One fifth of the Chardonnay matures in oak barrels. After a year, the wines are racked off and combined.

The beautiful structure is marked by wood tannins, which, while somewhat excitable, nevertheless offer a great deal to the palate.

It is very spicy in the mouth, with strong tannins and a relatively prominent taste of alcohol. This is a majestic wine whose time is yet to come. Pavo rdeče is best served at 14–16 °C and is a fine accompaniment to fresh salami, sausages, game and grilled meat. This estate was conceived by Martin Erzetič,Erzetič which is why today’s local name of the farm is “pri Martinovih”. The Erzetič Estate is located in Višnjevik, the highest village of Goriška Brda.

On the nose, there is a combination of ripe red fruits. In the mouth, it is smooth: ripe tannins are nicely interwoven with moderate acidity and enjoyable alcohol. Plum jam, chocolate, molasses and others can all be sensed. The aftertaste is long, complex, yet bitter, warm and vanilla sweet. The Erzetič Cabernet Sauvignon Amfora goes well with meat dishes, especially with game gravies, ragout and goulash, as well as other spicy meat dishes, grilled meat and aged cheeses. The ideal serving temperature is between 18 and 20 °C.

After maturing for 15 months in barrique barrels, the wine matures for another 12 months in amphorae, where it completes its maturation. The wine is of a dark ruby colour with flashes of garnet to show its long maturation. On the nose, there is a combination of red fruit, pepper, leather and tobacco. In the mouth, it is still youthful, but with a serious note of non-matured tannins that guarantee its longevity. Amfora Red is great with beef steaks in pepper sauce, grilled meat or in wine sauce, game, aged hard cheeses, dishes with tomato and garlic-based sauces and served at 18–20 °C. Ščurek The Ščurek Family lives in Medana, Goriška Brda. Stojan Ščurek, helped by his five sons, works approximately 50 acres of vineyards. The family remains true to fresh and full wines, so the members do not wait until late spring to decant the wine.

The wood ageing contributes to the complexity although, of course, the wine remains Pinot Blanc. We perceive stone and yellow fruit; the taste is more discrete, with an abundance of freshness. Pinot Blanc is a true food-friendly wine, fitting almost all dishes. Having said that, it is difficult to find a better wine to accompany seabass in salt.

In our house, we see it as a concrete, complex wine; the character itself of Sauvignon is less expressed although it is clear and recognisable. It is at its best after a few years, when it gains complexity. Rather than grassy notes, we perceive apricots and white peaches, also some smoky notes resulting from oak ageing. On the palate, it offers even more character than on the nose. It perfectly fits pasta with truffles and accompanies large, preferably wild fish.

Grapes harvested in selected vineyards that are 15 to 35 years old. Careful selection, 14 days of maceration, and 36 to 42 months of maturing in 100% new oak barrels yields an open, clean wine, reminiscent of Bordeaux, which will not and cannot be hidden. It has an intensive ruby red colour with a complex nose of blackcurrant, fine tobacco, liquorice and an intense spicy note. The tannins are firm; some vintages take some time to soften up. Always complex and elegant. Serve it with game, beefsteak Florentine style, rare or medium-rare matured meat. The ageing potential of this wine is 15 years.

The result is a great tannin structure that is sweet and shows extra quality. If Lex is elegant, Kolos is colossal, muscular, powerful. With more tobacco, powerful aromas and less fruity notes. It is produced only in the best vintages. Deep ruby red colour. The nose is intense with red and black fruit, tobacco and smoke. It is muscular, tannic, not in the least shy, with an intensive character that fills the mouth and leaves a long aftertaste. The finish is long and fresh; small grained tannins and its freshness offer great potential to this wine. During the first month, the grapes are stirred manually - up to six times a day. The pots then remain closed for the next ten months. After this period, the wine is poured into large oak barrels, where it is left to age for an additional 12 months. Its bouquet is intense and refined. The colour is uncompromisingly deep, with garnet tinges bearing witness to development and maturity. The nose just confirms its maturity, while noting the freshness and youth still present in the wine. Dark red fruits are still there but are joined by some leathery, undergrowth and tobacco notes. It has a dry and rather elegant style showing nice Cabernet verticality, vigorousness and stamina. The wine is close to its peak, but will offer plenty of joy for a decade or two.

It is left to macerate on grapeskins until the very end, when every last gram of sugar has fermented. This variety ferments only on its own yeast, collected before the actual harvebott. After 24 months of maturation in Slovenian oak barrels, where the wine ennobles its harmony and completes malolactic fermentation, it is bottled during the old moon. The aroma is delicate, with a sense of openness and ripe fruit scent. A very well-defined bouquet arrives from the background, which completes the wine’s marvellous harmony. Pure herbal notes prevailing, with tones of forest fruit and pepper. Notes of smoke and leather coming from the background. The scent-anticipated story continues in the mouth. The wine is elegant and in perfect harmony. A distinct presence of herbal notes. The tannins are quite soft. Followed by a long, fruity finish. During this process, deacidification also took place. Only the best harvests from the best years are used. The harvest starts in mid-October and the grapes are put in wooden crates. There they naturally dry in a windy loft until April. During this time, the grapes turn into raisins – this flavour is also present in the Valentino wine. Intense and deep amber, with lovely shades of gold. Viscosity and a quiet jet are the first impressions upon pouring the wine into the glass, characteristics of this most precious wine. A clear and pure aroma. Scents of white fruit jam and beeswax are present, as well as those of cooked fruit and sweet spices. Valentino goes well with blue cheeses, foie gras and apple purée, fruit cakes and pies. Serve at 10-12°C. Mlečnik The Mlečnik family has been involved in and winemaking for more than 200 years. Today the farm is located in Bukovica, a village in the Vipava Valley. Valter Mlečnik has carried on this tradition since 1982 and in 1986 he took over the work on the farm. The wine from our wine cellar is a result of his work and his beliefs regarding nature. This means respect towards all natural process, from planting vines to the bottling of wine, preserving the natural harmony of the substances in wine.

The wine Ana Cuvée is named after Valter’s grandmother. Ana Cuvée 2010 is a second blend of white varieties. The wine macerates and begins its fermentation in large open vessels for 3 to 4 days without controlling the temperature. After pressing, it was put in big oak barrels of varying dimensions (500 to 3000 litres). The wine was bottled two years after the harvest, at the end of August 2012. Except for the minimal addition of sulphur and a few traditional interventions like racking and filling the barrels, there was no other method or substance used or added while making the wine. Ana Cuvée was created in order to offer our clients a wine similar to the wine produced on our farm before 1989. If you want to enjoy this wine under optimal conditions, we advise you open the bottle a few hours prior to consumption and to serve it at room temperature.

This vintage was one of the most favourable and best in the last 10 years, both in quality and quantity, meaning that these Merlot grapes were among the best ever produced. After the harvest, we allowed maceration (without control) for 14 days in open wooden vats in which the must slowly became wine through spontaneous fermentation. After pressing, the wine matured in big oak vats for 2 years and then for another 4 years in bottles before releasing it on the market. Vipava Viticulture in the Vipava valley ascribes great importance to the year 1894, when the winegrowers of Vipava founded the first wine cellar in Slovenia, which was registered as the Vipava Wine Cooperative. The history of this Cooperative is very colourful, as it has survived two world wars and an Italian occupation. In these turbulent times, the Cooperative operated without interruptions. VIPAVA 1894 is a brand that continues the tradition of the oldest wine cooperative in our territory and passes its message to generations to come. 0.75l 24.90€ PinelaFresh dry white 2014wine, alcohol 11% vol. According to Dalmass, Pinela grew in Friuli as early as in the 14 century. Carpo is mentioned towards the end of the 19 century as a grape variety, which is nowadays predominantly grown in the vineyards surrounding Padua. In 1932, Pinela is described in the publication of the Agrarian Institute as a local variety, found mainly on the hills of Vipava Valley.

0.75l 24.90€ BarberaFresh dry red wine, 2012 alcohol 12.5% vol. Barbera’s home is the Italian region of Piedmont and it came to the Vipava Valley in the Sixties, becoming its speciality. The wine has a distinctive fruity character, is low in tannins and slightly high in acidity and alcohol. It requires an excellent, sunny position and a limited weight on the vine in order to produce a true Barbera with sour cherry, currant and forest fruit aromas. The taste is fresh, vivid and rich, with prunes and jam notes sensed in the background. Burja Primož Lavrenčič is among the most propulsive viticulturist of the Vipava Valley. His new estate called Burja combines the traditional winegrowing homestead and a modern understanding of wines. He is devoted almost entirely to Vipava’s indigenous varieties.

Tilia TILIA ESTATE is a private wine cellar owned by the family of Melita and Matjaž Lemut, who started their path in 1992, when they purchased the farm. He is an agronomist while she is an oenologist, both with international experience – especially from Switzerland and California. The estate is located in the upper Vipava Valley. The wine was launched in 1997 with a 1996 vintage under the name TILIA, which is the Latin name for the linden tree.

It is a blend of three varieties of red wines. The cuvée is matured in oak barrels for six years and then for another year in bottles. Sara has been awarded five titles of champion, among which the most prestigious is the best Slovene red wine, won in 2014 at the International Wine Fair in Ljubljana. Vinakoper Vinakoper was founded on the premises of the French company J. Champion & Cie. Vins de Champagne from Reims located at the Belvedere, where sparkling wines were produced from the 2nd half of the 19th century onward. After its foundation on 27 February 1947, over 300,000 litres of wine were stored at the headquarters of the company. Due to the increasing number of customers, a new, larger cellar was constructed at Škocjan. Under the auspices of the new cellar, the fall of 1949 saw the first harvest of grapes. Since it was established in 1947, Vinakoper has produced excellent noble wine with honour and respect.

The aroma of this wine features ripe sour cherry, plum jam, green pepper, dark chocolate and forest undergrowth, while at the end, you can enjoy sophisticated notes of wood. In the very rich and full flavours of this wine, you will discover notes of cherry , dark chocolate, and tobacco. It concludes with a beautiful, long finish in which we are pampered with velvety tannins. An intensive ruby-red colour with gentle shades of brick red. The taste of this especially rich wine is reminiscent of ripe red fruit, leather, dark chocolate, tobacco and forest undergrowth. Noble notes of wood and beautifully ripe tannins give this wine a nice potential for further ageing. This wine goes nicely with all types of medallions and steaks, meat with spicy sauces, and medium matured cheeses. Serve at 18–20°C.

After malolactic fermentation, the wine matured in new and used Barrique barrels for at least 3 years. An extremely intensive ruby-red colour. Intensive tasting notes of ripe dark fruit, wild cherry, vanilla and dark chocolate. Tasting notes of ripe blueberry, juniper, cherries, dark chocolate, and spices can be found in the especially rich and complex taste of this wine. The finish, however, offers us nice tannins and pleasant, noble notes of wood. This wine pairs excellently with beef, pork, and game dishes. It goes nicely with dishes accompanied by spicy sauces as well. Perfect for accompanying medium matured cheeses. Serve at 18–20°C. Rodica This organic family-run vineyard is located in the heart of Slovenian Istria, in the village of Truške near Marezige, just a few km above Koper. The cellar is situated on top of a hill, overlooking the Gulf of Trieste and the unspoiled valley of the river. Vineyards stretch along the southern slopes of the Istrian hills. Their position and climate are ideal for the growth and development of the vine. The family mainly grows indigenous varieties, such as Refosco, Malvasia, Muscat Blanc and others like Merlot, Cabernet Sauvignon, Shiraz and Pinot Gris.

Intensive aromas can be sensed, true testimony of the wine’s 24-month maturation in wooden barrels, but we are surprised by its note of leather, smoke, ripe and overripe currant jam, white pepper and the exotic touch of eucalyptus. The taste is rich, fresh, slightly hot and with velvety tannins. The wine goes well with red meat dishes, roasts, grilled dishes and meat in pepper sauce.

0.75l 45.90€ MatureTruške dry red wine, Rdeče alcohol 14% Cuvée vol. 2008 This ruby-red wine with copper flashes indicates the almost ancient vintage of this Refosco, Merlot and Cabernet Sauvignon blend. The nose detects rich ripe and overripe red fruit aromas (plum, currant, sour cherry), as well as jams and marmalades, upgraded by the notes of wood, spices and herbs. There is a touch of an ethereal quality to prove its long ageing in wooden barrels. The wine is rich in its fruitiness with almost velvety tannins in the mouth and a well-rounded, elegant aftertaste. Serve the wine accompanied by meat stews (bograč, game goulash), red meat (steaks) and aged cheeses (Tolmin cheese). It also perfectly fits beef tagliata with aged cheese and grilled cherry tomatoes. Doppler The DOPPLER FARM is located on the border between Slovenia and and has vineyards in both countries. It continues the tradition of the Benedictines from the Admond monastery brought to these Kozjak Hills above the Valley two centuries ago. Ivan Dopler took care of and managed the entire estate from 1938. Hence, the wine house is named after its first landowner. His love and respect of wine remain alive to the present day.

0.75l 29.90€ EfektMatured dry 2014 red wine, varieties Blaufränkisch (50%), Zweigelt (50%), alcohol 12,5% vol. Blaufränkisch grapes were hand-harvested on 8 October 2010, while the Zweigelt were collected the day after. Only clean and ripe grapes were subject to the two methods of 30-days maceration: the first one was spontaneous with indigenous yeast, the other controlled with selected yeast at a specific temperature. The wine from the first fermentation was then transferred to new barrique barrels, where it aged for another 9 months on fine lees. Both wines were blended after maturation and before bottling. Efekt expresses a wide range of scents. It is reminiscent of blackberries and dried stone fruit. The wine is structured, vigorous and full-bodied with a pleasant tannin content. The oak notes complement the wine in all its shades. Aged in bottles, the wine will acquire more and more quality as the years go by. Serve at 14-18°C. Verus Verus was founded by three friends and winegrowers: Rajko Žličar, Danilo Šnajder and Božidar Grabova. We brought together our family vineyards, expertise and work, and opened a wine cellar in the spring of 2007. Verus means true, real and actual, as well as honest, genuine, unpretentious and fair. The colour is medium deep ruby with a beautiful shine. On the nose, it is open, clean and fruity. The base consists of notes of fresh red fruits, such as raspberries and strawberries, accompanied by a clear spicy note, reminiscent of black pepper, dried red pepper and cinnamon. On the palate, it is dry, medium-bodied, vivacious, of intense taste and warm - according to the vintage. Suitable for most occasions, especially with dried meat products, pasta, pizza and barbeque.

0.75l 34.50€ ModriMature dry red wine, pinot variety 2011 Pinot Noir, alcohol 13.5% vol. The warm and early 2011 vintage gave us plenty of ripe and healthy grapes. Excellent for red varieties, probably the best vintage in our wine cellar to date. Two weeks of maceration, 24 months of maturation in new and used barriques of French wood. Unfiltered. It displays light, ruby colour turning to garnet. On the nose, we find a medium-strong, inviting and delicate varietal note of Pinot Noir, with an appealing and youthful bouquet, interwoven with ripe fresh red berries and strawberries notes with a fine layer of fumé notes. On the palate, it is bone dry but juicy, with plenty of mature acidity, a medium body and a firm tannic grip, with an infallible elegance reminiscent of excellent warm vintages of Pinot Noirs from Burgundy. Despite three years of age, it is still very young. No doubt, this is the best Pinot Noir we have produced to date. Serve it with beef, rabbit or grilled tuna.

In mid-October 2012, we picked the most beautiful clusters of Furmint grape and allowed them to dry in the airy loft of our cellar. After four months, in the first week of February 2013, we chose only completely healthy berries that looked like golden yellow raisins. The deep golden colour is slowly tending towards amber and indicates a high predicate. In the nose, it is pure, sophisticated and reminiscent of dried pears and apples, raisins and honey. Very sweet on the palate, with a beautiful, mature acidity.

Wine maturation of 18 months in used 600 litre wooden barrels, made of Slavonian wood. The wine matures on fine lees. It displays a slightly more accentuated golden yellow colour, with a distinctive copper nuance of Pinot Gris. On the nose, we find it highlighted, rich and reminiscent of caramel, hazelnuts and vanilla, with notes of butter and maturation in wood. The blend is characteristic of this wine district. Grapes grow in the best Malbec vineyards from Vistalba and are located 1,067 metres above sea level. Traditionally, Malbec grows on the estate (wine with geographic origin), which traditionally uses natural irrigation methods in the vineyards.

Terrazas grapes are hand-harvested in selected vineyards of the Terrazas de los Andes estate, located in the best part of Mendoza, Argentina. The maceration period is 3 to 5 weeks.
