W01 | Workshop 1: New Containers, Closures & Bottling Issues By 2000, we learned to look outside the . Now, it’s time to look outside the glass ; new eco- friendly containers are now in use, including kegged wine on tap. Panels of winemakers will discuss the pros and cons of new containers, and production and marketing issues with kegging wine and cider. New information will be presented on both old and new closures, and two consecutive panels will address QC protocols and managing technical challenges on the .

W01a | New Containers #1: Astrapouch, Cans & PET Tim Benedict & Steve DiFrancesco Tim will outline his experience using cans and PET instead of glass for packaging wine, while Steve discusses his experience using the Astrapouch for specific wines.

W01b | New Containers #2: Keg Wine Production & Marketing Issues Tim Benedict, Tamara Bredeson & Curt Harris Kegging is increasingly popular for both wine and cider. Tim and Curt will discuss keg wine while Tami discusses keg cider and cost considerations for that decision.

W01c | Updates on Old and New Closures Kellyeanne Dove, Marc Kauffman & Peter Weber Even the oldest closure, cork, has new testing protocols for TCA taint at the source, which Peter will explain. Kellyanne will discuss one of the newest closures, the glass closure Vinoseal, and Marc will discuss an eco-friendly alternative to traditional metal closures.

W01d | Pre-Bottling QC Protocols Tom Payette & Chris Stamp For a complex process like bottling, it’s good to have quality control protocols to guide you. Tom and Chris will share their tips for maximizing trouble-free bottling, and all the factors that need to be evaluated before you press the start button.

W01e | Overcoming Technical Challenges in Bottling Jonathan Bellerose, Aki Maris & Matteo Meglioli Jonathan will cover common bottle, capping and potential closure defects and how to spot them, as well as increasing line efficiency with common set-up standards thus proving beneficial to users. Aki and Matteo will summarize common bottling line challenges wineries experience, and how to prevent or manage them. These include industry best practices on wine preparation for a bottling run, with special focus on methods of avoiding oxygen intake during wine filtration and bottling.

W02 | Workshop 2: Fruit Wine, Cider and Mead The popularity of these three sister beverages to wine continues to grow by leaps and bounds, but they have a number of technical challenges that winemakers need to understand for optimal quality. A panel on fruit wine enology issues will be followed by dedicated winemaker roundtable panels on fruit wine, mead and cider, featuring silver and gold medal winners from the Drink Outside the Grape competition. The final panel focuses on raising the bar for quality and market perception for each of these categories.

W02a | Fruit Wine Enology Issues Dr. Richard Carey, Dr. Joseph Fiola & Dominic Rivard Joe and Dominic will summarize the major challenges facing fruit winemakers and how to address them. Richard will speak on stabilizing wines that have residual sugar with Velcorin as an alternative to potassium sorbate.

W02b | Fruit Winemaker Roundtable Shane Christ & Mike Williams Shane and Mike, top medal winners for fruit wines in the Drink Outside the Grape competition, will pour and discuss their winning wines: apple, spiced apple and a lemon-strawberry wine blend.

W02c | Mead Winemaker Roundtable Ken Hardcastle & Dominic Rivard Ken and Dominic will pour and discuss three of the top medal-winning from the Drink Outside the Grape competition, a dry maple mead and two melomels from Saskatchewan, Haskap Haven and Strawberry Splash from Prairie Bee meadery.

W02d | Cider Winemaker Roundtable Tamara Bredeson, Ken Hardcastle, Scott Katsma & Dominic Rivard Top ciders in various styles from across North America in the Drink Outside the Grape competition will be presented and discussed by Dominic (Nova Scotia), Scott (WA), Tami Bredeson (MN) and Ken (NH).

W02e | Raising the Bar: Positioning Fruit Wine, Cider and Mead as High Quality, Worthwhile Products Dr. Joseph Fiola, Bob Manley & Dominic Rivard Having earlier examined common winemaking challenges for fruit wines, a panel with Joe, Bob and Dominic will fast-forward the conversation to the actual marketing of the finished products. They will explore and discuss marketing and promotion strategies for positioning fruit wine, cider and mead as high quality, worthwhile products, overcoming wine snobbery without losing customers.

E02 | Lab Focus for Small Wineries Tom Payette Small winery or larger, we all have to make decisions regarding which tests we run in our winery laboratory. Consider how to evaluate the time required to run tests, the knowledge you need to run tests, interpreting results, assessing the accuracy of results, and understanding how to act on test results. Simplified easy-to-understand chemistry presented in this session will help you decide what you can do in your own lab, when to do it, and how.

E03 | Oak Focus: Barrel Alternatives Peter Bell, Tim Benedict & J.L. Groux Peter, Tim and J.L. will pour and discuss a control vs. the same wine aged with an oak barrel alternative.

E04 | What the YAN is Going on in My Fermentation? Denise Gardner Many winemakers have found an improvement in wine quality when they determine YAN and alter winemaking production decisions based on its value. Denise will focus on breaking down outdated nitrogen supplementation routines, review the importance of treating fermentations specific to the fruit’s YAN content, and provide suggestions for supplementation when dealing with low or high YAN fermentations.

Jenna, Chuck and Chris, all award-winning lemberger/blaufränkisch winemakers, will pour their own wines and provide insight to their success with this varietal.

E06 | New Technology in Winery Sanitation Nichola Hall & John McClain The wine industry is unique due to the range of soils it has to contend with. By implementing appropriate cleaning protocols, and using suitable cleaning agents, offending material can be removed, leaving the surface ready for sanitation. Nichola will discuss. John will explain the new applications for ozone cleaning in wineries that have emerged since his last presentation in 2012.

E07 | Improvements to Existing Lab Analyses: Volatile Acidity by Cash Still & the Ripper Method for Measuring Free SO2 Barry Gump, PhD In the analysis for acetic acid using a Cash still, there are a variety of published methods suggesting the collection of various amounts of distillate for titration. The analytical procedures for both VA and SO2 analyses will be described, along with an explanation of the calculations required for obtaining results.

ENOLOGY / VITICULTURE EV01 | Crafting Fine Red Blends in Cool Climates Peter Becraft, JL Groux, Vinny Aliperti & Luke Steele This in-depth session features four speakers from cool climate sites. The first two speakers will pour and discuss a meritage blend; Peter will do the same with a /lemberger blend; and Aliperti will pour a “big blend” with 43% , 3 red grapes, and lemberger/bläufrankisch. All speakers will include viticultural practices and site circumstances, along with winemaking stylistic goals, processes and managing both from one to the next.

EV02 | Old but Worthwhile Cold-Hardy Red Hybrids Howard Bursen, Steve Casscles & Peter Oldak There are many established, cold-hardy red hybrids that despite being less well-known than others, produce fine wines. The speakers will discuss and pour two French hybrids (Landot Noir and Burdin) and a Swenson hybrid (St. Croix).

EV03 | Enhancing Varietal and Aromatic Compounds from Vine to Wine Russell Moss Russell will explore some of the most important varietal aromas and how viticulturists can use specific practices to manipulate their concentrations. A vine-to-wine management strategy for thiols, tropical fruit aromas, will also be discussed.

EV04 | Aromella and Arandell: the Newest Cornell Hybrids Anna Katharine Mansfield, PhD Aromella and Arandell are the latest introductions from a grape breeding program stretching back to 1906. This session will cover cultural and production practices for both cultivars, and should be of interest to growers in cool to cold climates, or those looking for lower-input viticulture.

EV05 | Five-Year SCRI Grant Results: Improved Grape & Wine Quality in a Challenging Environment Anna Katharine Mansfield, PhD & Tony Wolf, PhD Anna Katherine and Tony will discuss some of the outputs and outcomes of this comprehensive project which involved enologists, viticulturists and stakeholders in seven states. An Executive Summary will be provided to attendees. Additionally, St. Croix will be poured in control vs. tannin addition treatment to illustrate the effective tannin additions for red hybrid fermentations.

VITICULTURE V01 | Fruit Zone Leaf Removal in Cabernet Franc: Impacts on Yield and Fruit Composition Cain Hickey Fruit-zone leaf thinning has been researched extensively because it can directly change the fruit- zone microclimate and, thus, fruit composition. Cain will discuss the impacts of leaf thinning at an earlier stage and at a greater magnitude and how this would alter cabernet franc crop yield and/or fruit composition.

V02 | Red Blotch Virus Update Marc Fuchs, Margaret Kelly & Dennis Rak Marc will present the latest research results and diagnostics available for growers. Dennis will explain what clean plant controls he and others in the nursery business are employing, and Margaret will explain how her office, the NY Department of Agriculture, is working with Cornell and the nursery industry.

V03 | Send in the (Riesling) Clones Fred Merwath & Bruce Murray Bruce and Fred, both on Seneca Lake, NY will discuss some of the specific riesling clones they use, with a focus on viticultural characteristics. Sample wines will be poured and wine character will also be discussed.

V04 | Effects of Crop Load and Hang Time on Wine Aroma Compounds and Sensory Properties Dr. Andrew Reynolds One of the many myths of viticulture is the assumption that any reduction in crop level in any variety will result in a significant increase in wine quality. Andrew will include data over a 30-year period from many winegrowing regions in North America, but particularly Ontario, British Columbia, and California. The focus will be the effects of crop level on several grape varieties, with abundant evidence to show that in many cases, reducing crop does not improve fruit composition and wine quality.

V05 | Nitrogen Management in Cover-Cropped Vineyards Russell Moss Cover cropping is a nearly ubiquitous practice in the Eastern U.S. Cover crops often compete with the vine for nitrogen. Soil applications of nitrogenous fertilizer are often not very effective at increasing must nitrogen status. Therefore, many wineries have to ameliorate the low nitrogen concentrations of musts with the addition of nutrients. Russell will explore the dynamics of nitrogen in the and practical management strategies when it comes to this incredibly important nutrient.
