The 4th edition and revised version was developed by the main author with assistance of Tanay Prabhu, BS Student in Biological Sciences, Drexel University, Philadelphia. The previous versions of the tool were developed with the assistance of graduate students Sajida Arsiwala, MS, RD and Bhavna Subhedar, MS and Dr. Kathryn Sucher, Sc.D, RD, Professor Emeritus, Department of Nutrition, Food Science and Packaging at San Jose State University. About the Author Ashwini Wagle, MS, RD is an Associate Professor and Director for the Didactic Program in Dietetics (DPD) in the Department of Nutrition, Food Science and Packaging at San Jose State University. Ashwini Wagle earned her MS in Food and Nutrition from Indiana University of Pennsylvania (IUP) in 93'and is currently a doctoral student in Educational Leadership (Ed.D) at University of New England. She comes to San Jose State University with over ten year experience as a registered dietitian (RD) in several skilled nursing facilities and acute care hospitals in the San Francisco Bay Area. Ashwini Wagle is also involved with several on-campus and off-campus organizations and serves on the committees for organizations such as the South Asian Heart Center at El Camino Hospital, Center for Healthy Aging in Multicultural Populations (CHAMP), Education Committee of the California Dietetic Association (CDA), San Jose Peninsula District of California Dietetic Association (SJPD), Cal-Pro Net Center. -

S outheast A sian Flavors - A dventures in C ooking the Foods of Thailand, Vietnam, M alaysia & S ingapore Crisp Pulled Flatbread Roti Canai (Malaysia) or Roti Paratha (Singapore) uttery, crisp-edged, yet possessed of distinctive elasticity and chew, this Malaysian descendant of Paratha Bbread from southern India takes some time to prepare, but is a fun project that’s well worth the commitment. It’s invariably served with a meat or vegetable curry stew for dipping (pg. 290) although my nephews Hunter and Garrett like dipping into granulated sugar. This same dough can be stuffed with all sorts of fillings. For simple versions an egg is cracked in center, then some add sliced chilies and onion, and a very common version is called Murtabak when a dry curry is used a hearty filling, making it a complete meal. When fillings like eggs or lentil puree are folded in, they are stretched as for plain roti, and then topped with a flavorful mixture, folded in from all four sides, and then transferred to griddle. The Thais use a similar dough to create a sweet snack with sliced bananas drizzled with condensed milk. It takes some practice to master the stretching, pulling and folding that gives this bread its signature texture. A standing mixer can be used to eliminate some of the work of hand-mixing the dough. Use the “hook” attachment for best results. Timing Note: This dough needs at least six hours to rest but can be made the day before. -

Some flours will produce a heavy, compact bread, while others will produce a lighter bread. Some flours may cause a full- bodied or bitter flavor while others present a nutty, woodsy flavor. Follow your recipe for best results. With practice you can begin to substitute flours with good success. All-purpose flouris a blend of hard and soft wheat. Self-rising flouris simply all-purpose flour pre-blended with baking powder and salt. Bread flour is made from hard wheat, which has a high protein content. It is the preferred flour for making bread. Enriched flourhas the B-vitamins and iron, that are lost during milling, added back to the flour. Whole-wheat flouris milled from the whole kernel. When used alone, whole-wheat flour produces a heavy, compact, dark bread. The germ and bran cut the developing gluten strands. Whole-wheat bread flouris ground from hard wheat and has a higher gluten content. To create your own whole wheat bread flour, add one tablespoon gluten to each cup of whole-wheat flour. Graham flourresembles whole wheat flour in taste but has less protein. Durum flouris made from the hardest of wheats. A bread made entirely from durum wheat is inedible. Semolina flouris durum flour minus the bran and wheat germ. It is usually used as a pasta flour but can be used in breads. Kamut flouris a relative of durum wheat. It is high in protein but low in gluten, so it must be combined with a higher gluten flour to produce an acceptable bread. -
