EXPLANATION OF CARMIN.

Carmin Standard has Mexico NOM185-SSA 1-2000, Official journal of the federation dated 15th December 1999.

Cochineal Extract: Approximately 70,000 insects coccus cacti are required to produce 1 lb of 50% Carminic Acid often solubilized with alkali (sodium, ammonium, or potassium hydroxides) to a yield a variety of water soluble liquids. In the case of aluminum lake this is made from the reaction of soda ash Na2 CO3 and Al2 (SO4)3.

Carmine 52% stabilized is composed of Enzymatically Modified Isoquercitrin (alpha glycosyl isoquercitrin) and dextrin. This Enzymatically Modified Isoquercitrin (EMIQ) is the world's first commercialized water- soluble flavonol glycoside derived from Rutin. Rutin is a flavonol glycoside known as vitamin P, which is found in a wide variety of plants, (especially in citrus fruits), cereals such as buckwheat, and azuki beans. Rutin is effective in preventing the deterioration of food flavors and colors. However, Rutin is almost insoluble in water. To improve its low water solubility, we have modified Rutin with food-grade enzymes and succeeded in producing a potent and versatile water-soluble antioxidant.

REGULATORY INFORMATION AND LABELING:

Enzymatically Modified Isoquercitrin was approved as FEMA GRAS in October 2003 and published of FEMA No. 4225 in Food Technology 59(8), 2005 and accepted as FDA GRAS (GRAS Notice No. GRN 000220) in November 2007, USA. Under FDA GRAS status, it used as an antioxidant in the following foods: non-alcoholic beverages including soft drinks, fruit juices, vegetable juices, and flavored milk products; coolers (<7% alcohol); shochu-based flavored beverages (<7% alcohol); frozen dairy products; gelatins and puddings; jams and jellies; soft candy; cakes; cookies; pastries and pies; powdered or canned soup at a maximum level of 150 mg/kg; and in chewing gum at a maximum level of 1500 mg/kg.
