Grapes: 100% Picapoll Winery: Masies D’Avinyo is leading the charge of quality wine production from this, one of the oldest vine growing regions in the world, el Bages, named for Bacchus the Roman god of wine. The vines are cultivated on carefully structured terraces, influenced by a Continental- Mediterranean climate, with low rainfall. This leads to highly structured wines that maintain a freshness and delicacy rarely found in such rich wines. Vineyards are planted with native and French grapes, Cabernet Sauvignon, Merlot, Syrah, Cabernet Franc, Chardonnay and Mando and Picapoll. A strong technical background is used in vineyard management, for example, specific total leaf area per mass of grapes to assure ripeness. This is combined with a detailed interaction with each vintage. In warm vintages, new oak is purchased with lower levels of toast, in cooler vintages barrels with higher levels of toast are used. A combination of French, Hungarian and American oak is used in aging the wines. Wine: This wine issues from a regeneration of indigenous and autochthonous grapes lead by Masies d’Avinyo in Pla de Bages. Picapoll, Trepat, Sumoll and other local grapes are being replanted or grafted to existing root- stocks. While often confused with Picpoul, this grape has been grown in the area since Roman times, being referenced in the writings of Pliny the Elder. Picapoll berries are small, oval and thick-skinned; though there are larger berried clones used as a table grape. The grape requires a lot of attention in the vineyard as bunches tend to grow smaller, “shoulder” clusters which need to be pruned off for proper ripening. -

D.O. Dominio De Valdepusa
-D.O. Dominio de Valdepusa Dominio de Valdepusa, located in the Toledo municipality of Malpica de Tajo, has belonged to Carlos Falcó’s, the Marques de Griñón’s, family since 1292. In 2002 this property was granted the first ‘pago’ Denomination of Origin by the Spanish State. In 2003 the European Union convalidated this recognition, making Dominio de Valdepusa the first Spanish estate to receive a recognition only previously obtained by legendary vineyards such as Romanée Conti (Burgundy) or Sassicaia (Toscana). Dominio de Valdepusa is a unique vineyard occupying 52ha, including the original vineyard of (14 ha) Cabernet Sauvignon which planted in 1974. Since 1991, this has been progressively increased with Syrah and Petit Verdot varieties, both pioneers in Spain, and Graciano. The main house and winery of Dominio de Valdepusa are set in historical 18th century buildings. The old Casa de Labor (Workhouse) acts as a visit centre today, includes an avant-garde design kitchen, 4 dining rooms, and tasting rooms with a joint capacity of up to 120 people, likewise Dominio management offices. The central courtyard of classic Toledan architecture like the rest of the winery houses a grape press inaugurated by the Prince of Asturias and Duke and Duchess of Lugo, where visitors can experience traditional grape pressing in the grape-picking season. The vineyard landscape includes large iberian oaks (Quercus Ilex); its paths are lined with cypresses, rosebushes and rows of lavender. Between the house and winery a botanic garden has been planted since 2000 with over 300 species, mainly Mediterranean of origin. Their current production of 350,000 bottles, advised by the prestigious Bordeaux oenologist Michel Rolland, centres exclusively on red wines produced for grapes from our own vineyards. -

El senador del Grupo Popular por Ourense, Miguel Viso, ha reclamado hoy al Gobierno, durante el debate de una moción del PP, que establezca campañas promocionales para fomentar la cultura del vino y desarrollar plataformas telemáticas de comercialización y que solicite a la Comisión Europea una financiación extra, más allá de los Programas Nacionales de Apoyo al Sector Vitivinícola Español (PASVE). La iniciativa del PP, debatida en la Comisión de Agricultura, Pesca y Alimentación y rechazada por los votos en contra del PSOE, también pide al Ejecutivo que apruebe un Plan Estratégico para la Internacionalización del Sector Vitivinícola, comprometiendo los recursos económicos necesarios para el apoyo de las exportaciones y la apertura de nuevos mercados, tanto en terceros países como en los países comunitarios. El último punto de la moción solicita “desarrollar acciones dirigidas a potenciar el consumo interno, garantizando la promoción interior en el marco de la Organización Común de Mercados (OCM), incluyendo el apoyo al enoturismo”. -

Adegas Valmiñor is located in the Valley O Rosal within the D.O. Rías Baixas. Rias Baixas is in the province of Pontevedra, south of the province of A Coruña, in Galicia, Spain. The Rías Baixas D.O., founded in 1980, is divided into five sub-zones, four in the province of Pontevedra and one in A Coruña: Val do Salnés Val do Salnés is located on the lower reaches of the river Umia and centered on the town of Cambados. BODEGAS PONCE BODEGAS PONCE P.F. Manchuela, a lesser-known Spanish wine region that is inland from Valencia, specializes in the Bobal grape variety, which is known for its thick skins and rusticity. And while there are very few defenders of this region and even fewer winemakers that are dedicated to this varietal, Juan Antonio Ponce stands alone as the leader of Manchuela and as the master of the Bobal grape. De ahí que hablemos de un potencial aromático específico para las variedades de vid cultivadas en Galicia. A analizar este potencial se dedica buena parte de este libro, cuyos contenidos giran también alrededor del sector vitivinícola gallego en sentido amplio, su historia y el origen y parentescos de dichas variedades.
