Sweet & Sour Peanut Sauce

Use this sauce to dress noodles or vegetables. This amount is enough for coating 1 pound of spaghetti, linguine, or fettuccine.

2 cloves garlic, peeled 1/2 cup smooth peanut butter 2/3 cup cilantro 2 tablespoons rice vinegar or cider vinegar 1 tablespoon plus 1 teaspoon reduced-sodium soy sauce 2 teaspoons honey 3/4 teaspoon hot pepper sauce 1/4 teaspoon salt

In small saucepan of boiling water, cook garlic about 2 minutes to blanch. Drain. Transfer garlic to blender or food processor. Add peanut butter, cilantro, vinegar, soy sauce, honey, hot sauce, salt, and 1/2 cup of water and process until smooth.
