A carefully blended Traditional Method designed to highlight the 750 mL low acid, complex character of the Russet - a thoughtful contrast to 8.4% ABV our typically higher-acid offerings. The creaminess from secondary 0.5% RS fermentation combined with a slight dosage gives weight to this cider, 5.38 TA complimenting the honey aromas of the Margil and . This 3.95 pH 2017 vintage began with a partial ferment of the Russets before adding 210 Cases produced the bittersweets, extending the process by 50%, and greatly slowing fermentation.

Tasting Notes Dry, Traditional Method. Geneva Russet Golden Russet Begins with honeyed floral notes, buttered popcorn, and campfire on the Margil nose, followed by an evolving palate of dirty honey, fresh cut grass, smoked gouda and crème fraiche.
