Culinary Pathway ELK GROVE HIGH SCHOOL

The Pathway for EGHS consists of a sequence that is designed to develop career-based culinary knowledge and skills starting at the beginning level and progressing towards increasingly advanced expertise and training. Students will receive instruction in a wide variety of culinary topics and practice techniques that help prepare them for their future educational and career aspirations.The pathway also focuses on career exploration and provides additional exposure to industry professionals.

Graduates will be highly proficient or knowledgeable in the following: Knife Skills, Safety & Sanitation, Preparation Information and Skills and Industry/Workplace expectations. Additionally, students will explore the creative and artistic aspects of food creation and presentation.

SAMPLE CAREER-THEMED COURSES Application Requirements * The sample program of study outlined below lists academy-specific courses and does not include the full list of graduation requirements in writing, math, VAPA, WL, etc. These courses are subject to change based upon industry trends. Contact your school counselor for more information on enrollement. Career-Themed Course(s) 9th Intro to Culinary Arts: Students will be introduced to basic culinary concepts and skills. They Grade will learn simple food preparation as well as weights and measures. Students will also explore careers in the culinary industry. Food and Nutrition: This course introduces students to basic food knowledge and preparation skills. Students will learn about nutrition, healthy , food knowledge, and time management. Students will gain experience using a wide variety of food preparation equipment, and develop skills such as knife techniques, measuring, -creation, and 10th- Culinary Arts 1: This course is designed for the student who is interested in gaining new 11th and challenging knowledge and skills for personal use or with a goal to pursue a career in Grade the culinary field. Students will learn basic techniques in food preparation, measurements, and conversions as well as safety and sanitation. Students will gain hands-on experience with stocks, mother sauces, techniques and advanced knife skills. Special units will include a focus on sustainable agriculture, “green” cooking, specific product identification, menu planning and plate presentation, James Beard Food Waste modules and ServSafe. 12th Culinary Arts 2: Students will learn advanced techniques in the areas of use of herbs and Grade spices, sauce-making, cooking methods (grilling, sautéing, braising, etc.), working with a variety of culinary equipment and food/plate presentation, James Beard Food Waste modules and create a personal portfolio. Careers relating to the culinary arts will be examined with guest speakers and/or field trips. Culinary Arts 3:This course will engage students in a student-led enterprise paired with industry partners, where they will develop and create their own restaurant from conception to execution.
