300 Trafalgar Street built 1880’s for J.W. Tatton the Dentist John William Tatton had set himself up as a chemist and dentist in a building on Haven Road, near Saltwater Creek Bridge, where he had his druggist store and laboratory. Tatton was one of the first dentists in the country to light his rooms with coal gas, and to use it as a source of energy in manufacturing dentures and bridges. Tatton also succeeded in making his own nitrous oxide, more commonly known as laughing gas, in the 1870’s, well before it came into common usage. JW Tatton and Son moved to the corner of Selwyn Place and Trafalgar Street. In 1888, they demolished their surgery and built themselves a fine new building, as noted in the Colonist of 29 November 1888: 'On account of the increase in business at the dentistry establishment of Messrs Tatton and Son, of Trafalgar Street, these gentlemen have decided to pull down their present building and erect a much larger one. The frontage to Trafalgar Street will be 37 feet, and to Selwyn Place 80 feet for the main building. The lower portion will consist of two large waiting rooms, surgery and workshops and a spacious hall'. Waimea County Council acquired the building in 1920 and built the rear masonry section as a County Boardroom. The building still stands today and is one of the few buildings erected in that era to continue to grace Trafalgar Street - just now without any dentist’s drills! Our cocktail menu is broken down into 4 parts. 1. Tiki – taking the classic tiki cocktails of the 40 and 60’s, sweet, boozy and fruit packed drinks and sharing them with you with a more refined, modern approach. 2. Classic – If it is not broken, don’t fix it, unless you can improve it… Original and a few modern twists on some of our favourite all-time classics dating back to the early 1900’s. 3. From the Vault – some of our favourite cocktails that really put our first born - Cod & Lobster Brasserie on the map. We won plenty of awards and recognition with these bad boys! 4. Negroni – bitter | sweet | strong We believe the Negroni and our twists upon the original need their very own page. TIKI Missionary’s Downfall 18 An iconic tiki classic invented by Don the Beachcomber in the 1940’s. Havana Club 3 Year Old White Rum, Crème de Pêche, fresh lime juice, mint & pineapple juice. Saturn 18 The perfect gin tiki cocktail! Invented by California bartender J. “Popo” Galsini for the International Bartender’s Association World Championship in 1967 - a competition his drink ultimately won! Beefeater Gin, orgeat almond syrup, falernum syrup, fresh lemon juice & passionfruit puree. Shaken and served up. Mai Tai 18 Our recipe of this Trader Vic’s tiki classic has been kept very true to the original. Havana Especial Rum, orgeat almond syrup, lime juice, orange liqueur; shaken, poured over crushed ice with a float of Gosling’s Black Seal Rum. Red Snapper 20 The gin version of a Bloody Mary, our variant makes use of wasabi for heat! Pickering’s Original 1947 Gin, Tabasco, Worcestershire sauce, wasabi, black pepper, lemon juice, tomato juice, Angostura Bitters and salt. Stirred and served on the rocks. Epic optional prawn and pickle garnish 4 Cucumber & Ginger Gimlet 20 A twist on the classic gin & juice cocktail; Hendricks Gin, fresh lime juice, Kings Ginger Liqueur, housemade ginger & juniper syrup, cucumber bitters. Served straight up with a cucumber garnish. Rhubarb Sour 18 A little cloud of citrus heaven. Warner Edward’s Rhubarb Gin shaken with fresh lemon juice, simple syrup & egg white. A very regal gin which uses a variety of rhubarb originally grown in Queen Victoria's garden. TIKI Dr Tiki’s Penicillin 20 No real doctor will prescribe this, but our in house Dr Tiki shakes up Chivas Regal blended Scotch with honey, ginger syrup, lemon, egg whites and a float of Smokehead ‘Sherry Bomb’ Islay whisky Tradewinds 18 If the wind is right, you can sail away and find tranquillity with this Jamaican drink from the 1970’s Coconut cream, apricot liquor, lemon juice and London dry gin. Dirty Banana 20 Our friend Miss Lola used to drink these sat upon the beach in Hawaii, now with travel restrictions, we have brought her holiday favourite to our bar. The Reid Vodka, Crème de cacao white & dark, banana, cream, cinnamon bitters & lemon bitters. Zombie 24 The Zombie is a cocktail made of fruit juices, liqueurs, and various rums. Invented by Donn Beach at his Hollywood Don the Beachcomber restaurant in 1934. Popularized on the East Coast soon afterwards at the 1939 New York World's Fair. Now available in little old Nelsons’ Mama Cod rum, rum, rum and more rum in a cup with some other ingredients to help hide the vast amounts of rum. Miss Lola 18 When little Miss Lola spent a night at the beach and woke in the morning, she was blue from head to toe, this was the drink that brought her back to her normal self. However, she never found her flip flops again…. White rum, pineapple liquor, Blue Curacao, lime juice, egg white The Pineapple Extraction 20 Rumour has it, the espresso martini was illegally taken from this drink. This is the age old original from an old beach bar in Golden Bay 1939. Sailor Jerry spiced rum, Crème de cacao dark, passionfruit puree, pineapple juice, double espresso, cinnamon bitters. Blueberry Chi-Chi 18 The drink that cost Pete & Nick a World title! After bungy-jumping and running up an interminable flight of stairs, Pete & Nick opened a mystery box of ingredients to find all the ingredients for a Chi-Chi, the vodka version of the Pina Colada. Unfortunately, their best effort didn’t score well and they lost the title. 42below Vodka, coconut syrup, blueberry syrup, lemon and lime syrup. CLASSIC The Breakfast Plum Martini 18 Mama Cod herself created this plum jam twist on the classic, Beefeater London Dry Gin, lemon juice, plum jam and triple sec. Served up with a twist. New York Sour 18 A twist on a Whisky Sour, the NY Sour was (confusingly) invented in Chicago! Chivas Blended Scotch Whisky, lemon juice, simple syrup & egg white, shaken & served on the rocks with a float of red wine. White Lady 18 While it's disputed who first came up with the White Lady, we're happy to go with one of our favourites; Harry MacElhone in 1929 at Harry's New York Bar, Paris. Beefeater London Dry Gin, Cointreau Orange Liqueur, lemon juice & egg white. Shaken & served up. French 77 22 An elderflower variation on the French 75. Beefeater London Dry Gin, St-Germain Elderflower Liqueur & lemon juice is shaken and topped with Perrier-Jouët Champagne. El Presidente 18 A Cuban classic from the 1920's named in honour of President Gerardo Machado. Bacardi Superior White Rum, blanc vermouth, Grand Marnier Orange Cognac, Crawley’s Grenadine & Angostura Bitters. Stirred & served up with a cherry. Aviation 18 One of the last great cocktails invented before prohibition. It’s mentioned in several bartender books such as the Savoy Cocktail book of 1930. Bulldog Gin, Crème de Violette, Maraschino Liqueur & lemon juice. Shaken & served up with a twist. The Last Word 20 Prohibition-era drink, invented at the Detroit Athletic Club. Audrey Saunders of NY's Pegu Club describes it as “perfectly balanced: A little sour, a little sweet, a little pungent”. Green Chartreuse, London Dry Gin, lime juice & Luxardo Maraschino Liqueur, stirred & served up. FROM THE VAULT Nelson’s Blood 20 Pusser’s Navy Rum, lime juice & orange bitters (for the scurvy), Solerno Blood Orange Liqueur, cranberry juice & grapefruit shrub (for the blood); shaken and poured on the rocks. A hail to our Lord Nelson. Sloe Summer Daze 20 A refreshing summer drink, perfect in the hot sun or on a long, warm evening. Hayman’s sloe gin, Beefeater London Dry Gin, St-Germain Elderflower Liqueur & lemon juice; shaken and served tall on the rocks, topped up with Fentimans Rose Lemonade. Perfectly Smoked Manhattan 20 Cod & Lobster's signature drink and made with a little bit of theatre! Old Forester Bourbon, Rosso Vermouth, a splash of Maraska Maraschino Liqueur, 3 dashes of Angostura Bitters and maraschino syrup. Stirred and then smoked with apple wood in a crystal decanter. Served straight up with a maraschino cherry. Pharmaceutical Stimulant 18 Our house version of the famous Espresso Martini. Patron XO Café Tequila, Wyborowa Vodka & chilled espresso. Lavender Margarita 18 A real house favourite! Olmeca Reposado Tequila, lime juice & housemade lavender syrup shaken & served straight up. Served with a piece of Nana Cods lavender. Chocolate & Raspberry Martini 18 Chocolate, chocolate and more chocolate. Too much chocolate is not a thing, right?! Raspberry vodka, crème de cacao white chocolate liquor, Mozart Milk Chocolate Liqueur. Shaken & served up. Professor Plum in the Ballroom with a Broken Heart 22 Diplomatico Reserva Exclusiva Rum, Cynar, Aperol, housemade plum shrub, lime juice & house made cinnamon bitters. Shaken & served up with a broken heart. THE NEGRONI MENU While the drink's origins are unknown, the most widely reported account is that it was first mixed in Florence, Italy, in 1919, at Caffè Casoni (formerly Caffè Giacosa), located on Via de' Tornabuoni and now called Caffè Roberto Cavalli. Count Camillo Negroni concocted it by asking the bartender, Fosco Scarselli, to strengthen his favorite cocktail, the Americano, by adding gin rather than the normal soda water.
