Feagin Committee Member William Alexander McIntosh Head of Department, Jane Sell August 2016 Major Subject: Sociology Copyright 2016 Stéphanie Reymond ABSTRACT The vegetarian/vegan movement, as all social movements, is impacted by systemic issues, here, the issues of race, class, and gender. This study begins with an analysis of the relationships between these systemic issues and vegetarianism/veganism, by means of an examination of twenty well-known vegetarians/vegans. The twenty were selected on the basis both of their importance to the movement, and on the amount of material written about them. My findings are first, concerning race, that there was a greater number of non- Hispanic Whites than Blacks, Latinos/as, or Asians among the twenty vegetarians/vegans, a finding consistent with the literature on the subject. Secondly, in terms of social class, the selection of twenty vegetarians/vegans had more individuals from the upper-middle and lower-upper classes, than from the lower social classes. Finally, concerning gender, more men than women were included in the list of twenty. This latter finding is not consistent with the literature which indicates that more women than men are vegetarian/vegan, this is probably due to the fact that, generally speaking, women tend to be under-represented in the mass media. The second part of this study is a micro-analysis of the discourse of five of the twenty vegetarians/vegans. Their motivations for becoming vegetarian/vegan are discussed, in particular their concern for animal welfare and human health. The analysis of the five also demonstrated that their paths to becoming vegetarian/vegan rarely were direct and that most experienced some back-and-forth movements in the process of their ii conversions. Based on the accounts of the five, factors facilitating the conversion to vegetarianism/veganism included the importance of having a strong vegetarian/vegan social network, of having the support of close friends and family, and the important role that media plays in the diffusion of the movement. On the other hand, factors keeping people from becoming or from staying vegetarian/vegan are presented, such as negative stereotypes about veganism, as well as the absence of the link between meat about to be eaten and the fact that this meat once was a living animal. iii ACKNOWLEDGEMENTS I would like to express my sincere gratitude to my mentor and Committee Co- Chair, Professor Edward Murguia, for his continuous support, guidance, and encouragement throughout the course of this research. And speciesism is wrong because, like racism, sexism, homophobia, anti- Semitism, classism, and all other forms of human discrimination, speciesism involves violence inflicted on members of the moral community where that infliction of violence cannot be morally justified. Gary L. Francione, animal rights advocate and Distinguished Professor of Law, Rutgers School of Law-Newark. This research is a comprehensive sociological analysis of vegetarianism/veganism. In-depth studies of this movement and the dimensions I examine have been non-existent. Little is known about how and why individuals become vegetarian/vegan. My intent is to go beyond the idea of vegetarianism/veganism as being only a diet consisting of not eating and not wearing animal products. First, I will define and detail the history of the vegetarian/vegan movement. I will demonstrate that vegetarianism/veganism is a social movement embedded in a larger system that is sexist, racist, and classist. Social movements are defined as “a form of political association between persons who have at least a minimal sense of themselves as connected to others in common purpose and who come together across an extended period of time to effect social change in the name of that purpose” (James and van Seeters 2014). We will see that vegetarians/vegans, because they share a common identity and because they organize in associations for the purpose of changing mainstream views on vegetarianism/veganism, are engaged in a social movement. We will see that the systemic issues of race, class, and gender are interconnected, that they impact the vegetarian/vegan movement, and that they influence those wanting to access a vegetarian/vegan diet. To do this, I will review the literature linking race/class/ gender to vegetarianism/veganism. 1 Next, I will compare the biographies of twenty well-known vegetarians/vegans, analyzing them to see if they fit the literature on the connections between vegetarianism/veganism and race, class, and gender. Thus, I will not only look at systemic relationships, but I will look at relationships at the individual level as well. Further, I select five of the twenty accounts of vegetarians/vegans, and thoroughly analyze them to obtain even more information about their paths to vegetarianism/veganism and the back and forth movements they may have experienced in their conversions. Based on these five accounts, I explore the factors contributing to the diffusion of vegetarianism/veganism. Elements such as the

In setting parameters for what can and cannot easily be discussed, domi- nant discourses also help frame understanding. Discourses relating to veganism are therefore presented as contravening commonsense, because they fall outside readily understood meat-eating discourses. Newspapers tend to discredit veganism through ridicule, or as being difficult or impossible to maintain in practice. Vegans are variously stereotyped as ascetics, faddists, sentimentalists, or in some cases, hostile extremists. The overall effect is of a derogatory portrayal of vegans and veganism that we interpret as ‘vegaphobia’. We interpret derogatory discourses of veganism in UK national newspapers as evidence of the cultural reproduction of speciesism, through which veganism is dissociated from its connection with debates concerning nonhuman animals’ rights or liberation. This is problematic in three, interrelated, respects. First, it empirically misrepresents the experience of veganism, and thereby marginalizes vegans.     FACT SHEET REVIEW OF THE CHINA STUDY By Team, General Conference Nutrition Council In 1905 Ellen White described the diet our Creator chose for us as a balanced plant-based diet including foods such as grains, fruit and vegetables, and nuts (1). Such a diet provides physical and mental vigor and endurance. She also recognized that such a diet may need to be adjusted according to the season, the climate, occupation, individual tolerance, and what foods are locally available (2). The General Conference Nutrition Council (GCNC) therefore recommends the consumption of a balanced vegetarian diet consisting of a rich variety of plant-based foods. Wherever possible those should be whole foods. Thousands of peer-reviewed research papers have been published over the last seven decades validating a balanced vegetarian eating plan. With so much support for our advocacy of vegetarian nutrition we have no need to fortify our well-founded position with popular anecdotal information or flawed science just because it agrees with what we believe. The methods used to arrive at a conclusion are very important as they determine the validity of the conclusion. We must demonstrate careful, transparent integrity at every turn in formulating a sound rationale to support our health message. It is with this in mind that we have carefully reviewed the book, The China Study (3). This book, published in 2004, was written by T. Colin Campbell, PhD, an emeritus professor of Nutritional Biochemistry at Cornell University and the author of over 300 research papers. In it Campbell describes his personal journey to a plants-only diet.

Vegetarianism, Religion, and the State in Eighteenth-Century Western India Divya Cherian Mellon Postdoctoral Fellow Rutgers Center for Historical Analysis Scholarly discussions of the place of non-human animals in Hindu and Jain ethics, ritual, and everyday life generally place the principle of ahimsā or non-injury at the very center. An adherence to non-injury is an ethical injunction imposed by these two major South Asian religions (in addition to Buddhism) upon their practitioners. In principle, the Jain, Buddhist, and Vaishnav insistence upon non-injury is a universal one, that is, their ethical codes do not make a distinction between human and non-human animals as objects of compassion and non-injury. At the same time, Hindu and Jain attitudes towards animals are complex, even inconsistent. While in certain respects, neither Hindu nor Jain thought draws a distinction between the jiv (soul) of a human and a non-human, both religions do in other contexts differentiate among and hierarchize different types of beings. Taking differences in the potential to attain liberation from the cycle of birth-death-rebirth as the metric, both Jainism and Hinduism place humans at the pinnacle of a hierarchical conception of life forms. Despite this complexity in their approach to the distinction between humans and animals, the law codes of Jainism and several strands of Hinduism nonetheless enjoin upon their followers an adherence to non-injury towards all life forms. This however was not always the case.

    Baby Boomer Vegetarians By Stephen F. Barnes, Ph.D. According to some sources, vegetarianism is on a modest uptick or at least holding its own, with about 6.7 percent of the U.S. adult population (20 million) reporting they no longer eat meat, and 2.3 percent (7 million) claiming they never eat meat, fish or fowl—and, by definition, are true vegetarians. Still smaller, about 1.4 percent don’t eat, wear, or use much of anything caught, hatched, milked, or slaughtered (no meat, fish/seafood, poultry, dairy products/eggs) and are known as vegans (pronounced veeguns). Women are twice as likely to avoid eating meat than men, and roughly 10 percent of Baby Boomers are probably non-meat eaters by our non-scientific best estimate. Most of these numbers (see summary box below) are from a national survey conducted in 2009 for the Vegetarian Resource Group. And while the survey sample only consisted of 2,397 adults and used an on-line query technique, the Harris Poll research methodology was considered highly reliable (Stahler, 2009).
