  • Sauternes- Winebow
Sauternes 2017 W I N E D E S C R I P T I O N Château La Tour Blanche is ranked as Premier Cru Classé in the 1855 Classification of Sauternes. The estate is national property of France and home to the La Tour Blanche School of Viticulture. Emotions de La Tour Blanche is a second label, the name of which references the various emotions Sauternes evokes. A B O U T T H E V I N E Y A R D The estate is in the village of Bommes in the heart of the Sauternes appellation. Château La Tour Blanche sits at the top of a ridge of gravel over clay and limestone subsoil. This advantageous position provides the best possible exposure to the sun, optimal drainage, and a high concentration of flavors and natural sweetness. W I N E P R O D U C T I O N Emotions de La Tour Blanche consists mainly of Sémillon, with smaller percentages of Sauvignon Blanc and Muscadelle which are harvested late and selected for botrytis. The wine is vinified and aged exclusively in stainless-steel vats for 18 months to preserve its freshness and aromatic character. T A S T I N G N O T E S Due to the climate of the Sauternes region, wines are produced from grapes affected by the botrytis cinerea, a “noble rot” that develops on the berries. This phenomenon creates a high concentration of natural sugar and complex aromas of spice and dried fruits. F O O D P A I R I N G The great fine wines of Sauternes are not only dessert wines, but they can also be classically paired with foie gras in all its forms, light fish in a creamy sauce, or with strong cheeses such as Roquefort or Epoisses.

Spring 2012 CHEZ FRANÇOIS Restaurant Volume 25 Issue 1 555 Main Street, Vermilion, Ohio 44089 • www.Chezfrancois.com • A publication for friends and guests of Chez François. Dear Friend of Chez François, Thank you for your patronage this past year. We feel blessed to have you as our guest and we look forward to continued success this coming year. Fair, fair...what is all this talk about fairness? Few things are ever truly fair. It seems those who complain about fairness are the ones that don’t really do anything. They never learn that you have to work hard in life, yet feel entitled to many rights they never earned. When in fact, the only right they have in America is the right of Life, Liberty and the pursuit of Happiness. From early childhood we were taught that if you believe in an idea and work hard to execute and have faith in that idea, then you will be successful. It is easy to have an idea, but quite another to commit the time and effort on a daily basis. Inevitably, there will be negative influences along the way and those who will try to criticize, but diligence and persistence guide one through these times. Criticism is fine, as long as it’s constructive and one learns and improves from it, which is what we’ve done for the past 25 years...always striving for improvement in the pursuit of excellence. So if others are more successful than we are, bear in mind it is likely the result of a great deal of time and devotion towards a solid concept and often of great sacrifice too.

A Very Brief Introduction to Bordeaux Wines Rick Brusca Vers. September 2019 A “Bordeaux wine” is any wine produced in the Bordeaux region (an official Appellation d’Origine Contrôlée) of France, centered on the city of Bordeaux and covering the whole of France’s Gironde Department. This single wine region in France is six times the size of Napa Valley, and with more than 120,000 Ha of vineyards it is larger than all the vineyard regions of Germany combined. It includes over 8,600 growers. Bordeaux is generally viewed as the most prestigious wine-producing area in the world. In fact, many consider Bordeaux the birthplace of modern wine culture. As early as the 13th century, barges docked along the wharves of the Gironde River to pick up wine for transport to England. Bordeaux is the largest producer of high-quality red wines in the world, and average years produce nearly 800 million bottles of wine from ~7000 chateaux, ranging from large quantities of everyday table wine to some of the most expensive and prestigious wines known. (In France, a “chateau” simply refers to the buildings associated with vineyards where the wine making actually takes place; it can be simple or elaborate, and while many are large historic structures they need not be.) About 89% of wine produced in Bordeaux is red (red Bordeaux is often called "Claret" in Great Britain, and occasionally in the U.S.), with sweet white wines (most notably Sauternes), dry whites (usually blending Sauvignon Blanc and Semillon), and also (in much smaller quantities) rosé and sparkling wines (e.g., Crémant de Bordeaux) collectively making up the remainder.

Oral History is a method of collecting historical information through tape-recorded interviews between a narrator with firsthand knowledge of historically significant events and a well-informed interviewer, with the goal of preserving substantive additions to the historical record. The tape recording is transcribed, lightly edited for continuity and clarity, and reviewed by the interviewee. The corrected manuscript is bound with photographs and illustrative materials and placed in The Bancroft Library at the University of California, Berkeley, and in other research collections for scholarly use. Because it is primary material, oral history is not intended to present the final, verified, or complete narrative of events. It is a spoken account, offered by the interviewee in response to questioning, and as such it is reflective, partisan, deeply involved, and irreplaceable. ********************************* All uses of this manuscript are covered by a legal agreement between The Regents of the University of California and David Duncan dated May 24, 2019.
